I haven't shared a recipe in FOREVER!! But these pancakes are awesome and when I posted a photo on instagram, a lot of my friends asked for the recipe so here it is! Even S liked them and he's not a big fan of pancakes.
2.
3. A few weeks ago we took a long weekend and took off via Via 1 to Toronto and then onward to Hamilton and St Catharines. We were there for the biggest storm that the area has seen in a while.. or ever? We actually had to trade in our rental car in Hamilton for a Jeep, because they don't even have snow tires in that area. Ah well, it made for an adventure and was a great weekend seeing friends and family. Anyway, I picked up a magazine in the train station ( Via 1 lounge, one of the perks!) that had a recipe for these pancakes. It said you needed "3x 1 3/4 metal ring molds" (basically cookie cutters but taller). I ripped out the recipe for later, downed some espresso and got settled for a nice scenic ride.
4.
5. Our first stop was in Toronto and we had a delicious lunch with Jamie in China Town. The dumplings from Dumpling House on Spadina were amazing!!
6.
12. Sometimes a weekend away is exactly what you need!

 13.
16.
17. After lunch, Jamie told us about this amazing kitchen supply store that has everything you could ask for! Think of C-A Paradis meets a dollar store or general store. It was amazing and we searched the aisles until we found the moulds. Success!!
18.
19. The great thing about this recipe is it doesn't make a huge amount. Of course you can double the recipe, but if you don't it makes just enough and you don't have leftovers.
31.
32. Stefan and I said we'd bring a quiche to L&J's dinner for the break fast last week. Because I was fasting, and I tend to get hangry/emotional/grumpy.. Stefan told me to stay OUT of the kitchen and that he would make the quiche. Yahoo!! Well, of course, he went above and beyond and it resulted in these beautiful and delicious quiches. He wanted to show me the veggies at different stages of cooking, but I wasn't interested. I was like get this out of my sight!! It all smelled so good. Anyway, they were well worth the wait.
33.
34. Everyone liked them and asked him for the recipe. Usually Stefan just wings it, but he graciously wrote out his recipe so we could all benefit.
35.
36. Here it is, enjoy!
We had rain for days, beating all kinds of records. If it weren't for our trip to Europe, it wouldn't have felt much like summer at all. But this fall, wow!!! It's been so hot. This past weekend was 30 degrees both days. All last week we had sunny, warm weather. I love it. It's the best of both worlds. Warmth and beautiful fall colours.
39.
40. I went for a run one morning last week and was so sweaty after that I decided to whip up smoothies.
41. I try to mix things up, but always have a few key ingredients- banana, almond milk, some sort of frozen fruit. Here I also added freeze-dried strawberries. Delicious! It gives the smoothie a bit of a sour, refreshing taste.
42.
43. One important thing to remember is to stick to one or two types of fruit. That way, you can vary the flavours each time you make one.
51.
52. Do you like to eat the same thing everyday for breakfast or switch things up? I guess I am a mix of both. I can go days on end eating oatmeal everyday, especially during winter. In the summer, I like a bit more variety.
53.
54. I woke up a bit early the other day and decided to make something a bit different for us. The great thing about these egg muffins are that you can throw in whatever ingredients you have on hand. Also, they are great for breakfast on the go. Here I used broccoli, onion and cheddar but anything would work.
55.
56. It was funny to see Stefan when he woke up. He saw an empty bowl where the eggs had been, but nothing was on the stove... hmmm. It was sweet and funny to see him try and guess and figure out what I was making. I will definitely make these again.
102. This recipe is as simple and delicious as it looks. I got the idea from Damn Delicious and couldn't make it soon enough. I went out and bought some frozen tater tots, and made these the next day.

 103.

 104.

 105.

 106. Tater Tots are really the only ingredient you need, along with ketchup, sriracha and whatever sauce you would like. Oh and a waffle iron. Note, you could easily make this with homemade potatoes that are grated. I'd probably grate potatoes and onions and make it into hash browns. This is the lazy/easier version.

 107.

 138.
139.
140. I go back and forth on smoothies. I love drinking them in the summer, often post-running or yoga but in the winter I find myself craving something warm- usually oatmeal or eggs. However, with the unusually warm weather and the smoothie-kick that has been going around at work, I couldn't help try this one out when I saw it in this month's Bon Apetit magazine.
141.
142. It saved me some time this morning as I didn't need to have a coffee and breakfast..instead just one super filling smoothie that included my caffeine fix.
143.
144. Be sure to soak cashews (1/4 cup) and oats (3 Tablespoons) in boiling water the night before, and you are good to go.
145.
146. Ingredients:
147. - 1/4 cup cashews (soaked overnight)
148. - 3 Tablespoons (large) oats (soaked overnight)
149. - 2 medjol dates
150. - 1 frozen banana << Is it just me, why do my frozen bananas always turn to brown mush? I had to throw out so many yesterday..
151. - 1 Tablespoon cocoa powder (if possible a high quality cocoa- mine is from Vienna, but a good one you can get here is Fry's)
152. - 1/2 cup coffee - cold ( I just put mine in the freezer for a few minutes. You can also add some ice to cool it down)
153.
154. Blend all ingredients, enjoy!
166.
167.
168. Continuing through the Salad Samurai, I made this recipe this morning. The book calls it "Quinoa à la mode". It makes a lot and I put some in jars, so I will have breakfasts on the go for the rest of the week. Before I go any further, I must tell you, this cashew cream is delicious!!! I've never tried it before and it tastes so good. I would make it again to put on oatmeal or even drizzle on some fresh fruit to add in some protein. Do cashews have protein? I think so.
169.
170. I texted Juliet this morning and told her about it and said, all you do is mix soaked almonds with some lemon, maple syrup and vanilla. She asked me why is it called Cashew cream if it's made with almonds? well, because it's not. it's made with cashews, lemon, maple syrup and vanilla and I was just half asleep..woops! Good catch Juliet ;).. clearly I need more coffee.
171.
172. Many of the recipes in the cookbook use soaked cashews, so I took a trip to Bulk barn last night to stock up. In addition to the cashews, I bought some dried apples for this recipe and some hazelnuts for a salad recipe.
173.
174. I also tried a boxing class at Beaver Boxing, and it was so much fun! I can't wait to go back. There were so many people in the class, it is packed. We did a warm-up, some shadow boxing, partner work, heavy bag and core and the time flew by. My foot held up fine and it felt great to get some exercise.
175.
176. I would recommend making the quinoa beforehand as that saves a lot of time. I used Gwynyth's recipe for perfectly cooked quinoa. The recipe says to chill the quinoa but you can also eat it hot.
These are great variations on smoothies for people looking for something a bit more filling and also for those prefer to eat something. I know a few people ( my sister and Anto included) who don't like smoothies because they prefer to eat their meals rather than drink them. Well voila- problem solved. I ate this bowl at 7:30am and it is now after 11am and I am not hungry yet. That is a good sign.
184.
185. I had a great trip to Boston with the fam and of course ate a ton of delicious food. Note, if you are ever in the Boston area, you MUST try the cannoli from Mike's Pastry. They are amazing. I also recommend going to Neptune Oyster Bar, there is always a wait but it is well worth it. Also they text you when your table is ready so you can go enjoy the Boston Public Market (amazing!!) and some outdoor swinging benches while you wait. That is what we did and it was beautiful. The sun was shining and it was a lovely day. There are also so many nice little shops in the north end that you can explore. We also went (twice) to my favourite cafe in Somerville- 3 little figs once for breakfast and once for coffee! We also had some great meals at home, including BBQ steak (yummm) and a delicious Ottolenghi chicken and rice dish that my mom made. Don't worry we also ate a ton of salad and veggies. I managed to go to the gym with Claire a total of once.. but on the bright side, my foot is feeling better and I can now walk places again. I am looking forward to getting back into more regular workouts and hopefully soccer.
186.
187. While traveling we ate at a few good places. En route we ate at Tip Top Cafe in White River Junction - with a family friend- we all shared french fries that were just to die for. On the way home we stopped at Lou's Diner (my dad's fave) in Hanover and Snowdon Deli in MTL. Wow, when I see it written out, it seems like SO MUCH food. This was over the course of 5 days. Needless to say, it is time for some healthy and light food.
188.
189. On a non-food related note, check out the Museum of Fine Arts in Boston. There is currently a great exhibit on Dutch painters in the time of Rembrandt and Vermeer. I also love some of the contemporary art they have there and their bookstore is great. Of course their restaurant is also delish..
190.
191. Okay so back to the smoothie bowls. I got the recipe from a wonderful cookbook that Stu gave me called Salad Samurai. It has mostly recipes for big main course filling salads but also has a few breakfast recipes. I modified it a bit to make it a bit thinner as my nutri bullet was having trouble with so little liquid.
192.
193. Ingredients:
194. - 1 frozen banana
195. - 1 cup frozen fruit ( I used mangos, strawberries, peaches)
196. - 1/2 cup almond milk
197. - 1/3 cup granola (I used Trader Joe's pumpkin Granola but any kind is great)
198. - fruit for topping (optional)
199.
200. Blend together in blender or Nutribullet. Top with granola and fruit. Enjoy!!
201.
202. Note this recipe could easily be modified, using any smoothie recipe and combination of fruits or veggies. Next time I will add in some spinach or kale.

Red Juicie

 205.
206. I wasn't sure whether to call this a smoothie or a juice.. I don't have a juicer, so it isn't a pure juice, but it doesn't have milk or much added liquid to it and is thinner than what I'd consider a traditional smoothie. So voila- a juicie.
207.
208. I make it in the Nutribullet, but it can be made in any blender or juicer.
209.
210. This is definitely my favourite these days. Especially after a week (..fine several weeks) of over indulging.
211.
212. Super easy:
213. - 2 cooked beets (I use love beets from Costco-so conveniant!!) + beet juice from the package
214. - carrots or baby carrots
215. - 1 apple
216. - fresh ginger
217. - lime juice to taste
218. - water (if needed to blend)
219.
220. blend up, enjoy!
I have a subscription to the Bon Appetit magazine and really enjoy it. In the latest edition, they reference this cleanse to do in the new year, for people who love food and wouldn't survive on the traditional juice cleanses. Hey wait, that's me!
228.
229. I looked up the cleanse online and find they have a lot of great recipes. However, I am terrible at following strict meal plans, and kind of forgot about it. Then I saw a friend of mine posted that she was about to start the cleanse. Although it was meant for the first 2 weeks in January, you could really do it anytime. It's free and BA provides all the recipes, grocery lists etc to help get you organized. I love seeing her photos of the meals, they look delicious!
230.
231. So it got me back on the website, and I decided that just because I wasn't doing it from start to finish, I could still try my hand at some of these healthy recipes. So voila- without further ado, this healthy, yummy, sometimes you need something different, breakfast!
232.
233. This recipe makes enough for 2 people. To make it for 1 person just cut the amount of yogurt in half and use the same amount of everything else.
234.
235. Ingredients:
236. - 1/4 cup pomegranate juice- I used pomegranate- blueberry
237. - 2 tablespoons chia seeds
238. - 1 cup Greek yogurt- I used vanilla 2%- I dislike the fat free kind- also cut down to 1/2 cup if making just 1 serving
239. - 1-2 tablespoons peeled and chopped pistachios- I used lemon roasted ones so they were extra delicious, but any kind will do.
240. - 2 tablespoons pomegranate seeds
241.
242.
243.

 245.
246. Instructions: Mix chia seeds and pomegranate juice and let sit 20 minutes (or overnight if you remember to do this the night before). Then layer the chia mixture/ yogurt/chia mixture/yogurt, top with pomegranate seeds and pistachios.
247.
248. Enjoy!!
264. So I made my first ever brioche on the weekend! It is the one featured on the cover of the Huckleberry cookbook by Zoe Nathan. Don't forget to enter our giveaway, it ends tomorrow!
268.
269. I woke up early and decided to whip up this farro recipe for breakfast. I discovered farro not too long ago, and had it as a side-dish with dinner here. I was intrigued when I saw it as a breakfast dish in this cookbook- Huckleberry: Stories, Secrets, And Recipes From Our Kitchen, by Zoe Nathan. Stay tuned to the blog, as it may just be part of our give-away series! This cookbook has so many great breakfast and brunch recipes. It has some more elaborate and decadent brunches that I can't wait to try over the holiday season. In the meantime, I am glad it also has some simple and healthy recipes.
270.
271. The recipe is easy but does take a little while to cook- 25 minutes. I cut the sugar and butter down a lot, and it still tasted great. The toasted walnuts really add a lot. Here is my adapted version
272.
273. Ingredients:
274. - 1 cup farro (200g)
275. - salt
276. - butter (it calls for 2 tablespoons but I used less than 1)
277. - 2 cups water + 1 Tablespoon
278. - 1 cup blueberries (mine were frozen)
279. - 1 teaspoon brown sugar
280. -3/4 cup milk ( I am all out so I used vanilla almond milk)
281. - 1/4 cup walnuts
282.
283. Instructions:
284. - preheat oven to 375F to toast walnuts
285. - In small saucepan over high heat, melt half the butter. Add salt and farro and toast farro, 1-2 minutes, stirring it around a bit so it gets coated, until it starst to smell nutty and delicious. Add 2 cups of water. Bring to a boil and then reduce heat and simmer for 25 minutes, until liquid has evaporated
286. - In the meantime bake walnuts for 5-7 minutes. Be sure to check them often so they dont burn.
287. - In another pan, melt other half of butter, add blueberries, brown sugar and a pinch of salt- saute 2 minutes.
288. - Add milk to blueberries and saute for 5-10 minutes until most of the liquid is absorbed.
289. - portion farro into 2 bowls, top with blueberries and walnuts.
290.
291. Enjoy!
292.
293. Can be kept in the fridge up to 3 days. Add some milk when reheating.
312.
313. Just playing around with the Nikon DSLR, that I have temporarily hijacked/borrowed from my dad. I used a lens here that has a max aperture of f/1.8. It is so much fun. Photoshop is also a lot of fun, when it isn't completely frustrating!! I didn't edit the photo itself but used it for the watermark.
314.
315. Anyway this is just a simple breakfast of cereal and blueberries with milk. The cereal pictured is Go Lean Crunch, which surprisingly is very healthy. I recently compared it with many other healthy sounding cereals and it out-performed in terms of less sugar, more fibre and more protein. Excellent!! This post is not sponsored, I am just a walking advertisement for the things I enjoy..
316.
317. Oh and my brother-in-law sent me a really interesting article today about how food photography has gone viral with iphones and instagram and so real professional photographers have had to step it up to keep their edge. Check out the full article from WIRED.
328.

 329.
330. Smoothies are super easy to make. Also, you don't really need a recipe, because you can just throw in whatever you want. Sometimes though, I get carried away and add in anything and everything. The flavours all mix together and it doesn't always taste great.
331.
332. This combination goes so well together, I had to share. My bro-in law made it in Boston and it was so good, I wanted to make it again. I managed to get him to tell me some of the ingredients and with a bit of guesswork, I recreated something quite similar and modified it a bit to make it even more healthy and filling.
333.
334. - frozen blueberries
335. - frozen or fresh banana
336. - almond butter (this is what really makes the smoothie!)
337. - almond milk or regular skim milk
338. - I also added in 1/8 avocado or a handful of Kale
339. - 1 tablespoon of vanilla whey protein (for good measure, to make sure it fills you up)- optional
340.
341. Blend all ingredients.
342.
343. enjoy!!
348.

 349.

 350. One of my favourite cafes in my sister's neighborhood- 3 little figs- in Somerville- has an item on the menu Ricotta Toast. It looked so good!! I decided it would be easy to replicate it back at home. We used goat cheese instead of Ricotta and whipped it up for a quick lunch before we head off to Providence!!

 351.

 352.

 353.

 354. It is very simple:

 355.

 356. - Toast ( jalepeno and olive here)

 357.

 358. - Cheese (goat cheese or ricotta)

 359.

 360. - olive oil and salt and pepper- voila!!!

 361.

 362.

 363.

 364. The quality of this can greatly improve with the quality of the ingredients. C&E had nothing but the best of course. We used:

 365.

 366. - Bread from When Pigs Fly. The bread is delivered daily from Maine. We used two different kinds because Claire doesn't like olives. One type with olives and jalepenos and one whole grain.

 367.

 368. - Maple goat cheese from a goat farm in upstate new york. They picked it up on a trip and had been keeping it in the freezer.

 369.

 370.

 371.

 372.

 374.

 377.

 378.

 379.

 380. - Olive Oil- from Italy- from our family friend's land! If you can't get your hands on olive oil from Italy just make sure you have an extra virgin good quality one. You usually get what you pay for when it comes to olive oil.

 381.

 382. - Himalayan sea salt (what else?)

 383.

 384. and finally an "ordinary" pepper- Malabar black pepper from India.

 385.

 386.

 387.

 388.

 389.

 390. Yummmmmm

It also came with the ice cream maker bowl attachment as a special promotion. A whole new world has opened up to me!!
394.
395. Now some people would get a stand mixer and let it sit forever and not use it, but I wanted to put mine to good use right away! In one day, I made bread, pizza and prepped the mixture for ice cream! [ think of how many dishes that makes!! I really really really want/need a dishwasher!!] I got some of the recipes from the little manual that came with the machine and some from a kitchen-aid cookbook that I picked up for $8.99 at the local bookstore next to my work. I just love it when the sales are in my favour!! I also found some bread recipes in cookbooks i have at home and can't wait to try them out!!
396.
397. Oh- and I borrowed my dad's Nikon!! Please bear with me as I try and improve my photography skills! All i can say is that it is so much fun!!
398. --------------------------------------------------------------------------------------------------------------------
399. So full disclosure- I made this bread from scratch, but using a bread hook on the stand mixer to kneed the bread. I view this somewhere in between using a bread maker, and kneeding it all by hand (which, by the way, I have heard is very therapeutic). It was my first time even using yeast-which by the way- does not smell good!!
400.

 401.

 402. This recipe is pretty healthy! it makes 2 loaves and I brought one over to my parents. They ate it all, along with friends visiting from the States, and everyone said it was really good. Yaay- success :)
403. I am eating the other loaf for sandwiches for my lunch!!
404.
405. It is an easy recipe to follow as long as you have a lot of time.
406.
407. I did the first part, went for a run, second part, went for brunch, third part, went for soccer..etc etc- haha see a pattern- exercise-food-exercise-food. Anyway here is the recipe- from Kitchen aid- 3 in 1 cookbook.
408.

 409.

 410.

 411.

 412.
413.

 415.
416.

 417.

 418.
419. Ingredients:
420. - 2 cups warm water (105- 115F)
421. you need a thermometer for this- I bought a candy thermometer that clips onto the edge of your pot. At first I kept heating the water to above boiling and couldn't understand why the temperature wasn't going any higher- then I realized I was looking at Celsius not Fahrenheit- woops!!)
422. - 1/3 cup honey
423. - 2 tablespoons vegetable oil
424. - 1 tablespoon salt
425. - 2 packages active dry yeast
426. - 2 - 2 1/2 cups whole wheat flour
427. - 1 cup bread flower
428. - 1 1/4 cup large flake oats
429. - 1/2 cup pumpkin seeds
430. - 1/2 cup assorted grain- I used wheat germ cause I had it on hand
431. - 1 egg white
432. - 1 Tablespoon water
433.
434. Directions:
435. - heat 1 1/2 cups water, honey, oil and salt in a saucepan until it reached 105-115F.
436.
437.

 438.

 439.

wayy too hot! as you can see it is nearly at 200 F

 440.

 441. - Dissolve yeast in 1/2 cup warm water in mixer bowl and let stand 5 minutes. Stir in honey mixture. Add 1 cup whole wheat flower and bread flower. Stir with dough hook at speed 2 for 2 minutes. Gradually add in seeds, grains and 1 cup of the oats. Add in remaining whole wheat flower 1/2 cup at a time until it begins to form a ball. Continue kneeding (aka leave the machine on) for 7-10 minutes, until the dough is elasticky and stretchy.
442.
443.

 444.

 445.
446.

 447.

 448.

 449.

 450.
451.

 452.

 453.
454. -place dough in lightly greased bowl, turning to coat lightly, and cover loosely with plastic wrap. Let rise in warm place 1 1/2- 2 hours
455.
456.

 457.

 458.

 459.

 460. - grease 2 9x5 inch loaf pans. Punch down dough. I watched a you-tube video to figure out what this means. It really means just punch the dough. Do it once in each spot- it lets the air out and does other chemical things to the yeast. Separate dough into 2 and place in pans. lightly cover and let rise again for another hour
461.
462. - Preheat oven to 375- bake for 30-35 minutes
463.
488.
489.
490. This recipe appealed to me right away. Its another one that I adapted from from Smitten Kitchen- Deb Perelman. I like almonds, I like dates, I had most of the ingredients so decided to go for it. In the description of the recipe, the author says that its great to have breakfast bars on hand to grab for a quick breakfast. I usually have a leisurely breakfast at home, and thought pff, i don't need a breakfast for work or on the go. However, after being late several times last week, I decided this was not a bad idea.
494. I got this recipe for potato pancakes-aka Latkes, from Smitten Kitchen cookbook by Deb Perelman that D&N gave me for Christmas. I haven't had a chance to try out many recipes from there yet, but I am excited to, as they look delicious. Deb started out with posting recipes on a blog, and then published this extremely successful cookbook with her recipes. If you haven't heard of it, then you probably live under a rock..just kidding..sort of.

 539. This recipe is from the cookbook, Make it Paleo- by Bill Staley and Hayley Mason, which arrived in the mail on the 30th day of my 30 day challenge. Ah well, I still plan on integrating many Paleo habits into my lifestyle. In a review of the cookbook, someone actually said this was the only original and intriguing recipe. Well it definitely caught my eye right away.
582. I couldn't think of what to make for breakfast the other day. I have been eating Paleo- and therefore can't eat my usual oatmeal. I wanted something different from my egg-nana pancakes, or plain eggs, so decided to try out this recipe from Practical Paleo. It turned out well but isn't that sweet. It's better served with a bit of almond butter or honey. Today I made french toast out of leftovers and that was really good.
604.
605. I've been seeing this recipe all over the internet for a while, and my friend C also emailed it to me. I had 1 last-chance banana- you know the one, nearly all black- and so it was now or never. I seized the day and used it for this recipe.
I've made the mixes but I find ones from scratch are better. I came across this recipe on food.com and modified it slightly. Any recipe where the eggs are separated and I have a good feeling. Fluffy egg whites folded in..always gives a light and fluffy feel to the waffles. A friend dropped in this morning, so I whipped these up.. perfect for a rainy Saturday brunch or breakfast in bed.
