8. Okay, so here is the recipe for chicken a la King that Carolyn and I made when I was visiting St Catharines. I've never tried to make anything like it before. It seems complicated but is quite easy. It was so good! The recipe was made easier with pre-made shells.
11. I was recently selected to participate in the Pulo Recipe Challenge. That is, Pulo sent me their collection of sauces and marinades and I was asked to come up with, and share, a recipe using one of the sauces. Although the sauces were provided to me by the company, all opinions are my own.

 12.

 13.

 14.

 15. Pulo is an authentic collection of sauces and marinades inspired by the 7000 Islands

 16.

 17. of the Philippines. They have no artificial flavours, colours or preservatives. That is very important to me! Although not familiar with Philippine cuisine, I was excited to try it! My very first roommate (at Queen's University) is from the Philippines and she is just AWESOME (Hi Xyza! ) I read up on the culture of Philippine cuisine and learned that what makes it so rich and tasty is its dynamic mixture of different cultures: Malay, Chinese, Spanish and Indian. What a wonderful mix!

 18.

 19.

 20.

 21. I love Indian food, so I decided to take the fusion aspect one step further and make Pulo chicken Naan wraps, using the mango chili marinade. I have eaten Naan wraps from an Indian restaurant in the market building but have never tried making one myself. What on earth was I waiting for? These were so easy and delicious. The marinade pairs perfectly with chicken, making it so tender and flavourful. The recipe has less than 5 ingredients and can be whipped up in no time.

I look forward to trying out the pineapple marinade as well as the sauces.

Spicy Honey Chicken

 100.
101.
102. I was running low on ideas for what to cook for dinner yesterday and so I browsed through my pinterest recipes to try board. I narrowed it down to 3 and then let D pick. He suggested we have the chicken and save the fish and shrimp dishes for when J comes back from Toronto- which is tonight!! woohoo :)
103.
104. I modified this recipe from The girl who ate everything who got the recipe from our best bites. If my kitchen had been clean to start out with, it would have been quick and easy. Unfortunately for me, I had a sink filled with dishes that I had to do before I could begin cooking. Once the cleaning was done and the cooking began, It was simple to make. I had been a bit worried reading about how it could turn into a hot sticky mess, but luckily it was fine. Definitely crack open a window though if you are cooking this indoors and not on a barbecue. I used my new Le Creuset grilling pan that my parents gave me at my last birthday. I absolutely love it.
105.
106.

 108.
109. I served it with salad and grilled potatoes. I also picked up some cute sauce cups and made spicy mayo for dipping.
110.
117.

 118. It would also be good served on rice or couscous. It turned out well. I am definitely going to be making this again.

 119.

 121.

 122. Ingredients:

 123.

 124. - 6 chicken thighs

 125.

 126. - olive oil or vegetable oil

 127.

 128.

 129.

 130. rub:

 131.

 132. 2 teaspoons granulated garlic (you can sub 1 teaspoon garlic powder here)

 133. 2 teaspoons chili powder
134. 1/2 teaspoon onion powder- omitted because I didn't have any- need to add to grocery list
135. 1/2 teaspoon coriander
136. 1 teaspoon kosher salt
137. 1 teaspoon cumin
138. 1/2 teaspoon cayenne
139.
140. ** dislaimer: I nearly ran out of rub after just 3 thighs, so if you like it spicy you may want to double the recipe for the rub.
141.
142. glaze:
143. 1/2 cup honey
144. 1 tablespoon cider vinegar
145.
146. Directions:
147. - Combine the rub spices in bowl and mix well.
148. - Trim off any excess fat from the chicken pieces. Pat dry. Drizzle oil over chicken and rub in with your hands to lightly coat all the pieces. Then toss chicken with the spice rub to coat all sides well. I wore gloves.
149. - Grill chicken for 3-5 minutes on each side, until cooked through.
150. - While chicken is cooking, warm honey in the microwave so it's not so thick. Add the vinegar and combine well. Reserve 2 Tablespoons of the honey glaze for later after the chicken has cooked to pour on right before serving. Take the rest and brush on chicken (both sides) in the final moments of grilling.
151. Leave your grill or pan on for a few minutes after the chicken is done to burn off any excess glaze.
152.
153. Enjoy!!
However, I am at page 1 or 2 so please be patient as I make my way through it.Also, this was so delicious I didn't have much patience for taking pictures, I just wanted to eat it!!

She was raving about it, and I love coconut milk and basil, so I was looking forward to trying it out. I mean ideally I would have invited myself over to dinner at her place, but, as we are currently miles and miles apart, I had to cook it myself. I did have some questions for R along the way. She is a good person to cook with, as she keeps me in check, and makes sure I follow the instructions.. sometimes I try and take shortcuts. It doesn't usually work in my favour.
I adapted it to make it lighter (substituted milk+ flour for cream, and cooked the sauce a bit differently).
257. I got the idea for this recipe from a Burger Blog . Last weekend I went to a friend's goodbye party and met Mike who has his very own blog all about different burgers. He rates burgers at restaurants on quality, value and complexity. He also makes his own burgers. I saw he posted a recipe for a 'Serious Chicken Burger' and thought I'd give it a try. I ended up making my own variation, but the principle is the same. Grinding the chicken yourself rather than using already ground chicken is key. They are much more moist and the texture is much improved.
258.
259. Makes 4 burgers-
260. Ingredients:
261. 4 chicken thighs
262. 1 onion or 2 green onions
263. 1 egg
264. 1 clove garlic (I forgot to put it in!)
265. salt and pepper to taste
266.
267. Pulse chicken in food processor about 20 times. Add in Onion and blend some more. Crack egg and mix in, and add in salt and pepper. Form into patties. Grill or fry in frying pan about 7 minutes per side.
268.
269. Disclaimer: Be careful to wash hands thoroughly when handling raw chicken. Also be sure the burgers are cooked through.
270.
271. I served these burgers on whole wheat thin buns with avocado ( as you can see mine wasn't quite ripe enough yet), feta cheese, and spicy mayo ( light mayo blended with banana peppers).
272.
273. Mike recommends buffalo mozzarella and chimichurri sauce ( I have yet to try making it, bought I bought parsley and hope to try it out soon). You can have fun experimenting with different toppings.
274.
275. I accompanied the burgers with sweet potato fries. It was a great combination.
