  28. After a terribly indulgent summer, Stefan and I are finally back to eating a bit healthier. I think we were just a bit too focused on food, always cooking elaborate meals for each other and eating way too much. One of Stefan&#39;s favourite things to eat is greek salad. Fresh tomatoes, olives, feta cheese (his mom&#39;s is the best).&amp;nbsp; I saw &lt;a href=&quot;https://www.bonappetit.com/recipe/tomato-salad-with-feta-and-pistachios&quot;&gt;a recipe in Bon Appetit &lt;/a&gt;for a variation with roasted pistachios and decided to try it. The most important thing is the quality of the ingredients- especially the feta.&amp;nbsp; We also used fresh parsley from our (herb) garden and it was really nice.&amp;nbsp; Anto dropped by, and we were able to whip this together quickly for a nice, light, healthy, summery meal.&lt;br /&gt;

  35. red onions, jalepenos, any other vegetable you want&lt;br /&gt;
  36. Kosher salt, freshly ground pepper&lt;br /&gt;
  37. Basic Lemon Vinaigrette ( the ratio should be 1/3 lemon juice to 2/3 good quality extra virgin olive oil)&lt;br /&gt;

I really wanted to make it for this potluck street party at Stefan&amp;#39;s parents&amp;#39; street we were going to on Saturday evening. Sometimes, I get these ideas in my head and it&amp;#39;s hard to change my mind. We had 4 bunches of asparagus and had talked about making some grilled asparagus..but then, despite having none of the ingredients for this salad, I decided to go out and buy them and make it.   57. How do you get a chef to follow a recipe? It ain&amp;#39;t easy. Stefan was pretty good though, and mostly followed the instructions. I took the opportunity to show him how useful the ipad is for cooking and recipes. Stefan thinks my ipad is useless, as I have been rarely using it since I got my new laptop.   59. Our key takeaways- use good quality extra virgin olive oil. Not canola oil. It won&amp;#39;t be the same.&lt;br&gt;
  60. Also don&amp;#39;t mix everything together and then add dressing before serving. Instead put the dressing on the pasta right away so the flavour can develop and the pasta stays MOIST. When you are ready to serve, add spinach and the rest of the ingredients so the leaves don&amp;#39;t get soggy.  Finally, always use fresh garlic if you have some instead of garlic powder. That&amp;#39;s just a personal preference.&lt;br&gt;

  431. After a few heavier meals on the weekend I was in the mood for something light. I love ordering a nice goat cheese salad at restaurants and it seemed easy enough to make it myself. I inspired myself from a recipe from Martha Stewart&amp;#39;s Great Food Fast cookbook.  For the salad part, feel free to use whatever you want, lettuce, potatoes  tomatoes  etc, and then top with the broiled goat cheese. This recipe is also healthier then most restaurants because the cheese is not fried. It turned out delicious, and would be a nice light summer meal or appetizer to serve to dinner guests!&lt;br&gt;

  460. I spent my long weekend in Boston with my parents and my sis and her hubby. It was a nice mini-vacation :) filled with lots of wonderful cooking!! Much of it done by my brother-in-law who is a great cook. The downside, however is that he doesn&amp;#39;t really follow recipes, so I have nothing  to show for on the blog on that front.   499. Sometimes when I bring a salad in my lunch, I dread eating it. Today was not one of those days!! I was so excited to eat my salad with this dressing that I made last night. &lt;br&gt;

  501. I had a delicious lemon-thyme salad dressing at a restaurant recently, and wanted to try and recreate it. Well unfortunately, my grocery store was all out of thyme. I came across this recipe, on yummly- food network, and decided it would satisfy my craving. It&amp;#39;s tangy, with a bit of a kick. D and I ate a huge salad last night...before heading to the movies and stuffing ourselves with popcorn. I have come to realize that many of my recipes come to be from not having the proper ingredients.  In this particular case, I actually did have the ingredients, however, my avocado was hard as a rock and not ready to eat. The recipe I was planning on following used 2 avocados, so I substituted with many other ingredients, making this salad really filling. At work, it seems everyone (myself included) has been snacking constantly..and not on healthy snacks. Its funny how being very busy or not at all busy both tend to lead to snacking, in the former case out of stress and in the latter out of boredom. Having a lunch that fills you up and leaves you satisfied really helps. &lt;br&gt;

  657. This&amp;nbsp;dish was supposed to be called- spinach with orzo and feta, but since I had no idea how much 1/2 pound of orzo was, I ended up with much more orzo to&amp;nbsp;less spinach. This dish is easy to prepare, and the fresh mint makes it summery and fresh! Thanks to my friend&amp;nbsp;Kristin for helping me decide what to make last night, as I was being very indecisive. I modified it slightly from&amp;nbsp;&lt;i&gt;Power Foods &lt;/i&gt;as I didn&#39;t have all the ingredients called for&lt;i&gt;. &lt;/i&gt;Featuring&amp;nbsp;mangos and avocados what could be bad.   728. I was craving something light and healthy. I openned the fridge and saw cellery and apple, and decided to make a waldorf salad. The original recipe has mayo&amp;nbsp;(not so healthy) so I looked up a several different recipes for a lighter version. I couldn&#39;t decide whether to make a yogurt dressing or an oil/vingar dressing, so i decided to make both. I ate the yogurt part right away for dinner and saved the other type for my lunch the next day, as&amp;nbsp;I thought it may keep better. Both were good but I think i prefer the yogurt variation. I guess it just depends on what you are in the mood for. The quantities can easily be adapted and substitutes can be made based on what ingredients you have in the house.&lt;br /&gt;

  731. - 2 apples, chopped &lt;br /&gt;
  732. - 5 stalks celery, diced&lt;br /&gt;
  733. - 1/4 cup raisins or grapes&lt;br /&gt;
  734. -&amp;nbsp;1 tablespoon lemon juice&lt;br /&gt;
  735. -&amp;nbsp;1-2 stalks&amp;nbsp;green onion (optional)&lt;br /&gt;
  736. - roasted walnuts ( bake walnuts at 350 for about 10 minutes, until fragrant)&lt;br /&gt;
  737. &amp;nbsp;I didn&#39;t have walnuts, so I used sweet and spicy pecans from Trader Joe&#39;s ( Thank you Claire!). These are&amp;nbsp; my favourite, and you only need a couple. &lt;br /&gt;
  738. -salt and pepper to taste&lt;br /&gt;
