Is anyone else addicted to going to Christmas fairs and markets, or is it just me? I am such a sucker for all those things. I checked out the Christmas market at the Museum of History (formerly Museum of Civilization) and it was so beautiful in the grand hall! I picked up some ice wine and cheese from local producers and some other goodies and presents. I also checked out the market at Landsdowne. It moved back from Brewer park to the Aberdeen Pavilion. The Ottawa Citizen had a list of all the upcoming markets and fairs so check it out if you are into that sort of thing.
5.
6.
7. This recipe is modified from Cooking Light magazine. I made it less spicy (although it was still quite spicy!) and served it over udon noodles instead of rice noodles, but that is just my personal preference.
8.
11.
12.
13. This dish is really flavourful and comes together fast. I feel like I say that about most of the recipes I share on here, but it is true. I appreciate meals that are simple, fast and full of flavour.
14.
15. I was pleased that the recipe called for Kale as I have a lot that I want to use up before it goes bad. If you know any good kale recipes please post in the comments! I was having a bit of a stressful day on Saturday and for me cooking is a stress reliever. I really liked it, and was glad there were some leftovers to take for lunch. D was over for dinner and said he liked it as well.
38.

 39.

 40.

 41. Directions:
42. 1. Prepare udon noddles according to package directions. I stir fried them but you can also boil them.
43.

 44. 2. Heat oil in a large skillet over medium-high heat. Add green onions, garlic, and ginger; sauté 1 minute. Stir in curry paste; sauté 30 seconds. Add carrots, chicken stock (or water and bouillon cube), and coconut milk, stirring well to combine; bring to a simmer, and cook 5 minutes.

 45.

 46. 3. Fold in kale; sprinkle with salt. Cook 3 minutes or until kale is wilted and tender. Add shrimp; cook 3 minutes or until shrimp are done. Remove from heat; top with cilantro, lime rind, and juice. Serve over rice noodles.

 47.

 48.

 49.

 50. Enjoy!

 87. I got this recipe from my cousin J, who saw it in a magazine (stylist UK), tore it out for me and then brought it to me in Austria. It was in Vienna, London and then sat in my suitcase for a few days until; I finally unpacked. it then sat in my apartment a few days until I did groceries and found the time to make it. So glad I did!! Thanks Juju for thinking of me.
88.
89. If anyone sees a recipe that looks good, please send my way. I'm always looking for new things to try.
90.
91. So D came for dinner and I made this with the rice pilaf. In my little kitchen it was a lot on the go to make everything at once but didn't make too much of a mess. Emily joined us after and said she loved it!! yaay! In my opinion it really tastes like a dish you would get in an indian restaurant. So if you like Indian food (and frankly who doesn't?) then this is for you! It could be fun to serve with Naan bread instead of the rice.
92.
93. I served it with a salad made with fresh vegetables from my vegetable share. I am a huge fan of veggie shares- and can't say enough good things about the one I get- Rochon Gardens! I remember a few years ago my roommate and I got an urban plot veggie share and it was disastrous. We litterally got a few pieces of lettuce and a few pitiful veggies. So when choosing a CSA be sure to chose a real farm!!
94.
95. Okay enough about that, here's the recipe!
I made this recipe a while ago, and am finally sharing it now. It is a good time of year to whip this up, with fresh herbs abundant as we get into spring. The recipe is adapted from Quinoa 365- The Everyday Superfood, by Patricia Green and Carolyn Hemming. Its a great dish to make for a light dinner, or as a side dish.
150. What a rude awakening to come home from holiday and have to cook again!! Well lucky for me, my parents often invite me over for dinner.
151.
152. My dad made this recipe the other night and it was delicious!! It is from Vij's cookbook called- Vij's at home. My dad loves Vij! The recipe calls for pomegranite juice which he did not have, so he substituted for mango juice. We ate it over brown rice, and let me tell you, there wasn't a spoonfull left at the end of dinner. We devoured it. It was a bit spicy, but not to the extent where you can't taste and savour the flavours. yum!!!
156.
157.
158. My friend Laura came over for dinner last night and I made this shrimp dish served over whole wheat pasta and accompanied with a broccoli salad on the side ( I will have to post that recipe some other time). If you are looking for a quick easy shrimp dish that's a little bit different, I recommend trying this recipe. It could also be served over rice. Recipe adapted from Power Foods.
159.
160. The original recipe called for turnips, but I hate turnips so I omitted. Apparently they were the 'Power food' in the recipe, adding fiber, potassium, calcium and vitamin D, so if you do like them, definitely add them in.
161.
162. Ingredients:
163. - 1-2 tablespoons canola oil
164. - 1 Tablespoon fresh ginger, minced
165. - 1 1/3 teaspoon paprika
166. - 3 Tablespoons chopped walnuts
167. - 20 large shrimp
168. - 1 Tablespoon cider vinegar or sherry vinegar
169. - 3 Tablespoons sake or Mirin (rice wine)
170. salt and ground pepper
171.
172. Directions:
173. -Heat a large skillet over medium-high heat. Add ginger and paprika and cook 30 seconds, and then add in walnuts (watch carefully not to burn) and saute 2-3 minutes
174. - Add shrimp. Stir in vinegar sake and season with salt and pepper. Continue to cook until heated through, about 2 minutes
179.

Sorry this photo is a bit cut off-
180. we didn't want to wait any longer to eat it!

 181.

 182. I bought shrimp and eggplant hoping to make some kind of stir fry with it and then didn't get a chance over the weekend. My parents got back from Austria on Monday (yaaaaaaay :)) and then I moved back to my apartment. My mom asked if I had a recipe in mind for these ingredients so I found this recipe on myrecipes, substituted the pork for shrimp and emailed it to her. I had no idea how it would turn out but thought it sounded good.
183.
184. Then yesterday, after a brutal 14k hill run, I went over for dinner, starving and exhausted, to find that my mom had so kindly made this dish. It was absolutely delicious. I highly recommend it. She said it was really easy to make. Then again she is an excellent and experienced cook. I will confirm or refute after I try making it myself ;)
185.
186. Ingredients:
187.

 188.
1 pound eggplant ( we used baby eggplant)

 189.
1 tablespoon vegetable oil

 190.
1 tablespoon Asian sesame oil 1 tablespoon minced ginger 1 tablespoon minced garlic shrimp

 191.
1/4 cup soy sauce

 192.
1 tablespoon sugar 1 tablespoon rice or white wine vinegar

 193.
1 1/2 teaspoons Asian red chili paste 2 teaspoons cornstarch

 194.
8 ounces extra-firm tofu, drained and cut into 1-inch cubes 1/4 cup thinly sliced green onions

 195.

 196.

 197.

 198.

 199. Directions

 200. 1. Rinse eggplant and cut crosswise into 1-inch thick rounds. Cut rounds into 1-inch-wide strips.
201.

 202. 2. Pour vegetable and sesame oils into a 12-inch nonstick frying pan or a 14-inch wok over medium-high heat. When hot, add eggplant and stir frequently until soft when pierced and lightly browned, about 8 minutes. Transfer eggplant to paper towels to drain.

 203.

 204. 3. Add ginger and garlic to pan and stir frequently until fragrant, about 1 minute. Add shrimp and cook until pink

 205.

 206. 4. In a bowl, mix soy sauce, sugar, vinegar, chili paste, cornstarch, and 1/4 cup water. Pour into pan and stir until mixture is simmering and thickened, about 1 minute.

 207.

 208. 5. Gently stir in tofu, eggplant, and green onions until heated through.

 209.
220.

Served with a delicious dipping sauce

 221.

 222. I didn't have much in the house in the way of groceries, and happenned to have some shrimp, so tried out this recipe from skinnytaste.com. They were easy enough to make and didn't require many ingredients (It does however require shredded coconut, which can be purchased at the grocery store, bulk barn..). It could be served as a main course with a salad, or as an hors d'oeuvres when having guests.
223.
224. Ingredients:
225.

 226.
1 lb (24) large shrimp, peeled and deviened (weight after peeled) (I only had non-peeled frozen shrimp, so I cooked them briefly in beer to be able to peel them and give them a bit of added flavour)

 227.
1/2 cup + 1 tbsp shredded sweetened coconut

 228.
1/2 cup + 1 tbsp panko crumbs

 229.
2 tbsp all purpose flour

 230.
1 large egg

 231.
pinch salt

 232.
non-stick spray (or olive oil)

 233.

 234.
235. For the Sweet and Spicy Dipping Sauce:
236.

 237.
1/2 cup apricot preserves (you can use sugar free if you wish)

 238.
1 tbsp rice wine vinegar

 239.
3/4 tsp crushed red pepper flakes

 240.

 241. Directions:
242.
243. -Preheat oven to 425°. Spray a non-stick baking sheet with cooking spray.
244. -Combine coconut flakes, panko crumbs and salt in a bowl. Place the flour on a small dish. Whisk egg in another bowl.
245. -Lightly season shrimp with salt. Dip the shrimp in the flour, shaking off excess, then into the egg, then in the coconut crumb mixture
246. -Lay shrimp on the cookie sheet then spray the top of the shrimp with more cooking spray; bake in the middle rack for about 10 minutes. Turn shrimp over then cook another 6-7 minutes or until cooked though. Remove from oven and serve with dipping sauce.
247.
248. For the sauce, combine all the ingredients and place in a small bowl.
