4. It's been a long time since I've made my little whales and it was so much fun! I forgot just how cute these little whales were. This time around I made them for Konrad who was celebrating his second birthday. His party theme this year was All Things In the Sea and the whales were a perfect fit. You might remember these little guys from a few years ago when I first made them. It was then that I also invented my Sincere Strawberry Cupcakes which I also made for Konrad. I topped all the cupcakes with a very generous dollop of Vanilla Swiss Meringue Buttercream.
7. Monsters have invaded my kitchen but don't worry, they don't bite. Instead you get to bite them! Last year I was asked to make a baby shower cake, cupcakes and cake pops for Mikey's parents, eagerly anticipating Mikey's arrival. Now, a little over a year later , I was asked to help with another big event: Mikey's very first birthday. It's such an honor!
The black and gold zipper, the brown purse and the lipstick are all replicas of things he is known for. The rest of the cupcakes are fairly self explanatory except for two: The teal belt above the Happy Birthday cupcake is for the brand Pop Mollywho is known for their belts and purses and the second is the zebra one to the left of the big red heart. I was immediately interested because baby shower cakes usually offer the most creative challenges and have thus become my favorite type of party cake to make. However when Shauna told me that she wanted something with "...flowers and butterflies in soft pinks and lavenders..." I was a little deflated. So much so that I actually tried to talk her out of it.
I learned to camp, row a river raft, and a lot about myself. I even rowed a class 3 rapid! It was a lot of work being on the river, but the simplicity that came from letting go of modern life and truly relaxing made the experience just extraordinary. It didn't hurt that the Canyon is just so incredibly beautiful either. There's so many stories, so many things I want to tell you all about, but I'll save that for another post when I have the photos organized and ready to share. Until then, let's get to back to business, shall we? On to the cupcakes!
21. Guess what?! This is my 150th post, woo hoo! Boy that's a lot, huh? Sometimes I look at this blog and I can hardly believe that it's mine. Speaking of which, have no noticed how little I've been posting lately? Well, I think I the baking blahs. Maybe it's just the warm days of summer? Who knows! I am not saying that I'm going to stop blogging, but I think I just need a little break from it for a while so don't be alarmed if you don't see anything new from me between now and the beginning of August. My hope is that with a nice long break, I'll come back ready and raring to go. Knowing me, I'll probably be back to posting well before then.
They were a birthday gift for one of the trainers at the gym with whom I've only had the opportunity to train with a handful of times. She's a hardcore athlete, a hell of a trainer, and is super cool to boot. Jesse, the trainer who told me it was her birthday, mentioned that she's really into t-shirts, namely making them for special events or for people she knows. After I made a few t-shirts, I decided to make a few hoodies, which are both made out of fondant, just for fun.
When I was looking for a recipe to use, the vast majority that I found included a box of white cake mix and strawberry gelatin. While I know that this recipe is beloved by many (it has quite the following in the South), I wanted to make cupcakes that looked an tasted like real strawberries, not day-glo red in color and strawberry Kool-aid flavored.
I just have to open myself up to the possibility and it usually just happens.
40. Boy last Friday was fun. What a rush! You would think with a week long binge of cake making madness, I'd run way from my kitchen crying at the sight of my mixer. I'll admit, I wasn't super excited about making cupcakes for Groundhogs Day, but it was worth all the "omg-those-are-the-cutest-things-ever!" comments!
41.
42. Because I was a bit tired from all the craziness of the week before, I decided to cut a few corners and base my cupcakes on a box mix. As shameful as that may be, I don't think there's anyone that could tell that these came from a box. They were so incredibly moist! I heard from a few of my coworkers that this cupcake was one of the best they've ever had.
43.
44.
45. The cupcake by itself was wonderful (I finally caved and had one), but when it was combined with the dulche de leche and the cream cheese buttercream, it evolved into something truly phenomenal.
46.
47. So what makes these a "Blue Ribbon" cupcake? Well, that distinction comes from the little blue ribbon that appears on every container of Hellman's and Best Foods mayonnaise. I know the idea of using mayonnaise in a cake sounds a little revolting, but if you think about, it makes perfect sense. Mayonnaise is essentially eggs and oil (fat) which in some form or another is in just about every cake I've made. Please, though, I beg of you, if you decided to make this cupcake do not use Miracle Whip or any other salad dressing type of mayonnaise since those products are full of non-baking friendly ingredients like modified food starch, mustard flour, paprika, and dried garlic. If you're unsure, check the label.
48.
49. The dulche de leche layer is completely optional. I decided to use because I had a bit left over after making the Nacho Cheese Dispenser cake and couldn't bear to throw it away. It's important not to spread too much of it on top of the cupcakes, it's just there to add a subtle flavor and shouldn't overwhelm the little cake.
50.
51. When it came to the frosting, I wanted to add the tang of cream cheese to the mix but wanted to do something a little different. Personally, I'm not a fan of cream cheese frosting. Most recipes that I've had just taste like a slightly less thick, blob of cream cheese with a little sugar mixed in. I started tweaking the recipe just by creaming the cream cheese, shortening (for a little structural support), and butter together for several minutes, allowing plenty of time for the ingredients to mix together thoroughly and get proper aerated. This left me with the best of both frosting worlds -- a slightly thicker buttercream than I would normally make but that finishes with a tangy cream cheese flavor.
52.
53. As for the little groundhogs, they are more time consuming to make than anything. Believe it or not, they are just Tootsie Rolls and chocolate chips. It takes a little practice to do it but after a few tries, I think you'll find it easy to make. You can find more details about how to make them here.
54.
55. Blue Ribbon Dulche de Leche Glazed Cinnamon Chocolate Cupcakes with Cream Cheese Buttercream
56. Yield: Approximately 28-30 cupcakes
57.
58. To make these cupcakes you'll need one recipe of each of the following:
59.

 60.
Blue Ribbon Chocolate Cupcake

 61.
Dulche de Leche

 62.
Cream Cheese Buttercream

 63.

 64.

 65. Start with making the dulche de leche the day before or at least 4-6 hours before. It takes several hours to make this and for it to cool. Next, make the cupcakes and then the buttercream. After the cupcakes have completely cooled (and I mean waiting at least an hour or so), spread a thin layer of dulche de leche on top, trying not to spread it to close to the paper edge (you might find it easier to do it with the bottom of a teaspoon). When you're close to being ready to serving the cupcakes (maybe an hour before), frost them. For a easy decoration, I reserved a few cupcakes to break up into crumbs to decorate the tops.
66.
67.

 68. Blue Ribbon Chocolate Cupcakes
69.
70. 1 box of chocolate cake mix with pudding (the one I used for this recipe was Betty Crocker's) Super Moist Triple Chocolate Fudge
71. 1 teaspoon of cinnamon
72. 2 tablespoons unsweetened cocoa powder, try to break up any big clumps before adding it to the batter
73. 1 cup of Hellman's or Best Foods mayonnaise
74. 3 eggs at room temperature
75. 3/4 cup of milk at room temperature
76. 1 teaspoon of almond extract
77.
78. Preheat oven to 350F. Place cupcake liners in a muffin pan and set aside.
79. Place the cake mix, cocoa, and cinnamon mix together with a whisk to combine the ingredients.
80. Add the mayonnaise, eggs, milk, and almond extract and mix on low speed for one minute. Scrape down the bowl and increase the speed to medium and mix for two minutes. Fill the cupcake liners a little more than half way and bake in the center of the oven for 16-18 minutes and the center springs back when lightly pressed. Remove the cupcakes from the pan and let cool completely.
81.
82. Dulce de Leche
83.
84. 1 can of sweetened condensed milk
85. pinch of salt
86.
87. Put oven rack in middle position and preheat oven to 425F. Pour condensed milk into pie plate and stir in a generous pinch of salt. Cover pie plate with foil and crimp foil tightly around rim. Put in a roasting pan, then add enough boiling-hot water to reach halfway up side of pie plate, making sure that foil is above water. Bake, refilling pan to halfway with water about every 40 minutes, until milk is thick and a deep golden caramel color, about 2 hours. Remove pie plate from water bath and transfer toffee to a bowl, then chill toffee, uncovered, until it is cold, about 1 hour.
88.
89. Cream Cheese Buttercream
90.
91. 1 stick of unsalted butter, at room temperature
92. 1 8oz brick of full-fat cream cheese (I prefer Philadelphia Brand)
93. 1/2 cup shortening pinch of salt
94. 1 teaspoon vanilla extract
95. 1 teaspoon of vanilla bean paste (if you can't find this, add an additional teaspoon of vanilla extract)
96. 1 pound + 1 cup of powdered/confectioner's sugar (powdered sugar, 10x) sifted
97. 2-3 tablespoons very cold milk
98.
99. Cream the butter, shortening, and salt until light yellow and creamy -- about 3 minutes. Add the vanilla extract and the bean paste and mix for another minute. Be sure to stop and scrape the bowl about half way through. Add the sugar a cup or so at at time. When you first add the sugar, turn the mixer on the lowest speed. This will help to avoid most of the sugar being mixed right out of the bowl or you swallowing a cloud of powdered sugar. :-) When the sugar is absorbed, increase the speed to medium for a minute and repeat until you've gone through the entire pound of sugar. The frosting should be somewhat dry looking at this point. If it's not, add more sugar. You want it thick. Once it's thick, add the milk one tablespoon at a time. Keep adding until the frosting is thick, but more creamy and less dry looking.

I baked them as my second entry in a friendly baking competition at work between me and another compulsive baker.
105. See what happens when you make snowmen indoors? They melt! Well, that was the look I was going for, anyway. I got inspired to make these insanely creative cupcakes after seeing them on Nicisme's blog (check out here blog; it's wonderful!). Although I found her cupcakes really charming, I decided to add my own personal touch by topping each snowman with a fancy top hat (adorned with holly) and a green scarf. You can't really see it in the photos, but each scarf had a unique pattern. I also strayed from her recipe in that I used fondant to make almost everything, except the holly. For that, I used holiday light bulb sprinkles but if I had planned ahead, I would have used holly berry and leaf quins instead.
Lately I've been a little uninspired by the last few savory DB challenges, but I was eager to rejoin the group when I read that this month's challenge was bringing sugar back to the table.
As I do just about every work day, I fired up the first of several of my favorite blogs while I started to dig into my lunch:NotMartha.org. The daily post consisted of a collection of a bunch of links to interesting stuff of or related to my favorite subject: food. I scroll through the links: something about beef (gross), crust less quiche (promising)...and then I see it: "cake lollipops at Bakerella".
