5. I spoiled my coworkers with a choice of six Bundt cakes to help make a mundane meeting taste a little sweeter. Out of the six cakes that I made, this one was devoured the fastest. Folks made a bee-line directly for it. I think the lusciously thick chocolate glaze that graced the top of this cake was just too difficult to ignore. Moreover, the classic combination of chocolate, hazelnut and coffee was just too hard to resist too. This cake is a trifecta of awesomeness.
9. A few weeks ago I was contacted by the great people over at Solo Foods to enter their Sweetest 16 Baking Recipe Contest. They sent me a box chock full of almond paste and several of their pastry and pie fillings and asked me to come up with an original recipe. I pondered over this for a while before I began to bake. I wanted to make something different and not the typical macaroon or almond cake. I almost entered my recipe for The King of Cakes: Baumkuchen but decided to think a bit outside of the box.
When I first started there it was a definitely a startup environment: we worked a lot of long hours and didn't have a lot of money to spend on morale events. However, that changed when I volunteered to make a surprise cake for one of my coworkers on their birthday. Everyone liked it so much, I found myself volunteering to bake every time I had the opportunity.
17. When the weather turns chilly and the days get shorter, it's the time of year that calls for a warm, soul-satisfying dessert. No one can deny that cookies right out of the oven or a bowl of hot apple crisp does job well, but sometimes you want a warm confection that's both elegant and unique. 20. I was dead set on making this fudge before I went to bed. Why? Well, because I'm a hard-headed dork, of course. Actually there's really no good reason. I wanted to make this in spite of the fact that I only had about four hours sleep AND got up at 5:30am to workout AND made dinner AND cleaned a good portion of the house (I even scrubbed a large swath of my kitchen floor on my hands and knees!) By 11 o'clock I was one tired chick and should have gone to bed; but no, the fudge insisted on being made so I stayed up.
22. I'm not usually a fan of the group dessert thing. I think birthdays and other big events are just too personal. I've always tried to make something special, catered specifically for the person for which I'm celebrating. However I bent this rule when I made this cake for two very lovely brides, Courtney and Amy. Both of these wonderful women work on my team and are getting married within a month of each other. (Congrats to Courtney who just tied the note in Italy a few weeks ago!!)
39. Yesterday I was invited to a housewarming for my friend Apoorva and her husband. They had just moved into their brand new and extremely charming town house; I couldn't wait to get a peek inside. To honor the occasion I bought her a glass cake plate with a matching lid and offered to make her any cake she wanted. She, of course, requested something chocolate.
40.
41. The great thing about this cake, besides how easy it is to prepare, is that you can either use any nut-based chocolate bar you'd like or just use plain milk chocolate. I decided to use a combination of Ghirardelli Hazelnut milk chocolate and believe it or not, milk chocolate from Ikea. It's really rather good and melts very evenly.
42.
43. This cake does have a lot of chocolate, it's true. For the cake there was a total of 10oz of chocolate. It was actually two 3.5 ounce milk chocolate hazelnut bars, plus one additional 3.5oz milk chocolate bar. I modeled this recipe after the popular Hershey Bar Cake (If you do a search in Google for "Hershey Bar Cake", you'll see several) There are several versions but in most of the recipes that I read, it includes anywhere from 1/2 cup to 1 1/2 cups of chocolate syrup, in addition to 6 to 12 oz of milk chocolate! So I substituted 3 oz of melted milk chocolate for those two ingredients, even though they don't really add up to 3 oz. It still came out okay in the end!
44.
45. The frosting is melted milk chocolate with a little shortening to help with pour-ability. You can cut back on the amount of chocolate here if you want to, its really your preference. I ended up with extra chocolate frosting pooled in the center of the cake but that was due to the fact that the cake was still piping hot when I frosted it. You could start out with 3oz, frost the cake and if it's not enough, go back and frost it with a little more. The layering of chocolate would look kinda cool, actually (maybe a little white chocolate, dark chocolate, etc?)
46.
47. This cake could even be made with chocolate candy from Halloween. I realize that's a long shot, but it could happen!
48.
49.
"Any Nut" Milk Chocolate Cake
50. Yield: About 12-16 pieces
51.
52. Cake
53. 1 box of yellow cake mix, WITH pudding in the mix
54. 1 1/3 cup water
55. 1/2 cup vegetable oil
56. 3 large eggs, at room temperature
57. 1 teaspoon pure vanilla extract
58. 7 oz of your favorite milk chocolate bar with chopped nuts of your choice (or no nuts, up to you!)
59. 3 oz of your favorite plain milk chocolate
60. 1/2 cup of milk chocolate chips (optional)
61.
62. Chocolate Glaze
63. 7 oz of milk chocolate (I choose no nuts but if you want nuts go for it)
64. 2 tablespoons of solid vegetable shortening
65.
66. Preheat the oven to 350F. Prepare a Bundt pan with butter and flour or just spray with Pam with Flour (my fav). Set aside.
67.
68. Combine cake mix, water, oil, and eggs in a bowl and mix for 1-2 minutes until well combined, being sure to scrape the bottom of the bowl as needed. Set aside.
69.
70. In a medium sized glass or microwave proof bowl, break up the chocolate into small squares. Melt in the microwave for 1 minute on 50% power. Stir to mix (it won't be all the way melted yet) and continue microwaving at 30 second intervals on 50% power until the chocolate is smooth and melty. You can also use a double boiler for this step if you wanted to.
71.
72. Remove about a cup of batter and slowly add it to the melted chocolate to temper it. Then add the chocolate/cake batter mixture to the rest of the cake batter and mix on medium high for about a minute. Pour batter into prepared pan and bake for 35-40 minutes until a long wooden skewer comes out of the center of the cake clean. Be careful not to over bake! The edges of the cake will be browned but the center will spring back when you touch it, but might look slightly under done when compared to edges. That's okay! This cake will continue to bake for a while after it comes out of the oven.
73.
74. Take the cake out of the oven and let rest for 5 minutes before inverting onto a wire rack to cool. Note:When I made this cake, the cake cooled about all of 10 minutes and everything turned out fine. However, I think it's probably best to let the cake cool completely (about 40 minutes).
75.
76. To prepare the frosting, melt the chocolate and shortening in a bowl until smooth and pour over the cake. Decorate with chocolate chips, coconut, chocolate shavings, sprinkles, or just leave plain.

I tried to encourage her to celebrate her birthday-eve instead, something my sister always celebrated because her birthday was on New Year's Eve, but she wanted to wait until tomorrow and who could blame her? 84. Celese and I met during one of my son's baseball games about three years ago and soon became friends. She and I are very similar in some ways: we're both perfectionists, creative, and very detail oriented in the work that we do. Around the time we first became friends, I was organizing a big open house party at my job and I hired her as my party planner. We were in harmony with our thinking and at times I felt like I had met my clone. We just clicked.
89.

 90. Back in October of last year, I stumbled upon a website that featured a video with the title, “Dying 47 year-old Professor Gives Exuberant ‘Last Lecture'”. The premise of a dying professor giving his last and final lecture intrigued me so I decided to check it out. As it started to play I realized the video was over an hour and a half long. I figured I’d watch the first ten or so minutes and move on but I ended up watching the entire thing! What I didn’t expect was to find Randy Pausch so likeable, humble, and funny. I thought I'd see a frail, bitter man but instead I saw someone who looked healthy, with a beaming smile and kind eyes. Within moments of arriving on stage he said, “If I don't seem as depressed or morose as I should be, sorry to disappoint you” and then starting doing push-ups! I was hooked.
They were coming to Seattle for a visit and as a surprise Kara and her brother Jay wanted to honor the milestone with a special cake and champagne toast in their hotel room. What an honor it was to be asked to make a cake to celebrate a 40th anniversary! I have to say I was more nervous making this cake than any cake I've ever made. Kara wanted something wedding-cakey but nothing too feminine. Plus she wanted each cake to be true to what it really was; no over-the-top decorating needed.
I spent a lot of time over her house and loved being surrounded by her Greek culture. Her Yaya (grandma) lived directly behind her and she was the sweetest woman! She made the most delicious avgolemeno soup I have ever had. I wanted a Yaya of my own so badly that one of my mom's good friends let me call her Yaya -- and I still do, a good 25 years later!
99. That's not a typo, this dessert really was a "whipped dream". I made this trifle for Mark because he graduated with his MBA last week and I wanted to make him something special to celebrate his achievement. When I asked him what sweet treat he wanted, his eyes lit up and big smile came across his face. He wanted a coconut pound cake with bananas in between the layers and coconut frosting. I knew I could do that, but then I got inspired to come up with something a bit different. I ran it past him first and he told me to go for it.
Once I have my completed dossier, I get to work sifting through my endless supply of "gotta-make" recipes, which is my favorite part.
