  4. Not to toot my own horn or anything, but I officially have a favorite chilli recipe - and &lt;b&gt;I made it all on my own.&lt;/b&gt; This. Was. Amazing. A perfect Sunday meal.&lt;br /&gt;

  6. As I&#39;m sure is evident, I love making chilli. It&#39;s the absolute easiest way to cram a ton of healthy ingredients into one dish that will last the week - and hopefully taste good. It doesn&#39;t get much better than that. Yes, it&#39;s a little bit of work up front, but then &lt;i&gt;no &lt;/i&gt;work throughout the week!&lt;br /&gt;

  8. I typically use the slow cooker, but used my handy red Kitchenaid dutch oven this time around to cut down on time.   10. &lt;b&gt;Sweet Potato and White Bean Chilli (&lt;i&gt;with PORK!)&lt;/i&gt;&lt;/b&gt;&lt;br /&gt;
  11. &lt;i&gt;From Allie&#39;s Changing Kitchen&lt;/i&gt;&lt;br /&gt;
  12. &lt;br /&gt;
  13. 6 slices of bacon, diced (&lt;i&gt;Maple Leaf, less sodium - sugar-free)&lt;/i&gt;&lt;br /&gt;
  14. 1 package of ground pork&lt;br /&gt;
  15. &lt;br /&gt;
  16. 1/2 large onion, diced&lt;br /&gt;
  17. 1 large sweet potato, diced&lt;br /&gt;
  18. 1 1/2 cups of kale, sliced small&lt;br /&gt;
  19. 1 1/2 cups of corn (frozen or canned, but I had canned)&lt;br /&gt;
  20. &lt;br /&gt;
  21. 1 cup of broth&lt;br /&gt;
  22. 1 can of Hunts Original Pasta Sauce&lt;br /&gt;
  23. 1 can of white beans, drained and rinsed&lt;br /&gt;
  24. 2 tsp oregano&lt;br /&gt;
  25. 1 tbsp of chili powder&lt;br /&gt;
  26. 2 tsp of paprika&lt;br /&gt;
  27. 1/2 tsp of garlic salt&lt;br /&gt;
  28. 1 tsp of salt&lt;br /&gt;
  29. 1 tsp of pepper&lt;br /&gt;
  30. &lt;br /&gt;
  31. 1. Fry the bacon. Set aside.&lt;br /&gt;
  32. 2. Cook the ground pork.&lt;br /&gt;
  33. 3. In a dutch oven or pot, cook the sweet potato and onion for about 7 minutes.&lt;br /&gt;
  34. 4. Add in all of the spices, the cooked pork, bacon, beans, broth and and tomato sauce. Turn heat down to simmer for an hour - &lt;i&gt;at least.&amp;nbsp;&lt;/i&gt;&lt;br /&gt;
  35. 5. About 15 minutes before you&#39;re ready to eat, throw in the kale and corn.&lt;br /&gt;

  37. I think I&#39;ve used diced tomatoes in every chilli I&#39;ve ever made and have never used straight up tomato sauce. This - I believe - may be what made the difference. It was&amp;nbsp;&lt;b&gt;full of flavour. A hearty, warm dish for a Sunday evening.   84. I love risotto but never have the time or energy to stand by a stove to make it right, or to find an appropriate parmesan-free recipe. This turned out well, tasty, but I&#39;d definitely play with some more spices and flavours the next time I try it.&lt;br /&gt;

  92. Cook on high for 1 hour and 30 minutes (check, because I overcooked mine a little bit).&lt;br /&gt;

  94. Once finished, mix in 1/4 cup of almond (or any) milk + 1/4 cup of nutritional yeast. Add more of any of the above flavourings if you want. I topped mine with homemade bacon bits but you could omit to keep it veg - friendly.&lt;br /&gt;

  132. 1/4 of a red onion, chopped&lt;br /&gt;
  133. 1 medium sweet potato, chopped in 1/2 inch cubes&lt;br /&gt;
  134. 2/3 to 1 cup of swiss chard stems, chopped in 1/2 inch cubes&lt;br /&gt;
  135. 8 tsp of vegetable bouillon powder (or the equivalent of whatever bouillon or broth you use to match water quantity)&lt;br /&gt;
  136. 8 cups of water&lt;br /&gt;
  137. 1 tbsp of mixed herbs (fresh, or squeezable fridge herbs)&lt;br /&gt;
  138. Season with: Italian spices, salt and pepper&lt;br /&gt;
  139. &lt;br /&gt;
  140. 1. In a large soup pot, bring 2 cups of the soup mixture to boil with 8 cups of water + 8 tsp of bouillon (or just 8 cups of broth). Once it reaches boiling, let simmer.&lt;br /&gt;
  141. 2. Meanwhile, prepare the garlic, onion, swiss chard stems and sweet potato. Saute on high for approximately 8 minutes. (&lt;i&gt;*Look at the color!!!*)&lt;/i&gt;&lt;br /&gt;
  142. 3. Once the soup has been simmering for approximately 30 minutes, add in corn and the sauteed mixture.&lt;br /&gt;
  143. 4. Continue to let simmer for another 30 minutes.&lt;br /&gt;
  144. 5, Season as you wish and enjoy!&lt;br /&gt;

Don&#39;t be shy, though, you can add a wee bit of water to your bowl before re-heating if to make it soup-y again OR just eat the mush like I&#39;ve been doing. After re-introducing myself into the Maritimes&#39; meat-and-potatoes way of doing supper, I have found that I, too, have the ability to make a healthy meal that feels like &lt;i&gt;home&lt;/i&gt;. Roasts, baked potatoes, carrots, stews.&amp;nbsp; They all feel like home to me.&amp;nbsp; Home, in the sense of family-cooking, because I am fortunate enough to only live about a half hour away from most of my family.&lt;br /&gt;

  450. Anyway, back to food....This stew was so easy (the kind you can walk away from while it&#39;s on the stove) and tasty, we&#39;ll for sure add this on our Go-To List.&lt;br /&gt;

  452. &lt;b&gt;Italian Shrimp Stew&lt;/b&gt;&lt;br /&gt;
  453. &lt;i&gt;Clean Eating Magazine, January 2011&lt;/i&gt;&lt;br /&gt;
  454. &lt;br /&gt;
  455. 1. In a pot, heat oil over medium heat.&lt;br /&gt;
  456. Add:&lt;br /&gt;
  457. &lt;i&gt;- &lt;/i&gt;2 medium carrots, peeled and chopped&lt;br /&gt;
  458. &lt;i&gt;- &lt;/i&gt;2 small peeled and chopped potatoes&lt;br /&gt;
  459. &lt;i&gt;- &lt;/i&gt;1 tsp of dried rosemary&lt;br /&gt;
  460. &lt;br /&gt;
  461. 2.&amp;nbsp; Stir and saute for about 2 minutes. &lt;br /&gt;
  462. &lt;i&gt; &lt;/i&gt;Add in:&lt;br /&gt;
  463. - 2 cups of chopped (cut in half) cherry tomatoes&lt;i&gt; &lt;/i&gt;&lt;br /&gt;
  464. &lt;i&gt;- &lt;/i&gt;2 cups of Organics vegetable broth&lt;br /&gt;
  465. &lt;br /&gt;
  466. 3. Bring the mixture to a boil, then reduce the heat to medium-low.&amp;nbsp; Cover and cook for 10 minutes.&lt;br /&gt;
  467. &lt;i&gt;&lt;/i&gt;&lt;br /&gt;
  468. 4.&amp;nbsp; Uncover the pot and test the potatoes.&amp;nbsp; If they are not yet very soft, cook for another 3 - 5 minutes (I had to cook them for the full extra 5 minutes).&lt;br /&gt;
  469. &lt;i&gt;&lt;/i&gt;&lt;br /&gt;
  470. 5.&amp;nbsp; Once potatoes are done, mash a few to thicken the sauce.&lt;br /&gt;
  471. &lt;i&gt;&lt;/i&gt;&lt;br /&gt;
  472. 6.&amp;nbsp; Add:&lt;br /&gt;
  473. - 18 oz medium uncooked shrimp (de-tailed). &lt;br /&gt;
  474. 7.&amp;nbsp; Cover and cook for 2 minutes.&amp;nbsp; Cook through until shrimp are pink.&lt;br /&gt;
  475. &lt;br /&gt;
  476. &lt;i&gt;Season with salt and pepper and enjoy!&amp;nbsp; Be prepared....it&#39;s tasty!&amp;nbsp;&amp;nbsp;&lt;/i&gt;&lt;br /&gt;

  482. Tonight&#39;s menu: &amp;nbsp;Lemon Grass - Shrimp Soup with a side of Red Curry Tuna and Crackers. &amp;nbsp;I found this recipe online, but did more of my own changes and additions than anything.&lt;br /&gt;

  484. &lt;b&gt;Noodle Soup&lt;/b&gt;&lt;br /&gt;
  485. 1. &amp;nbsp;Heat 2 cups of water and 1 cup of broth in a soup pot on the stove.&lt;br /&gt;
  486. 2. &amp;nbsp;Prepare other ingredients:&lt;br /&gt;
  487. - Smash 1 stick of lemon grass and cut into 1 inch pieces&lt;br /&gt;
  488. - Cut a 1 inch piece of ginger into pieces, big enough to take out of soup later&lt;br /&gt;
  489. - Prepare 1 tbsp of fish sauce, 1 tsp of maple sugar, and 2 tsp of red chili paste&lt;br /&gt;
  490. - Cut 4 large button mushrooms&lt;br /&gt;
  491. - Prepare 3 tbsp of lime juice&lt;br /&gt;

  497. 5. &amp;nbsp;Add mushrooms and lime juice.&lt;br /&gt;
  498. 6. &amp;nbsp;Add shrimp. &amp;nbsp;If cooked, turn soup down and let it simmer. &lt;br /&gt;
  499. 7. &amp;nbsp;Four minutes prior to eating, add noodles in.&lt;br /&gt;

  566. Okay, so squash and pumpkin are both very delicious, but it&#39;s we were in need of something on the tangy side of things. Luckily, I was able to throw something together using ingredients I had in my kitchen!&lt;br /&gt;
  567. &lt;br /&gt;
  568. &lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;
  569. 14 oz can of diced tomatoes (half of those massive cans)&lt;br /&gt;
  570. &lt;b&gt; &lt;/b&gt;1/2 can of coconut milk&lt;br /&gt;
  571. olive oil&lt;br /&gt;
  572. garlic&lt;br /&gt;
  573. 1/2 onion (I only had red)&lt;br /&gt;
  574. 1/2 tsp of pepper&lt;br /&gt;
  575. 1/2 tsp of salt&lt;br /&gt;
  576. 1 tsp of corn starch&lt;br /&gt;
  577. Garnish with basil&amp;nbsp; &lt;br /&gt;
  578. &lt;br /&gt;
  579. 1.&amp;nbsp; Cook onion, garlic, and oil in a small pot for a few minutes.&lt;br /&gt;
  580. 2.&amp;nbsp; Add all other ingredients (except basil) and simmer on low for 30 minutes.&lt;br /&gt;
  581. 3.&amp;nbsp; It&#39;s up to you what you&#39;d like to do at this point, but I poured everything in the blender (didn&#39;t puree it completely) and put it back into the pot to simmer for a few minutes.&lt;br /&gt;

In a large pot, I used about a cup of kimchi (including juices), 1 1/2 of vegetable broth, 2 cups of water (to start), two chopped green onions (white part included), a little more than a tablespoon of fish sauce (we use Squid Brand: this is the same as oyster sauce) and 2 small clumps of&amp;nbsp;&lt;b&gt; &lt;/b&gt;enoki mushrooms (found at Super Store).&amp;nbsp; I let it simmer on medium/low for awhile and kept adding water over the span of about 45 minutes to an hour.&lt;br /&gt;

  704. 2.&amp;nbsp; Once the chicken has started to cook, add juice from lemon (1/4 of a lemon if it&#39;s a big one!) and enough vegetable broth to have the chicken simmering it it.&lt;br /&gt;
  705. 3.&amp;nbsp; Once done, eat alone or dip in something like Thai Chili Sauce&lt;br /&gt;

  707. &lt;b&gt;Curried Potato - Fries/Hash browns&lt;/b&gt;&lt;br /&gt;
  708. 1 big potato, cut into very, very small pieces&lt;br /&gt;

In my&amp;nbsp; mind, potatoes always take so long to cook after a long day at work.&amp;nbsp; Since we (J) diced them really small, we were able to microwave them for about 6 minutes or so - maybe more - until we could smell them. We coated them in curry powder before microwaving so the curry could start to cook right into the potatoes.&amp;nbsp; Once done - enough - I threw them in the hot frying pan with a bit of olive oil and harden them up, and we had our adult fries!&lt;br /&gt;
