3.
4. You read correctly. I'm about to rock your world with a tasty poutine recipe that will satisfy the soy, dairy and gluten intolerant, the vegetarians, the vegans - and the people who simply get a little creeped out by turning a Chicken-embellished package of powder into a "rich" sauce.
5.
6. Two years ago I would have said I had to give up poutine for good. Today, I thank my lucky stars that Halifax continues to become more awesome with their selection of "speciality" foods and that food bloggers continue to be creative, making it possible for me to welcome this salty delight into my life as frequently as I wish.
7.
8. One disclaimer I'd have is: yes, this is a "healthier" version of a poutine, but you must accompany it with a salad, or a shot of V8 or grapes for dessert...something. It's clearly lacking in the nutrient department, but that's clearly not the point of a poutine, is it?
9.
10. Vegan Homemade Poutine
11.

 12. Gravy
13.

 14. Taking this recipe here, I followed along and tried a few things until I got it just right. I basically followed it as is, but have written out my exact measurements and ingredients.
15.
16. In a saucepan, combine:
17.
18. 1 1/2 cups of water
19. 1 vegetable bouillon cubes (I'm now using GoBio - ingredients are way better than most)
20. 1 tbsp of vegan margarine
21. 1 heaping tbsp of nutritional yeast
22. 1/2 tsp of onion powder
23. 1/4 tsp of garlic powder
24. A few dashes of coconut aminos (this is the soy replacement I finally found at Planet Organic!! wheeeeee!)
25.
26. Once the butter and bouillon have dissolved, slowly add in:
27.
28. 1/4 cup ...and a few sprinkles more... of brown rice flour (any will do if you're not gluten intolerant or celiac)
29.
30. Whisk away while bringing to a boil. Reduce heat and you're done. How easy?
31.
32. Poutine Assembly
33.

 34. We use the shoestring McCain's french fries - use whatever you'd like. Add on some Daiya Mozzarella (any Daiya would do, but I find the mozza to be the best for this and nachos). Top it (or soak it - whichever is your style) in gravy.
35.
36. You have your masterpiece!
39.
40. I'm not sure if I ever mentioned my love of the idea of avocado fries (have you seen them all over Pinterest?) to J or not, but either way, he found the recipe on his own and decided to surprise me with a Saturday treat. A lovely, lovely treat.
41.
42. With inspiration from here, he went to work.
43.
44. What To Do
45.

 46. - We used four avocados, but two would suffice for two people. Cut them lengthwise and carefully remove the pit and the avocado from its skin without disrupting it too much. This means you need avocados that are just hard enough to stay intact, but soft enough to scoop out easily!
47.

 48. - Preheat oven to 350
49.

 50. - We didn't have any panko in the house, so we used a mortar and pestle to crush up soda crackers with a ton of spices. Mix in whatever you want and have fun with it! We used: himalayan sea salt, chili powder, onion salt, garlic powder, celery seed, freshly cracked black pepper, Italian blend.
51.
52. - Slice your avocados to resemble fries or wedges.
53.
54. - Dip each piece in egg and coat in the cracker/spice mixture.
55.
56. - Place tinfoil on a baking pan and a baking rack on top of that (to make it easier to turn the soft avocados over without breaking them).
57.
58. - Place the fries on the rack and bake for 20 minutes, turning them over at the halfway point.
59.
60. That's it! Dip it in homemade curried mayo or agave sweetened ketchup and call it a day!
61.
62.

 63.

 65.

 66. Happy Monday!
67.
68. I always say that, but never actually feel it. It's pretty much the most dreary day of the week, isn't it? Monday evenings aren't too shabby, but Monday mornings and afternoons? Holy they suck! I guess Monday really had no chance, following a most awesome day like Sunday.
69.
70. To start the week off, I wanted to share two treats that I threw together over the weekend. It was a very social weekend of dinner parties and bachelorettes (well, one of each but they both deserve to be pluralized) filled with lots and lots of girl time - and food. Those two things seem to go hand in hand in my world!
71.
72. I think I've confessed my love for guacamole before - and avocados. You can do anything with an avocado and basically just as much with guacamole. I know we all talk about how versatile hummus can be (which I love), but deep down, I'll always be tied to my guacamole. This is a recipe for a very, very basic throw together guac but it's one of my faves. My friend, Lauren, told me to add orange to the next guac that I make but I completely forgot! Next time...
73.
74. Basic Guacamole
75. From scratch: I am specifying this because if you are in a pinch, the easiest thing you can do is mix ready-made salsa with avocado and you're done. And you will be the popular one at the party.
76. 1 avocado
77. 1 small tomato, diced
78. 1/4 of a red onion, diced
79. 1 tsp of garlic salt
80. 1 tbsp of lemon
81. paprika
82.
83. Mix everything together and top with paprika. That's it! Double this if you can, I only had one avocado on hand at the time.
84.
85. Print this recipe
86.
87. Next in line for green goodness is collard chips. I've made kale chips and loved them, but bought collard greens at the grocery store the other day and thought I'd give it a try with that. I've been trying to buy a different 'green' at the grocery store each week - I.e. swiss chard, kale, collard, etc - and didn't really know where to begin with these giant leaves. Chip form was a wonderful, wonderful, surprising way to start.
90. Collard Green Chips
91. From Allie's Kitchen
92. Collard Greens (I used about 5 or 6 big leaves), leaves pulled off of the stems and ripped into pieces (chip-size)
93. Lemon juice
94. Olive oil
95. 1 - 2 tsp of Garlic Salt
96. Salt and Pepper
97.
98. Preheat oven to 350. Wash the greens and shake dry as much as possible. In a bowl, toss the leaves with olive oil and lemon juice (don't coat it, toss). Cover a baking pan with tin foil and lay the greens out in a single layer. Sprinkle with garlic salt, salt and pepper. Bake for approximately 20 minutes.
99.
100. These start to shrivel up pretty quickly so about half way through (10 minutes), I took them out and spread them out even more. If the leaves are on top of one another (which they will be at the start - that's okay), they won't get crispy. I just kept doing this until they were done. When a few were crispy, I removed them and spread the remaining ones out more.
101.
103.
104. These were SO good! Recommend!
105.
106. Enjoy the week! Tomorrow is the reveal post to show you what I got in my Foodie Pen Pal box!
107.

108. PS - Did you see my new bowl? I'm so excited about it. My mom and I picked two of these up (She got her own) at Home Sense. They come with lids! Love, Love.
113.
114. Happy end of the week!
115.
116. I have a few good "pub" or "fast food" type meals to share with you - done the healthier + intolerance-free way. During the past week, we've had another really great pizza, some portobello mushroom burgers (which were so good, I basically went back to the store the next day to get more mushrooms...) and the above chicken wings and spinach salad.
117.
118. It feels like I'm a bit of a kid all over again. Like I was just treated to a week of "junk" food (which as a kid, pizza, chicken nugget or western sandwich nights were clearly your favorite). It's an awesome feeling to know that we can have those same pleasures whenever we want - and without the expense, both literally and physically.
119. ~~~~
120. I input a little break here because this is the point where my blog decided not to save my previous writing. I have just spent the last hour - yes, hour - sitting here and writing an extremely long blog post. I thought it was pretty good. Unfortunately, my wireless and blog decided to both not cooperate at the same time and now I've lost it all. After a week of having no time to blog, I could just cry but ALAS I won't. I've got a wonderful hubby who just cheered me up with a berry/cantaloupe/vanilla rice milk smoothie so I will move on. :)
121.
122. I had written a long post about my relationship with chicken wings (admittedly, 2 paragraphs might have been too much anyway), and how my feelings on them have ebbed and flowed over the years. I wrote about my issue of eating meat off of the bone. And how we used to consume many a chicken wing on a Wednesday or Thursday evening in university without thinking twice. Even last year, I was still convincing myself that I enjoyed eating a basket of wings at a noisy bar ~ I guess we all change, right? I've come to learn that I can still embrace chicken wings, just in the comfort of my own home and if J either bakes, bbqs or slow cooks them....
123. ~~~~~~~~~
124. Instead of heading out for 25 cent wings this weekend, cook at home, be healthier and save the money (because with wings, comes draught beer) - or even better: let the slow cooker do the work for you! (and hey: drink better beer with them at home, too!)
125.

 129.

 130.

 131.

 132. 1/2 of a bottle of Organicville's BBQ Sauce

 133.

 134. 1/3 can of beer (the cheap stuff!)

 135.

 136. A few pinches of your favorite hot sauce (Frank's obviously!)

 137.

 138.

 139.

 140. Plop those chicken wings in your slow cooker and cook for 3 hours on high or 6 hours on low. That's it. Literally: that's all you have to do,

 141.

 142.

 143.

 144. Notes:

 145.

 146. - Although the BBQ sauce is sweetened with Agave Nectar instead of sugra, I just realized it's also sweetened with molasses...sigh! Just use a 1/2 bottle of any sugar, soy, dairy free BBQ sauce. I'll update the product page soon.

 147.

 148. - J came home for lunch and put the wings on high for 3 hours. The 6 hour time is just a guestimate for low.
149. - The BBQ sauce is Gluten-free

 150.

 154.

 155.

 156.

 157. The one thing I do remember noting in my other really good post was that wing nights were filled with just that: wings. You'd rarely have a vegetable to go along with it (maybe a slice of carrot or celery?). I can't believe that used to be fun!

 158.

 159.

 160.

 161. Tonight, we were craving a spinach salad...so I tried to switch things up a bit by playing around with the dressing and adding pasta! LOVE. So easy, too.

 169.
170. Cook your pasta.
171.
Dressing:
172. In a small bowl, mix together:
173. - 1/4 cup of Renee's 1/2 Caesar
174. - 1/4 cup of Helman's Mayo
175. - 1 tbsp of balsamic vinegar
176.
Salad Ingredients:
177. In a large bowl, mix together:
178. - 2 cups of spinach, cut/ripped
179. - 1 cup of tomato, diced
180. - 1 cup of cucumber, cut small
181. - 1 cup of Fresh Gourmet Organic Seasoned Croutons, crushed
182.
183. Once pasta is cooked, drain and let cool. Mix together with dressing then add in salad ingredients. Mix well and serve!
186.
187. Aren't these much better options for a Fast Food Friday night? I think so! I've been cooking with a few different product names as of late and need to update the "Brands I Love" page. I haven't really done that since I "cut out" sugar. I also would like to further explain the way I handle sugar. For example, Hellman's Mayo has sugar listed as the 6th ingredient, so I want to make sure to tell you that on the other page. I'll let you know when I make those updates. I'm also going to remove brands that simply "work" with my diet, and only include truly brands that I love.
188.
189. Have you liked the new Allie's Changing Kitchen Facebook page yet? 192. I have a pretty awesome line-up of songs on. It's my day off and I'm going to enjoy some blogging, pinning, music and reading (maybe a chore or two...we'll see) - all by the fire. Sounds pretty good, right?

 223.

 224. Another week is over and now it's February. How did that ever happen? January used to be the longest and most dreaded month of the year - so I thought. We didn't even do much of anything this last month, hid inside most weekends getting our house set up, watching movies and playing a whole lot of Settlers of Catan.

 225.

 226.

 227.

 228. *Side note: Does anyone play Settlers and have a similar obsession with the game? If so, here's a treat we found on our good 'ol friend, Google, the other day for the foodie-obsessed Catan lovers: Catan Pizza, Catan Cookies and Catan Cupcakes!

I need to get straight to the point because this was A-MAZING. Every bite 'J' took was followed by a satisfied "mmm..." - the key measure of success. As it's Friday and we all love to indulge in some junk food, eat this! Do it. Make it. This pizza truly does not need cheese! Switch up the toppings... do whatever you like, but make sure to try the sauce and the chicken marinade! Also: If you're a blogger, join in on Fast Food Fridays! If you're not a blogger...why not do a guest post? My blog welcomes you.

 255. 3 cloves of garlic, minced

 256.

 257. herbs: Lots! I used a mix of basil, marjoram and the fridge herbs we keep. :)

 292.

 293.

 294.

 295. Optional

 296.

 297. On J's, I added cheese and a bit of leftover bacon we had. I didn't add anything extra to mine and loved it.

 298.

 299.

 300.

 301. Assembly

 302.

 303. 1. Preheat oven at 400.

 304.

 305. 2. Using a pastry brush, brush sauce over each pizza (I didn't use all of the sauce).

 306.

 307. 3. Disperse chicken across each pizza, evenly.

 308.

 309. 4. Add all of the toppings, adding tomatoes on last. Sprinkle all with pepper.

 310.

 311. 5. Place both pizzas in oven for about 6 minutes, maybe a bit longer if your oven doesn't run hot. You want the tortillas to be crispy enough that you can pick it up, but not burnt!

 312.

 313. Note:As this is an oily sauce, it may not be super crispy... but easy enough to eat with a fork and knife.

 314.

 315.

 316.

 317. Print this recipe

 318.

 319.

 322.

 323.

 324.

 325. I've said it already and I'll say it again: Make this. So good.

 326.

 327.

 328.

 329. On The Side: Our side that went along with this pizza was a simple corn (canned) + avocado + tomato salad mixed together with 1tbsp of both lime juice + olive oil. Easy Peasy.

 330.

 331.

 332.

 343.

 344.

 345. Okay. So I'm already writing a post for Friday, January 27th. How in the world did that happen? I really love this whole Fast Food Fridays idea that Jenne over at Mooshu Jenne, but have had the quickest/longest, love/hate kind of week in a very long time. Most of my evenings have been spent in a dimly lit room, eyes partially closed at all times and 8:30pm bedtimes.

 346.

 347.

 348.

 349. It's been one of those weeks.

 350.

 351.

 352.

 353. A week where my cooking, blogging, reading and sanity have been put to the side for a wee bit and will get back on track tomorrow evening (fingers crossed). Work days are spent being a super star (obviously. ha) and evenings are spent recovering from pretending I wasn't walking through my day with a headache. Clearly I should up my Vitamin D and C intake for the time being, eh? I think so.

 354.

 355.

 356.

 357. Anyway. So, I was determined to not miss out on week number 2 of Fast Food Fridays. So, I unfortunately had to be not-so creative again and had to pull out another oldie, but goodie from the earlier part of my blog.

 358.

 359.

 360.

 361. Hope it's not lame to take the easy way out...and to just include the following exactly how it was written quite some time ago. This was super fun to make - try them out! Remove the meat to make it veggies only....yummy either way. A perfect Friday meal. :)

 362. Check out the full original post.
363.
364. For buns, I recommend whatever you want to use. We used Snairs buns that are pretty healthy. Clean Eating recommends the thin hamburger buns (PC brand is dairy free!).
366. Skinny Sloppy Joes
367. Recipe from Clean Eating Magazine, November/December 2010
368.

369. What You Need (what I did):
370. - 1 lb of ground pork
371. - 3 cloves of garlic
372. - 1 med. onion, diced
373. - 2 tsp chili powder
374. - 1/8 tsp cayenne
375. - 1 red pepper, diced
376. - 1 med zucchini, diced
377. - 1 small eggplant, diced
378. - 1 1/2 cups of pasta sauce (NN brand from Super Store or homemade)
379. - 1 tbsp of honey
380. - buns
381.
382. Here's How to Make the Magic Happen:
383. 1. Heat a skillet, add your oil, then add your pork, garlic and onion. Cook until browned. Drain any excess liquid.
384. 2. Add chili and cayenne. Cook for another minute. Remove from pan and set aside.
385. 3. In same pan, add peppers. zucchini and eggplant. Cook for 5 minutes.
386. 4. Add pork mixture back into the pan. Reduce heat to medium and cook for 10 - 12 minutes until vegetables are all tender.
387. 5. Add pasta sauce, honey and 2 tbsp of water. Mix together until the mixture begins to bubble.
388.
389. You're done - throw it on your bun and grab a lot of napkins! I recommend going out and making these. Do it!
390.

 391.

 392.

 393.

 394.

 397.
398. Twitter caught my eye the other day when I saw Mooshu Jenne tweet about #FastFoodFridays. Who doesn't love fastfood on a Friday?
399.

 400.

 401.

 402. I know our Friday treat night was one thing we had to change quickly with my intolerances (Confession: I still indulge in many chips...all safe intolerance-wise, but still junk food nonetheless!). It was all probably for the best. Even if you're only pigging out on grease once a week, it sure feels like it takes a whole week just to get your system is back on track - can't be good in accumulation, can it?

 403.

 404.

 405.

 406. This is by no means judgement. We still eat ramen. Or a bowl of macaroni with cheese (Daiya), things all lacking in nutrients. This is an attempt, though, to join in on promoting some healthier choices and healthier versions of some of our all-time faves. The "healthier relatives" of our old-time faves. The "grown up" versions of classics we've since learned about how they were made. I have been calling these recipes 'pub food' in my recipe index, but thinking I should change it to "Make Home Take Out" or "Dining Out Faves" or "Grownup Junk Food". We'll see.

 407.

 408.

 409.

 410. For now, I'm bringing in an oldie to participate in my first Fast Food Fridays. This was one of my first posts, 'Mas Pescada Taco Por Favor'. I've chosen it because it's super fun, easy and tasty. I also want to remind myself that this recipe exists! I don't think I've thought to make this since that day, and how good would it be with some of the dip recipes I've discovered over the past year? Guacamole and hummus varieties... endless options that would match this recipe perfectly.

 411.

 412.

 413.

 414. Please note: As this was one of my very first posts, the photos are terrible. You'll have to indulge in your other senses for this one. :)
415.

 416.

 417.
418. Fish Tacos
419. This recipe was given to me from my naturopath.
420.

421. Marinade a white fish (I used 3 pieces) for a 1/2 hour in:
422. - 1 tbsp of fish sauce
423. - 1 tbsp of lime juice
424. - 1 tbsp of olive oil
425.
426. While the fish is marinating...create the sauce (to be used with the tacos!)
427. - 1/4 cup of Helmans Mayo
428. - 1 tbsp of lime juice
429. - 2 tbsp of chopped cilantro
430. - 1 clove of garlic
431. - 1/8 tsp of cumin
432. - 1 tbsp of water
433.
434. Prepare the veggies!
435. I used... (but think of the variations!)
436. - 1/2 cup of romaine lettuce cut in strips
437. - 1/4 cup of chopped red onion
438. - 1/4 cup of chopped yellow pepper
439. Toss with olive oil and lime juice
440.
441. Broil your fish in a low pan for 15 minutes.
442.
443. Once fish is finished, cut into small places. Serve with salsa, guacamole, hummus (whatever!) and your vegetable mixture on whatever tortilla wraps your diet will allow you to have. :)
444.

445. Print this recipe
452.

 453.

 454.

 455.

 456. I love when we buy kale. It seems to be the never-ending vegetable purchase (which really also feels like a bad thing sometimes...)!

 457.

 458.

 459.

 460. As I go through a few updates, you may see kale thrown in here and there. In my mind, I can throw a bit of kale, spinach or arugula in anything - it just works! And you get that dark leafy green in your meal.

 461.

 462.

 463.

 464. For this ...Meatless...we'll call it a Monday, (although it may have been Tuesday) I threw together a garlic-y mushroom and kale hash. I see that a lot of people online have created similar recipes, but this one in particular was inspired by the recipe on tastespotting.com. Their photos...with those poached eggs - amazing! My mouth watered as soon as I saw this.

 465.

 466.

 467.

 468. That all being said, I didn't poach any eggs. I also didn't spend much time snapping a photo (as usual). I really do love photography and appreciate the talent that goes behind a great pic but man am I impatient when there is a dish of prepared food in front of me!

 469.

 470.

 471.

 472. What You Need:

 473.

 474.

 475.

 476. Potatoes: I used 3 medium-sized, peeled and diced

 477.

 478. 1/2 of onion: I had red onion

 479.

 480. 2 cloves of garlic, minced

 481.

 482. Kale: Whatever feels right

 483.

 484. Herbs: I used a mix of everything Italian

 485.

 486. Mushrooms: I used about a cup of cut white button mushrooms (or whatever they are actually called!)

 487.

 488.

 489.

 490. What To Do:

 491.

 492.

 493.

 494. Boil some water and throw in the potatoes for 10 minutes.

 495.

 496.

 497.

 498. After that's done, add the potatoes in a pan/skillet with some olive oil. Once they've browned a bit, add everything else. Fry away for about 10 minutes...or so. Really I can go either way with things. I tend to cook too quickly with meat-free meals because I'm too anxious to eat - and I tend to overcook meat-filled meals because I'm too paranoid. I'd say I gave it about 10 minutes, but I didn't time it.

 499.

 500.

 501.

 502. I loved this meal. It was simple. It was better than your regular baked or mashed potato. It would be a great addition to a brunch (especially with the poached eggs...maybe I'll learn how to do that next?!).

 503.

 504.

 505.

 506. *Note: J did have to eat a snack soon after because he wasn't filled enough with food - boys! I, on the other hand, felt this to be very satisfying. :)

 507.

 510.

No Yeast Pizza Dough

 511.

 512.

 513. We are new homeowners and fearful of how much heat is required to keep our house warm. So when the opportunity arises for me to bake a little somethin' in our oven, I'm all over it.

 514.
515. I figured that I was successful with muffins, maybe I'd be successful with another baked good: pizza crust.
516.
517. I went for the most simple recipe I could find: yeast free. Here we go...
518.
519. Pizza Sensation # 1:
520. No Yeast Pizza Crust
521. 2 1/2 cups of flour
522. 2 3/4 tsp of baking powder
523. 1 tsp salt
524. 1 tbsp oil
525. 3/4 cup of water (I ended up using significantly more than this...enough to form a ball with the dough)
526.

527.

 528.

 529. 1. Mix dry ingredients together.
530. 2. Add water and oil. Stir until the dough forms a ball. *Add more water if necessary.
531. 3. Bake for 15 - 25 minutes at 400.
532.
533. My Topping Selection
534. Tomato Sauce - I used No Name Pasta Sauce and added lots of oregano, marjoram and thyme
535. Procuitto
536. Spinach
537. Broccoli
538. Parsley
539. Daiya Cheddar
540.
541. Add all ingredients to crust and bake on 500 for 5 - 7 minutes.
542.
543. Pizza Sensation #2:
544. Pita Pizza
545.

546.

 547.

 548.

The norm in our house now: the half n' half pizza

 549.

 550. After our family house warming on Saturday, we had some ginormous pitas to use! Although I used kind of the same flavourings as above, it was just as tasty! We intended to have leftovers, but in both cases: We ate our supper and lunch all at once.
551.
552. Simple, simple, simple.
553.
554. Slather the pita with your sauce of choice. I used the same as above.
555. Deli turkey meat
556. Big mushrooms
557. Bacon, cut up small
558. Broccoli
559. Red Onion
560. Daiya Cheddar
561.
562.

563. For J: Real cheddar, parmesan and goat cheese. I've finally reached a point where I'm not drooling over his side of the pizza - I'm perfectly content and pleased with mine!
564.

565. Bake the pizza until the pita is golden and the cheese is melted. That was about 10 minutes on 400 for me.
566.

Happy Monday... 572. I've neglected the blog a bit this week as I have a new baby nephew!! In love <3
573.
574. Alright. Here I am. It's Monday - somehow - again. Another weekend has gone by and as per usual, I didn't get around to blogging. I ate Korean food (questionable soy intakes) three days in a row. After living in Korea for 2 years (Jon, 3 years), we crave Korean food often. We have our little grocer near our apartment where we frequent for ramen, hot sauce and kimchi, but the Halifax restaurant scene has - just now - started to finally offer us an array of Korean cuisine options. A weekend of barbecued pork, bibimbap (vegetarian rice), kimchi fried rice, marinaded pork, Korean pancakes = heaven. I'm looking forward to finding some recipes of my own and finally branching out and tackling some cuisine of our own at home - beyond the kimchi soup. I would love to perfect the art of home-healthy-Korean-cooking and could introduce it to you (whoever that may be : ) ).
575.
576. Anyway, I did do some of my own cooking in the past 5 days and here are two of the things I put together: Buffalo Chicken Hash and Throw Together Angel Hair Pasta
577.
578. Buffalo Chicken Hash
579. So I am going to add this one to our "Go-To List" as it was easy, fun, and felt like pub food. Realistically, whether we all like to admit it or not, we all crave a bit of pub-like food. I saw this recipe posted on thewholegang.org and thought immediately of putting this together for Jon. This actually made me super excited to try. It's fun to have brown rice pasta, lentils, kale, and all kinds of other "new" healthy foods, but when getting your significant other to jump on board with you through everything - all of the "news", the "differences" and the "changes" - you really want to be able to show some appreciation by bringing in the "better" versions of some old faithfuls, especially some of their faves. So here it is: Buffalo Chicken Hash. I recommend it for anyone looking to add some fun into their weekday meal - especially for the kids!
580.
581. Ingredients
582. This list is per serving.
583. 1 large potato
584. 1/2 cup cooked chicken
585. 1-2 tsp buffalo wing sauce (We use Frank's Hot Sauce - use as much as you want based on how spicy you like it!)
586. 1 green onion sliced on angle
587. 1 bunch of spinach leaves
588. Course Sea Salt
589. Course cracked pepper
590. Olive Oil
591.
592.
593. What I did:
594. 1. Cut your potatoes in wedges, toss with salt, pepper and oil. Lay on a cookie sheet and bake for 30 minutes at 350 F.
595. 2. While your potatoes are baking, cut your chicken up and cook it in a pan. Set the cooked chicken in a bowl and toss it with hot sauce.
596. 3. Cut your green onions and set aside.
597. 4. Once your potato wedges are cooked, plate them. Add a layer of spinach on top of the potatoes. Then, add your chicken and top it all with your green onions!
598.
599. I ate this just as it is, no added sauce or salt or anything. If you can get all four ingredients in a bite, it's to die for (in my books). I did, however, put some ketchup and more Frank's hot sauce out for Jon - which he enjoyed. The spicier the better in his books!
600.
601. Print this recipe
602.

 603.

 604.

 605.

 606. Throw Together Angel Hair Spaghetti:
607. - Vegetables you have (Me: broccoli, asparagus, onion, mushroom)
608. -Optional Meat (Me: turkey keilbasa chopped small)
609. - Plain pasta sauce of some kind
610. - Diced tomatoes
611. - Spices/herbs: marjoram, garlic salt, any Italian mix herbs, really!
612.
613.
614. - Pour over angel hair pasta and you have a meal in minutes!
615.
616.
617.
618.
619. Last night Jon cooked a WHOLE salmon (that seems frightening to me) and it was delicious. Hopefully I'll get the scoop on that tonight so I can share
620.
621. I hope everyone had a great weekend and is prepared for the week ahead.Any interesting weekend food tales?
624.
625. This recipe was given to me from my naturopath. What is it? Fish Tacos!
626.
627. Marinade a white fish (I used 3 pieces) in 1 tbsp of fish sauce, 1 tbsp of lime juice, 1 tbsp of olive oil for a 1/2 hour.
628.
629. While the fish is marinading...create the sauce to be used later for your tacos:
630. 1/4 cup of Helmans Mayo
631. 1 tbsp of lime juice
632. 2 tbsp of chopped cilantro
633. 1 clove of garlic
634. 1/8 tsp of cumin
635. 1 tbsp of water
636.
637. Prepare the vegetables!
638. I used...
639. 1/2 cup of romaine lettuce (cut into thin strips)
640. 1/4 cup of chopped red onion
641. 1/4 cup of chopped yellow pepper
642. Toss with olive oil and lime juice.
643.
644. Broil your fish in a low pan for 15 minutes.
645.
646. Once fish is finished, cut in small pieces. Serve with salsa, sauce and vegetable mixture on corn tortilla wraps.
647.
648.

651.
652. (more of my "own" creations..)
653. Chicken Fingers
654. 2 boneless chicken breasts, sliced (big enough for dipping!)
655. 1/4 of a lemon
656. pepper, pepper, pepper!
657. garlic
658. vegetable broth
659.
660.
661.
662.
663. 1. Cook chicken in garlic and olive oil. Sprinkle a lot of pepper on both sides of the chicken.
664. 2. Once the chicken has started to cook, add juice from lemon (1/4 of a lemon if it's a big one!) and enough vegetable broth to have the chicken simmering it it.
665. 3. Once done, eat alone or dip in something like Thai Chili Sauce
666.
667. Curried Potato - Fries/Hash browns
668. 1 big potato, cut into very, very small pieces
669. curry powder
670. olive oil
671.
672. In my mind, potatoes always take so long to cook after a long day at work. Since we (J) diced them really small, we were able to microwave them for about 6 minutes or so - maybe more - until we could smell them. We coated them in curry powder before microwaving so the curry could start to cook right into the potatoes. Once done - enough - I threw them in the hot frying pan with a bit of olive oil and harden them up, and we had our adult fries!
673.
674. Broccoli
675. Let's face it - we still need a bit of veg. Once the chicken was cooked, but still simmering, I threw some broccoli in the pan to simmer in the same pot. Delish.

Recipe: Batter-fried Cucumber "Pakoras"

I got home from work on Friday, knowing I wasn't heading out for dinner for another 4 hours. I was hungry. I wanted cheese and crackers. I wanted a poutine. A piece of pizza. Something. Something greasy; something easy.
676.
677. Clearly, none of this could and none of this would happen. After whining about it for awhile to Jon, I tried napping. Although that worked for a little while, the hunger was still there. I felt a bit defeated knowing that I will always have to be on the ball with our groceries. We didn't have a single piece of fruit, cracker, cookie, chip or granola bar that I could have. So to google I went to research some quick snack fixes. Although I am quite disgusted and against "deep frying" stuff in my home, I semi-deep-fried these babies into quite delicious little snacks - and a snack that Jon enjoyed in the middle of the night - cold!
678.
679. The recipe I found called for cauliflower, brocolli, or eggplant. All I had was cucumber....
680.
681. Batter:
682. 1/2 cup all purpose flour
683. 1 tsp curry powder
684. 1/2 tsp salt
685. 1/2 tsp baking powder
686. 1/3 cup water
687. Canola (or other) oil for frying
688.
689.
690. 1. Mix all ingredients in a large bowl. Add more water slowly as you are stirring batter. Everything should be mixed well, but not runny.
691. 2. The recipe said to warm 1/2 inch of oil in a skillet - I warmed a small layer of oil in my frying pan and just made smaller pieces of cucumber.
692. 3. Coat your veg. of choice in the batter and carefully put each piece in the oil.
693. 4. Cook until golden on each side (less than 5 minutes total)
694.
695. I dipped these in President's Choice Memories of Thailand Fiery Chili Pepper Sauce. Although greasy, I was satisfied and very content that I successfully pulled myself out of my cheese-rut!
