3.
4. My friend, Aimee, over at Food Je t'Aimee found this great idea for a Breakfast Club over at Fuss Free Flavours. If you visit Helen's blog, you'll see that there are 17 different breakfast clubs being hosted right now, all with a different theme, but all with the general goal of showcasing an array of healthy and not-so-boring breakfast ideas!
5.
6. Being that it's a new year, and we all take this as an opportunity to re-evaluate a few things, Aimee came up with a great theme for her club: The January Detox. As she says, detox can mean many things to many people. For me, I think ensuring that you are eating whole foods and doing as good of a job as you can to eat "clean", means you're eating detox-ish meals.
7.
8. To join Aimee's club, you can post whatever breakfast food you feel fits that theme for you. Aimee posted two smoothie options. I am following suit and posting a breakfast drink.
9.
10.

 11.

 12.
13.

 14.

 15.
16.
17. Berry Arugula "Gritty Goodness" Smoothie
18. 1 tbsp of ground flax
19. 1 tbsp of unsweetened coconut
20. 1/2 cup of 100% orange juice
21. 1/2 cup of unsweetened Rice Milk (Regular milk for J's)
22. handful of arugula
23. 1 cup of fruit (I did half fresh raspberries, half frozen strawberries)
24. This makes one drink.
25.

26. For a treat: Add in some pure maple syrup
27.
28. This isn't your typical creamy smoothy. It's gritty (and not in a bad way, I promise!). It tastes like healthy in a cup. :P
29.
30. Warning: This is FULL of flavour. Like: It punches you in your mouth. I love it. The arugula has such a peppery taste (which may not be everyone's cup of tea so spinach would be an easier substitute) went extremely well with the tanginess of the orange juice and berries.
31.
32. J says the drink is "grip-py" like a deep tannin wine. We love a bold, thick (whatever words I should be using to describe wine. I don't really know wine speak. I just enjoy a good bottle of wine...often) red wine. On a complete side note: There are many awesome local reds here in Nova Scotia, if anyone needs suggestions!
33.

34. What's so good about it?
35.

36. Calcium from your milk. Arugula has almost everything including Vitamin A and C, folic acid, antioxidants and more calcium. What doesn't flax help fight (cancer, inflammation, immune system...)? The fruit gives you plenty. We all know that. More Vitamin C, potassium....Need I go on?
37.

 38.

 39.

40.
41. Again, If you'd like to join The January Detox Breakfast Club, follow the rules and how-to's over at Food Je t'Aimee or check out the other clubs at Fuss Free Flavours.
42.
43. Enjoy! :)
52.

 53.

 54. J and I spent Christmas morning together and alone - the only other time we've ever done this was our first Christmas together...in the Philippines! That Christmas was obviously a little bit different than this one. I think we slept in. We ate lobster and scallops for our dinner and bought a bottle of wine (from a "corner store") to drink together on the beach. And then we called our parents as they were just waking up....

 55.

 56.

 57.

 58. Yes. Quite different, but still special. The above photo shows our Christmas breakfast and dining experience in front of our beautifully big tree in our living room. J and I had a hard time coming up with what to eat for our morning, because we actually make a point of enjoying a big breakfast/brunch together one day a week - so how to find something that screams 'Christmas Morning'?

 59.

 60.

 61.

 62. I'll be linking you back to Chocolate Covered Katie's blog here, but when I saw her single-serving recipe for Blueberry Pie Pancakes, I drooled. Really, I think I literally drooled. So, I bought the ingredients, mixed it all together and got J to cook them (I'm really too impatient to cook a pancake properly). As you can see: he had fun with it and made one giant one.

 63.

 64.

 65.

 66. To top it off, we had some 100% Blueberry Maple Syrup in our fridge from J's mom. Soooooo amaaazingly good (and filling!).

 67.

 68.

 69.

 70. To drink: Our giant mug of coffee. We couldn't go without that. On top of that, I made some Egg Nog Shakes, as shown on Charissa's blog, Colourful Palate. I made a few slight changes, but it was tasty and refreshing...perfect with the sweetness of the pancakes.

 71.

 72.

 73.

 78. Blueberry Pie Pancakes

 79.

 80. Original Recipe

 81.

 82. What I Did:

 83.

 84.

 85.

 86. 1 cup of blueberries

 87.

 88. 2/3 cup of wholewheat flour

 89.

 90. 4 tbsp of oats

 91.

 92. 1 tsp of cinnamon

 93.

 94. 1 1/4 tsp of baking powder

 95.

 96. 1/4 tsp of salt

 97.

 98. 1 tsp vanilla

 99.

 100. 2/3 cup Rice Dream Vanilla Rice Milk

 101.

 102. 2 tbsp coconut oil

 103.

 104.

 105.

 106. Combine all of the dry ingredients together then add in the wet! Then treat it like any old regular pancake (J's job). :)

 107.
108.

 109.

 110.

 111.

 112.

 113. Egg Nog Shake

 114.

 115. Original Recipe

 116. What I did (as you can basically see on my recipe card above!):
117.
118. In a blender.. (Or in my case, I put this much in each Magic Bullet cup)
119. 1/2 cup of coconut milk
120. 1/2 cup of Rice Dream Vanilla
121. 2 handfuls of ice (I had a bag, not a tray)
122. 1 tbsp of coconut oil
123. 1 tsp nutmeg
124. 1/2 tsp cinnamon
125. 1/2 tsp xantham gum (to thicken)
126. 2 tsp vanilla (I ended up putting in more than this)
127.
128. Blend and enjoy!
129.

 130.

 131. ~~~~~~~~~~~~~~~
132.
133. We ate a traditional delicious turkey dinner for our main meal of the day. My grandmother hosted the meal and my aunt hosted the dessert - so we could visit with both Christmas trees and houses!
134.
135. I was responsible for creating a dessert "I could eat". I was super excited to tackle something, but slightly discouraged after my cupcake fail. I kept on searching for something else I might be able to tackle on Spoonful of Sugar Free and found the perfect thing - a crisp (or a Pick-a-Fruit Crisp as Alex calls it).
136.
137. This was the ideal dessert to take. I was able to prep most of it the day before, but could throw it in the oven while we were all sitting down to eat our dinner. I chose to go with berries, because I love how tart they are.
138.
139.

 140.

 141.
142. Berry Crisp
143. Original Recipe
144. What I did:
145.
146. The day before (or whenever):
147. Chop up 1/3 cups of walnuts.
148. In a bag, mix together the above walnuts with:
149. 1/2 cup of oats
150. 1/4 tsp of cinnamon
151. 1/3 tsp of ginger
152.
153. I poured my bag of frozen berries into the pan I would be using for baking and placed it in the fridge to defrost overnight. You could use fresh fruit, too.
154.
155. When everything is ready:
156. Preheat oven to 375.
157. Add 2 tbsp of margarine to the topping mixture and place on top of the berries.
158.
159. Bake for approximately 35 minutes.
160.
161. Notes:
162. -You could use any kind of fruit at all, as well as any kind of nut. I personally love walnuts and berries.
163. -I would hands down double up the topping the next time I make this - and this has become my favorite healthy, but easy, dessert so I will be making it again soon!
164.
165.

 166.

 167.

 168.

 169.

 170. I think that about sums it up for the extreme Christmas-y posts! We ate A LOT (but who doesn't during the holidays, right?). Not all things we ate were good (I snuck in a lot of goat cheese *shame*), but there is never a better time to indulge.. .. Right? :) This post comes at a perfect time as J and I just dragged our Christmas tree to the curb *tear. We kept it up longer than we should have, but it's so sad to take down. I wish I could have those pretty ornaments up all year around... Oh well. Another new year, which means re-organization! The thing I love to do but complain about nonstop!: )

 171.

 172.

 173.

 174. Any organizational things you plan on tackling? New hobbies? New classes? Big? Small? :)

 211. 2 boneless chicken breasts, sliced (big enough for dipping!)
212. 1/4 of a lemon
213. pepper, pepper, pepper!
214. garlic
215. vegetable broth
216.
217.
218.
219.
220. 1. Cook chicken in garlic and olive oil. Sprinkle a lot of pepper on both sides of the chicken.
221. 2. Once the chicken has started to cook, add juice from lemon (1/4 of a lemon if it's a big one!) and enough vegetable broth to have the chicken simmering it it.
222. 3. Once done, eat alone or dip in something like Thai Chili Sauce
223.
224. Curried Potato - Fries/Hash browns
225. 1 big potato, cut into very, very small pieces
226. curry powder
227. olive oil
228.
229. In my mind, potatoes always take so long to cook after a long day at work. Since we (J) diced them really small, we were able to microwave them for about 6 minutes or so - maybe more - until we could smell them. We coated them in curry powder before microwaving so the curry could start to cook right into the potatoes. Once done - enough - I threw them in the hot frying pan with a bit of olive oil and harden them up, and we had our adult fries!
230.
