39.
The Great North Coffee Shop has been expanding since opening its popular St. John’s store in 2016. In 2020, a second shop in Vancouver Washington opened, in September of 2022 they took over Lovejoy Bakers in Portland’s Pearl District (I’m hearing it is quickly improving,) and now owners Matt Brown and Jonathan Felix-Lund will add the NE Alberta store. Both have extensive experience in coffee: over the last 18 years they have held leadership roles with Clive Coffee, Coava Coffee
40. Roasters, Stumptown Coffee Roasters, Barista Coffee, and Coffeehouse Northwest.

 41.
From the press release,

 42.

“Since 1995, Caffe Vita has been at the forefront of independent coffee roasters in the Pacific Northwest. Caffe Vita expanded its cafe and roasting operations to cultural centers like Bushwick and the Lower East Side in New York, as well as Portland, with its latest expansion happening in the Encanto neighborhood in Phoenix.

 43.
Caffe Vita remains focused on maintaining strong relationships within the communities & neighborhoods they operate in. The Great North will continue Caffe Vita’s legacy of community-focused coffee experiences, and Portland Caffe Vita employees will have the opportunity to join The Great North team. Caffe Vita is grateful for the memories it has shared with the café-goers of Alberta Street since the company’s move into the Concordia Coffeehouse over 12 years ago. Caffe Vita will continue its wholesale operations in the Greater Portland area, as well as its cafe and roasting operations in Seattle, New York, and Phoenix, with the mission of creating connections through coffee.

 44.
“We are super grateful for our Portland Vita team and the community our cafe served for 12 years,” said Deming Maclise, CEO of Caffe Vita. “We didn’t plan to end our cafe operation there, but when we spoke to The Great North about a potential wholesale partnership and found out about their plans for continuing to expand, we realized that we could potentially create a good situation for both companies.
45. As we focus our energies and resources on our Seattle operations and continue to grow our wholesale volume while The Great North brings their local resources and focus to the Portland coffee community, we feel like there could be even better opportunities created by The Great North. Closing any operation is never an easy thing to do, but having a strong local coffee operator take over and provide employment opportunities for our employees is one of the best situations we could have hoped for.”

 68.
Dear Friends,

 69.
In an interview with Karen Brooks at Portland Monthly Magazine today, I shared the news that our festival would not be returning—not in 2023 and not ever again.

 70.
Such a message would have been unthinkable just a couple of years ago, but a lot has changed since early 2020—both for our organization and for the communities with which we are aligned.

 71.
You can read more in Karen’s article here.

 72.
Looking back, I’m grateful for the eight years of Feast from 2012 to 2019, and especially grateful to the core team that made Feast a reality. Above all: three people. Thank you to my brilliant and creative original co-conspirators Carrie Welch and Jannie Huang: Portland will forever be grateful to both of you. And thank you to our tireless director Emily Crowley who led the team with muscle and heart for more than a decade. Even as the last two years sent the four of us in new directions, our time together was truly magical. Without this core group of people, there would have been no Feast Portland.

 73.
To everyone else on Team Feast, our core collaborators, our friends in the chef and restaurant community, our partners and sponsors, vendors and guests, thank you for believing and investing in our vision.

 74.
In 2012, we set out to create a culinary festival that was worthy of the city we loved, valuable to the industry we represented, and relevant in the world of food. I’m proud to say that Feast succeeded on all counts, and looking back, probably ended when it needed to.

 75.
Looking forward, we may have some surprises to share. And for those of you wondering, we have had fun with our new Feast newsletter, and we plan to keep that going. (So don’t unsubscribe yet!)

 76.
Thanks to all who have feasted with us.

 77.
We love you.

 127.
I’ve always liked Naomi. Her restaurants have been true to herself. She has been at the forefront of the Save Our Restaurants initiative led by herself and chefs Tom Colicchio, and Kwame Onwuachi, campaigning with Congress for loan extensions and business insurance interruption coverage, which kept many afloat during the pandemic. She’s a class act, and I hope she will return to put her stamp on our restaurant scene once again.

 129.

There’s no easy way to say this. Trying to encompass 15 years of food, hospitality, sweat, laughter, community, tears, exchanges of ideas, critiques, awards, mistakes, and flashes of brilliance into a several paragraph synopsis feels a daunting task. I stepped into this space in 2007, raw from recent breakups both personally and in business. I was a young mother who couldn’t see herself taking a desk job, wanting to spend my days and nights cooking. And that I did. We received ,many awards and accolades, held an untold number of triumphs and defeats. We grew from a 4 person staff at opening, to a staff of 15 by the time Beast was finally laid to rest by the pandemic, 13 years later.

 130.
Enter Ripe Cooperative, our “pandemic pivot” housed in the familiar Beast space. She’s been nimble, beginning as an intricate meal-box offering (resplendent with videos and hand-drawn illustrations), then shifting to a marketplace (at first online only, and then also in person) and then most recently into an all-day cafe. The support throughout each step has been nothing short of incredible. I’ve had more joy connecting directly with people on the patio, enjoying their handmade pasta and affogatos, soaking in the light in our beautiful garden-scape, than I ever could have imagined. Creating something more accessible—simple food and drink the way we like to enjoy it ourselves—has nourished my soul during some of the most trying times imaginable in our industry.

 133.
The current landscape is making quality foodservice nearly impossible. The past two years have seen the costs of all ingredients soar (many upwards of 2 or 3 times what they were just two years ago), and they aren’t slowing down. At the same time, we’ve been paying staff an unprecedented amount in wages, tips and benefits. Property owners are seeing their own costs increase, and are handing down ever higher costs per square foot. I want to live in a world of small beautiful things, but what I see out there is a big race to the middle, and Ripe is simply not cut out to make the necessary compromises and still be what we want it to be. Like Beast, Ripe is not a restaurant that can be refined to mimic much larger corporations with cost cutting, bottom line profits, and scalability at the forefront of the conversation. When places are able to survive that are truly doing it right, it’s often at some other cost you might not see, like lots of investors and debt, or an owner quietly working her 80 hour weeks with no life outside the business.

 134.
It is with a heavy heart, that we announce- we’ve decided it’s time to move on. We aren’t quite sure what’s next, but the equation here will not solve. It has been a GORGEOUS experiment at 5425 NE 30th. We built a team of incredible talent and passion. We came up with some products you’ve surely not seen the last of (I’m looking at you frozen custard), and we helped our community and friends have a place to gather around shared values. Instead of just moving to Europe, where cafe culture is alive and well, and people gather around small tables at all hours with friends and family, we tried bringing that spirit here instead. I think we more than succeeded, even as we retreat. We’ll see you further on down the road, in some shape or form. We cannot thank you enough for your support these last couple of years, this last decade and a half.

 135.
This weekend will be our final bow here in the space we’ve lived in for exactly 15 years.
136. Until we meet again, come say goodbye to all that we’ve done here, and raise a glass to the staff and your fellow Portland food community.
137. Hours of operation this week are: Thursday, Friday, and Saturday 3pm to 10pm.

 155.

Sarah Pliner, one of Portland’s best chefs, and one of the founders of Aviary Restaurant was killed in a bicycle accident yesterday.

 156.
The news this morning via local food writer Michael Zusman’s Facebook, was like a gut punch.

 157.
I met Sarah several times over the years, but can’t claim to have had deep insights into her personality. But over the years I’ve heard many good things from people who loved her. However, I can speak to her food. In my opinion, she was one of the finest chefs ever to grace the Portland food scene. When she and her fellow chefs Jasper Shen – now at XLB, and Kat Whitehead of Salt & Straw opened Aviary, it shot to the top of every Portland food critic’s list of best restaurants. When it closed in 2020, those who loved the restaurant were stunned by the loss. I still wax rhapsodically about dishes I’ve had at Aviary. I think the best tribute I can give her is to talk about some of the meals I’ve had at the restaurant, so I’ll quote a small part of my review to give you an idea of the cooking she was capable of.

 158.

The food they serve is executed with a rare degree of excellence. It is not merely to be consumed; it’s meant to be thought about, tasted with eyes closed, lingered over, and discussed with a good friend. This is modern dining, and the perfect way to do fusion; each cuisine enhancing the other without getting in the way. Dishes show the juxtaposition between the way Aviary can move between simplicity, and complexity bordering on molecular gastronomy without resorting to gimmickry.

 159.
<img decoding="async" data-attachment-id="6936" data-permalink="https://portlandfoodanddrink.com/review-aviary/aviary-barley-salad/" data-orig-file="https://portlandfoodanddrink.com/wp-content/uploads/2011/05/aviary-barley-salad.jpg" data-orig-size="600,397" data-comments-opened="1" data-image-meta="{"aperture":"0","credit":"","camera":"","caption":"","created_timestamp":"0","copyright":"","focal_length":"0","iso":"0","shutter_speed":"0","title":"","orientation":"0"}" data-image-title="Avairy’s Portland Barley Salad" data-image-description="<p>Aviary Warm Snap Pea and Barley Salad wiht hon shimejis, citrus, lily bulb</p>

 162.
A salad of warm snap peas and barley is a gastronomic puzzle, a clever brain tease on how to eat the dish. A large crunchy barley disk astride a brilliant salad hides the surprises beneath. Tender snap peas and un-hulled cooked barley line the plate with delicate hon shimejis Asian mushrooms and lily bulbs. Marble-sized spheres, one containing orange juice and rose-water, the other yogurt, act as little yolks of flavor. Pop them with a fork to change the texture and taste, mixing as you go. Switch to another dish and back a few minutes later, and you’ll find the flavors have bloomed. I was transported to a rose garden.

 166.
The brioche-crusted halibut stands out from anything similar in town. Three light brown and white stuffed spheres of halibut with just enough fat to feel sushi-like, stand alluringly in a vibrant green pool of butter-poached cucumber and dark green shiso. Each is topped with a tiny orange bump of sea urchin and a dot of paste made from umeboshi fruit as an accent. Smooth yet pungent greens with wasabi, toasty sesame oil and a hailstorm of sesame seeds sit to the side. If you take a bite from the edge of the halibut it tastes like fish sticks, but swirl one in the sauce and pop it whole into your mouth and a parade of flavors will be revealed, a synergy of rich fish, soft popping sea urchin, cooling cucumber and the complex umami of umeboshi and shiso.

 167.
A plate of seared octopus salad looks like a kitchen mistake… but the salad is a masterpiece, showcasing not only the technique but the art of construct and balance.

 168.
I loved Sarah Pliner for her cooking, pushing Portland food in a different direction, and her commitment to a quality far beyond the Portland norm. I was so looking forward to her next restaurant. My condolences to her friends, fellow chefs, and family.

 171.

My good friend, Sarah Pliner, was killed riding her bike yesterday. She was a wonderful person first as well as a great chef. My heart goes out to her family and other friends. She was an introvert and never craved the limelight as is the fashion in the industry these days. Make no mistake, however, her food at Aviary was peerless in its creativity and execution. Recently, she had been cooking at Bluto’s and the food there was predictably excellent. She was detail-oriented and it showed in every plate.

 172.
The sadness is deep over her untimely loss. She had a lot more life to live…and meals to cook. She was looking forward to opening a tiny new restaurant where she could showcase her skills for small audiences. I’m sure it would have been great.

 173.
This is a tough time for the restaurant industry and Sarah’s loss makes it that much harder. I will miss her immensely. May her memory be a blessing.

 192.

FILLS and Lac St. Jack are closing on November 23rd and October 29th respectively.

 193.
I’m not particularly surprised to hear about these closures. I always thought the location was odd and the parking could be a pain, but it’s still sad to see them go, as I enjoyed both. This makes me wonder about the fate of the other restaurants, Grassa, Lardo, and Oven and Shaker.

 194.
Here is the announcement with a few excerpts from their websites –

 195.

Au revoir Lake Oswego.
196. Lac St. Jack and FILLS are closing the doors to their Mercato Grove restaurants. Both businesses are proud of the work they did to bring a fresh offering to Lake Oswego, and build connections in the community. Each had success in many forms: delicious food, fun events, good branding, and community outreach. The simple reality is that neither could get the traffic and sales needed to make it work financially at Mercato Grove. The teams at each restaurant are grateful for regulars, friends and neighbors they’ve met along the way and hope to see you before they close the doors for good.

 197.
Lac St. Jack last day is Saturday, October 29 –
198. Sadly, Lac St Jack will be closing our doors for the last time at the end of October. Our final service in Mercato Grove will be Saturday, October 29th. We will be open Tuesday – Saturday for the duration of the month.

 199.
We’ve built some great relationships in the community, and to those friends we’ve made along the way – we’re sorry to say goodbye. Please come see us in Portland at the original St Jack and La Moule.

 200.
Above all, we are incredibly proud of the team that built this entity from the ground up. You put your heart and effort into making this place special, and you’ll always be a part of the St Jack family.

 201.
Quite simply, we just never acquired the volume we needed to sustain this business. As this is a difficult time for our staff, we humbly request that you refrain from asking them about why we’re closing. Rather, we hope you wish them luck in the next leg of their journey.

 202.
We’re excited to have the opportunity to say adieu over the next few weeks and hope you come in for a few laughs, some libations, and to celebrate our abbreviated – but memorable – time in Lake (Lac) Oswego.

 203.
Visit the Lac St. Jack website here.

 204.

 205.
FILLS last day is Wednesday, November 23 –
206. Dear Friends, FILLS is closing the doors to the Mercato Grove shop. Our last day open will be Wednesday, November 23.

 207.
We’re so proud of our berliners, our customer service, and the community we’ve built. Because of this, we have no regrets! We gave it our all in many forms: events, marketing, branding, product development, fundraisers, donations, volunteerism, and beyond.

 208.
The simple reality is that we could not get the traffic we needed to make it work financially.

 209.
This decision is hard, and this is an emotional time for our staff. Here’s our request: instead of asking the staff why we’re closing, lift them up by sharing a memory, or make a new one before we go!

 210.
In the coming weeks, FILLS is participating in events, fundraisers, and benefit days. Keep an eye on our instagram for special events (like @snackfest and @yeseteryearpumpkinsandtrees popups) so you can GET YOUR FILLS!

Go support your local faves, tell them you love and appreciate them. We’ll see ya out in the world. We make this decision with full hearts and exhausted spirits. The last few years have been very hard. Hissyfit was our hail mary, a chance to intentionally do everything our ideal way and see if it worked. Then it all fell apart when, during the early days of the pandemic, she started an Instagram feed reposting claims by anonymous restaurant employees calling out local chefs and restaurant owners for perceived abuse, much of it never substantiated. After it started to blow up in her face, she distanced herself from it, but a lot of damage was done both to restaurants that couldn’t deal with any more bad news and from people in the industry who thought their employers were being unjustly accused. I’m not saying none of the online posts were true, but in many folks’ opinions, a large amount of the accusations didn’t pass the sniff test. I’ve been doing this website since 2004, and I’ve never had more negative gossip and emails about any other person in the industry… and I’ve seen lots of scandals over the years. At one point Maya’s own restaurants were accused of having the same problems she was reposting about other restaurants. I could go on and on, but the details are easy to find online if you are interested.

 236.
In an attempt to retool, a month ago Lovelace closed Yonder on June 8th and opened a new restaurant, Hissyfit in the same location. A quick look at social media shows that it hasn’t been a smashing success – there are zero reviews on Yelp, and the restaurant had to close multiple times due to heatwaves, and some health issues. It didn’t feel like there was a strong commitment to the new restaurant.

 255.

 256.
Find Canard’s famed steam burgers, exuberant cooking, wines, and more at the newest outpost from the Le Pigeon team

 257.
PORTLAND, Ore. (July 6, 2022) – Beginning July 10th, two-time James Beard winning Chef Gabriel Rucker, Co-owner Andy Fortgang, and Partner Taylor Daugherty will bring Canard’s famed Steam Burgers, wines, and good times to Oregon City. Canard’s new Oregon City outpost will serve all the greatest hits from the Burnside flagship, including Steam Burgers, Duck Stacks, Soft-Serve, and more. The Oregon City location will also feature exclusive dishes created just for the new location. Originally opened in 2018 to much fanfare, Canard went on to receive The Oregonian’s Best Restaurant, Portland Monthly’s Restaurant of the Year, as well as national nods for Best New Restaurant in Eater National and Thrillist. The new Canard hits close to home – literally – opening close to Rucker’s home in Milwaukie. The Canard team spotted the corner location, once home to Grano Bakery, noting its perfect potential for a full service restaurant. The space features an expansive glass corner storefront which naturally illuminates the room. Canard Oregon City will be double the size of the Burnside location, with an expansive outdoor patio.

 258.
Boasting playful French-meets-Americana riffs, the menu at Canard will be just as wildly creative as the original with a casual and family-friendly approach. The culinary team is led by Rucker and Chef de Cuisine Jacob Boliba Soule, a Little Bird Bistro alum. They’ve crafted a menu that serves up the building blocks to an incredible meal and showcases their collaborative and playful no rules style with dishes like Steam Burgers, Wagyu Salisbury Steak, Smoked Duck Taquitos, and Dole Whip Sundaes. Canard will initially be open nightly from 4 to 9 p.m. The restaurant will open for lunch later in summer.

 263.
Nominated for a James Beard Award for Outstanding Wine Program in 2020, Canard’s wine list is curated by Co-owner Andy Fortgang and Le Pigeon Restaurant Group Wine Director Benjamin Roan. The wine program at Canard Oregon City will be thoughtful, creative and fun, heavy on wines by the glass, with a large bottle list. Just as the food menu is conducive to both snacking and dining, the wine list will be, too. Canard will offer 18 wines by the glass, and nearly 100 bottles to choose from. The cocktail program will be led by Portland bartending vet Nick Ramsdell.

 264.
Canard Oregon City is located at 1500 Washington Street, Oregon City OR 97045. Beginning in July, Canard will be open nightly from 4 to 9 p.m. Lunch service will follow soon after opening. Canard will be open for mostly walk-ins with limited reservations. Though the date didn’t go anywhere, I’ll never forget the space or the desserts. Since the original spot closed, I’ve enjoyed going by Pix on East Burnside St, after dinner to indulge in pastry and one of the best wine lists in the Northwest, which has been named one of the “World’s Best Wine Lists” by The World of Fine Wine” for the last eight years, “One of the Best Sherry Bars in the Nation” by Wine Enthusiast, and in 2021, an “Award of Excellence” by Wine Spectator.

 295.
If you know me, this is no surprise. I have been planning on retiring from the nonstop, unpredictable and yet also rewarding restaurant industry 10 years from the date that we opened our doors to the E. Burnside location. If you did not know this, now you know!

 296.
<img decoding="async" data-attachment-id="25130" data-permalink="https://portlandfoodanddrink.com/chardon-photo-finished-and-open/" data-orig-file="https://portlandfoodanddrink.com/wp-content/uploads/2016/01/Chardon-Photo-finished-and-open.jpg" data-orig-size="480,480" data-comments-opened="1" data-image-meta="{"aperture":"0","credit":"","camera":"","caption":"","created_timestamp":"0","copyright":"","focal_length":"0","iso":"0","shutter_speed":"0","title":"","orientation":"0"}" data-image-title="Chardon-Photo-finished-and-open at Pix" data-image-description="<p>Pix Patisserie Chardon’s</p>

Later that year my business partners, Visa, MasterCard and Discover, opened the quirky Division Street location, with monkey’s hanging from the HVAC, beer floats on the menu and just about a dozen macarons in the pastry case (because no one know what they were then.) The last 21 years have been a journey in which I have dedicated myself to 110% at all times – reinvesting, recreating and reimagining what Pix has now become today. It’s been real. It’s been fun. But maybe 21 years is enough? J Some of my favorite memories are and will be the events and parties we’ve held, from the N. Williams’s Bastille block parties, the E. Burnside Flamenco Friday’s and a bit of Dim Sum Yum Yum on Division Street. To create something and see the community come out and celebrate together has always brought me much joy.

 298.
What’s next? First and foremost, the Pix-O-Matics are here to stay! You can still get your Pix fix 24 hours a day. Born out of the pandemic, these vending machines have proven to be overwhelmingly popular. My talented kitchen team will be on-site crafting desserts and stocking daily. And you will still be able to special order larger cakes for prearranged pick ups.

 299.
There is still a full calendar of summer events running now on our website, including movies such as Amélie and The Princess Bride, plus the super energetic and popular Flamenco Fridays! While my official retirement date will be August 22, we will have one last movie and flamenco performance later that week.

 300.
Plus, the patio is open for drinks Friday – Sunday noon to 9PM. Stop by for a glass or a bottle from the world’s best selection of champagne and sherry, a list which I personally curated. Yes, it was awarded “world’s best” and IT IS IN PORTLAND. If you did not know this yet, now is the time to take notice, because I can’t legally sell wine in a vending machine. You’ve got 51 days.

 301.
After I take some time to travel the world I have missed so much during the pandemic, I will be back next year with a cooking school focused on French pastry for both single day recreational classes and series classes for those interested in pursuing French pastry as a professional career. And there will be the occasional sherry and champagne class, as there should!

 302.
Merci Portland. It’s been a great adventure.

 328.
Owner Maya Lovelace made the announcement via newsletter on June 3rd.

 329.
She plans to reopen in the same space with the name Hissyfit. Here is the announcement –

 330.

The last time we wrote you, we were celebrating our three year Yonder-versary. The past few years have been a roller coaster of tremendous highs and staggering lows, from opening our first brick and mortar restaurant to pivoting time and time again to make our little business run during a global pandemic. Now, we’re writing a new chapter with a brand spankin’ new concept and menu under the name Hissyfit!

 331.
Hissy fit” is a classic southern-ism for a tantrum, specifically used in regards to the sass and emotional outbursts of women. We’re adopting the name for its linguistic ferocity, its cultural depth, and its evocation of the wild and untamed feminine. Hissyfit will be decked out in funky shades of pink and deep green, gilded with gorgeous plants and lush botanical wallpaper, and gloriously cozy in its aesthetic. Rich, earthy stoneware and Dundee red clay platters will share the table with matte gold flatware, soft burlap-inspired napkins, and vintage glassware…

 332.
Our dining room manager Eric Pavey, formerly of Little Bird, Nostrana, and Gruner, brings grace and a little fun to the party with funky wine picks and excellent service. Chef de Cuisine Kevin Jones, formerly of Xico, Sitka & Spruce and Girin (Seattle), lends years of experience with many rich cuisines and a love for nostalgic American cooking. Chef/owner Maya Lovelace will continue to weave Southern flavors and stories into the daily menus, but with less adherence to tradition and a voracious desire to make food that is always fun, incredibly delicious, and ever-changing.

 333.
Lovelace says they plan to open Hissyfit restaurant on July 6th. If you have an unused Yonder gift card, they will accept them at the new restaurant. No sign of her other restaurant Mae which closed during the pandemic returning.
