2.
3. You could use any type of dried dates - I had Tunisian Deglet Noor, so I used those, but you can use any plump pitted date. It's worth buying pitted dates because I don't even know how hard it is to pit dates, but it's probably hard - plus there are already slits in the dates that make them easy to fill with the cream cheese. This recipe makes more filling than you probably need, but that's because it makes more sense to use a whole brick of cream cheese than to shove a half of brick back in the fridge and forget about it until it molds. I just used the extra spiced cream cheese on GF bagels.
4.

5. Cinnamon Cream Cheese Stuffed Dates
6.
7.

 8.
Dates - however many you need...I used about 20

 9.
1 brick of cream cheese, I used /3 less fat kind

 10.
cinnamon, to taste

 11.
honey, to taste

 12.
vanilla or vanilla sugar

 13.

 14. Set the cream cheese out to soften while you prepare the dates. I initially started using a paring knife to slit the dates, but then I realized that they already have a slit from being pitted, so I just started finding the slit and unrolling them from there. After unrolling all of the dates, stir a couple of teaspoons of cinnamon and honey into the cream cheese by hand or mixer. Add more to taste. If using vanilla, stir a little of that in - maybe 1/4 teaspoon.
15.
16. Once the cream cheese mixture is to your liking, spoon it into a ziploc bag or frosting bag. If using ziploc, push the cream cheese to one corner and squeeze out the extra air. Snip off the tip of the ziploc and fill the dates with the cream cheese mixture. It's that simple! I sprinkled the tops with vanilla sugar so they wouldn't stick to the wax paper between the layers in the container. Obviously you can use regular sugar too. To make your own vanilla sugar, slit a vanilla pod lengthwise and stick it in a jar of sugar for a few weeks or longer.
17.
18. Most of my coworkers have never had dates, or even heard of them, but they really liked these.
20.
21. Buffalo Chicken Dip
22.
23. 1 8 oz brick of cream cheese - I used the 1/3 less fat version
24. 1/2 cup blue cheese dressing - I used reduced fat Kraft
25. 1/3 to 1/2 cup Franks Red Hot Buffalo Wing Sauce, or to taste
26. 1 1/2 cups preferred shredded cheese, divided (cheddar, monterey jack, whatever)
27. 2 cups cooked, cubed (or shredded) chicken breast (can even used canned if in a pinch)
28. Bleu cheese, if desired (check for gluten- some brands ARE gf)
29. additional seasoning, if desired - I like garlic, red pepper flakes, and lots of pepper
30.
31. I almost always make this in a small crockpot* and to be honest, I don't
 32. really measure anything. I just dump everything in together (except
 33. some reserved cheese) and turn on the crock. After things start to get
 34. melty, I stir it up to mix everything. Grab a chip or a clean spoon and
 35. taste it - you may want to add more buffalo sauce or dressing. Once
 36. it's all melted and mix and you're ready to serve, top it off with the
 37. extra cheese. If you're adding bleu cheese, you can either stir it in
 38. when mixing, or add it to the top before serving.
39. Serve with tortilla chips and celery and/or carrots. Even people who don't think they really like bleu cheese like this.
40.
41. You can also make this in a baking dish. Just mix up everything except the shredded cheese, spread in a pan, sprinkle cheese on top, and bake until heated through (30 minutes at 350 degrees)

Praline Crowned Brie

 43.
 44.

 45. This is one of my favorite appetizers to take to a party or holiday. It
 46. goes great with wine. Trader Joe's usually has good prices on brie.
 47. Sometimes I just buy the wedge and use that instead of a round of brie -
 48. it doesn't look as fancy though. While the white rind is edible, it
 49. makes it harder to scoop, so I just carefully scrape most of the rind
 50. off of the top with a knife. If you leave the rind intact on the sides, it will hold the shape better (this only works with a round of brie). If you have a big party to go to, Costco often sells a big round of brie for a really good price (like $10?). It's never bad to have leftover brie. Again, no pic on this one...I'll post one next time I make it.
53. Praline-Crowned Brie
54.
55. 1 15-ounce round Brie cheese (I usually buy a wedge from Trader Joe's)
56. 1/2 cup chopped pecans
57. 1/4 cup packed brown sugar
58. 1 tablespoon pure maple syrup
59.
60. Place Brie on a pie plate, scrape white rind off top of round or wedge
 61. if desired. Cover with nuts. Pat brown sugar over nuts. Drizzle with
 62. maple syrup. Bake in a 350 degree F oven for 20 to 25 minutes or till
 63. sugar is lightly golden and Brie is warm, but not runny. If desired,
 64. garnish with some fresh strawberries. Serve the warm Brie immediately
 65. with GF crackers or GF bread slices. Makes 10 to 12
 66. servings.

Kentucky Bourbon Bacon Chex Mix

I hate this Superbowl. I'm a bit of a football junkie and I have pretty strong feelings about certain things. Like..how I hate the Giants. Mostly, Eli Manning. I think he is a spoiled, entitled ass who never takes blame for his mistakes, but has no trouble taking credit for success (like when he threw a terrible pass, but his receiver caught it one handed AGAINST HIS HELMET and won the Superbowl - and Eli was MVP). My main reason? "However, Manning stated publicly that he would refuse to play for the Chargers if drafted by them." Um...you shouldn't get that choice. You are NOT your brother.
67. As for the Patriots...not a huge fan of the team itself, but I definitely have some respect. The Steelers mostly can't beat them (especially with the "clock error" in 2005 that gave the Pats and extra 50-something seconds to score and win). But considering the match up, I'll be rooting for you, Dead Eyes (that's Tom Brady)....
68.
69. Need a Superbowl snack? I made an awesome Chex Mix last weekend - and I converted it to a gluten-free recipe. The original recipe for Kentucky Bourbon Bacon Chex Mix can be found here, but my gluten-free option is better, because you can use any add-ins that you already have in your pantry and it has chocolate).
96.

 97. After work on Friday night, I had a bad headache for a couple of hours, so we didn't make any plans. I also didn't have any thoughts for dinner (we usually don't eat leftovers on Friday nights). The weather was supposed to get bad, and by the time my headache was fading, we were starting to get some freezing rain. We talked about going to Jury Room, since it's only about 3 miles away and wouldn't be very crowded; we talked about ordering in, but nothing sounded great and most places would probably take forever because of the weather and because everyone was probably ordering in. We didn't have any secret pepperoni or other great toppings, and we had plenty of pizza last week, so grilled pizza didn't sound great. So we did what we did on another similar night a year ago...Appetizer Night!
98.
99.

 100.

 101.

Appetizer Night #2

 102.

 103. Appetizer Night consists of whatever you want it to and whatever is easy enough. I knew I had a few blocks of cream cheese in the fridge and wanted to use one of them, so I looked online for a baked dip recipe to use as a guide, and found this Hot and Spicy Corn Dip to use as a guide. The only changes I made were to use salsa instead of tomatoes, chipotle peppers instead of jalapenos, and added sliced green onions and sundried tomatoes. In the end, I wish i would have added more spices because it could have been spicier. We also had some frozen Southwestern Style Chicken Trumpets that I got free with a coupon. They weren't GF, so only Lo was going to eat those. We also had waffle fries and Blue Jacket Gretna Grilling Cheese (it didn't "grill up" quite right in the cast iron pan, but whatever. So this was not a well balanced or healthy meal, but we didn't feel like trying harder.
104.
105. Our first Appetizer Night consisted of mini pizzas on Sandwich Thins (when I could eat gluten). His looks to be of a standard pizza type and mine appears to be red cabbage and goat cheese with balsamic vinegar. We also had kale chips, homemade fries, cheese and crackers, and something that we can't identify in the picture (top right), but it appears we would have been dipping it in BBQ sauce (top left).
106.

 107.

 108.

Appetizer Night #1

 109.

 110. Actually - I just looked on Facebook where I posted the original Appetizer Night picture to see if I said what that other item was (I didn't), but I realized that our first Appetizer Night was January 22, 2011 - so it was the same weekend a year ago that we did it last time.
