4.
5. The salmon was just cooked very simply in the cast iron pan. I seasoned the salmon with salt and pepper and heated coconut oil in the pan until it was hot. I placed the salmon in the skillet skin side up and cooked for 5-7 minutes until it was done almost halfway through and released easily from the pan. If you try to flip fish and it is sticking to the skillet, it probably isn't ready to be flipped. Once flipped I kept cooking until it was just barely still pink in the middle and removed it from the pan. I topped it with the cilantro pesto right before serving. As far as the asparagus goes, just spray it with some oil and cook it on the grill - salt and pepper is all you need!
6.
7. I looked around for a cilantro pesto a few months ago when I had a bunch of cilantro from a produce delivery that I didn't want to go to waste. I didn't find a perfect recipe, so I just combined several.
8.
9. Cilantro Pesto
10.
11. 2 cups cilantro leaves, long stems removed
12. 1 large clove of garlic (2 if you hate vampires)
13. 1/4 cup chopped red onion (or less)
14. 1/3 cup pine nuts (can use other nuts instead; almonds, walnuts, pecans)
15. 1/4 cup olive oil
16. salt and pepper
17. 1/4 cup fresh parmesean blend or other hard cheese
18. favorite seasoning (I likely used some crushed red pepper, but don't remember exactly)
19.
20. Chop nuts in food processor. Add cilantro, garlic, and onion and continue to process. Slowly add oil until you get your preferred texture. Add seasoning and cheese and process lightly or stir to combine. Freeze leftover pesto so you can use it last minute for a future meal like I did!
21.

 23.

Salmon with Cilantro Pesto

 24.

 25.
26. Lentil Salad
27.
28. 1 cup dried lentils
29. chopped or sliced onions
30. shredded carrots
31. balsamic vinegar
32. gorgonzola or other tasty cheese
33. favorite seasonings
34. balsamic dressing, if desired
35.
36. Add lentils to saucepan and cover with 2-3 inches of water. Bring to a boil, reduce heat, and simmer for 15-20 minutes until cooked, but not mushy. If there is extra water in the pan once the lentils are done, strain it out and put lentils back in pan or in a serving dish.
37.
38.

 39.

 40. Meanwhile, spray skillet with nonstick spray or oil and add onions when the pan is hot. Cook onions until they are caramelized, about 10-15 minutes, adding a little water here and there when the skillet starts to get dry. You can also add a pinch of sugar if you prefer your onions slightly sweet. Once onions are almost done, pour a healthy glug of balsamic vinegar in the pan so the onions can soak it up. I added the shredded carrots at this time so they would be slightly cooked, but still have a nice crunch for contrast. Once the onions and carrots are cooked to your preference, add them to the cooked lentils. Add another splash of balsamic vinegar - or add some balsamic dressing if you prefer - and sprinkle with cheese.
41.
42. These lentils are good whether they are hot, cold, or room temperature. You can customize these so much and add whatever spices or veggies that you have - I was just trying to keep it quick and simple. Double it if you want lots of leftovers!
43.
44. This was a really simple meal that could mostly be made ahead of time - or pulled together in about 25 minutes.

Tuna and Veggie Mac and Cheese

 46.

Gf Mac & Cheese with Tuna,
47. Cauliflower & Broccoli

 48.

 49. I know I sometimes give the impression that I cook everything from scratch and look down upon packaged food, but that isn't quite true. There are certain convenience foods that I like to keep around for the times that I don't have time or desire to cook, and macaroni and cheese is one of those items. But I won't just make a package of mac and cheese and call it dinner, because it is so easy to health-ify. I almost always add canned tuna to mac and cheese, along with some sort of veggie (frozen is fine), and additional spice. Adding the tuna adds healthy protein, and the veggies give it more bulk so we don't need to eat as much pasta at a time - plus veggies are hella good for you. I also add extra spice because, well, I add extra spice to everything. This time around I made 2 different pans of mac and cheese - one regular Trader Joe's brand and one gluten free Annie's - because I was really hungry and it sounded good to have leftovers. We had a head of cauliflower to use up, a small head of broccoli, and some green onions. Lo didn't want as much cauliflower in his, so his had a larger amount of broccoli than mine. His was also regular cheddar, whereas mine was white cheddar.
50.
51. Basically, just prepare the mac and cheese according to directions, but when you are boiling the pasta, you will boil the veggies in the pan too (you may need to add some extra water). If you are using already cooked or thawed veggies, just add them in the two minute of cooking to noodles to heat them through. Drain the pasta/veggies, add back to pan, and follow the instructions for the cheese sauce. You'll want to add the drained tuna at this time, along with spices - I added hefty squirts of sriracha sauce to ours.
52.
53. It really makes no sense to me why anyone would make mac and cheese without adding vegetables. Even if you don't like vegetables that much: vegetables = ehh.., but vegetables + cheese sauce = tasty. Don't like tuna? Leave it out or swap in some other meat, like ground beef or turkey, or chicken.
54.
