9.

 10.
1 can of red enchilada sauce (or see homemade recipe below)

 11.
12 ounces frozen whole kernel corn, thawed or microwaved until just cooked

 12.
16 ounces refried beans

 13.
12 soft corn tortillas (6 inch)

 14.
15 ounces black beans, drained, rinsed (I used pintos)

 15.
14.5 ounces petite diced tomatoes, undrained

 16.
2 cups shredded sharp Cheddar cheese

 17.

 18. Preheat oven to 350°F. Spray 13×9-inch baking dish (or 2 8×8-inch)
 19. with cooking spray. Spread half of enchilada sauce in bottom of dish. Spread about half of refried beans on 6 tortillas. Place
 20. tortillas, bean-side up, over sauce in dish, overlapping to fit. Stir
 21. together remaining enchilada sauce, corn, black beans and undrained
 22. tomatoes in large bowl. Spread half of corn mixture over tortillas in
 23. dish. Sprinkle with 1 cup cheese. Repeat layering with remaining refried
 24. beans and tortillas, corn mixture and remaining 1 cup cheese. Bake 35
 25. minutes or until hot in center and bubbly around edges. Let stand 5
 26. minutes before cutting and serving.
27.

 28.
 29. Freezing Directions: Prepare according to directions above except do not preheat oven and
 30. do not bake. Instead, once assembled, cover with foil and freeze. To
 31. serve: Thaw. Bake 35 minutes at 350 degrees or until hot in center and
 32. bubbly around edges. Let stand 5 minutes before cutting into 8 pieces.

 33.

 34. On to the sauce:

 35.

 42.

 43. 3 cups chicken broth, vegetable broth, or water*
44. 1 can (14.5 ounces) diced tomatoes
45. 2 tablespoons olive oil
46. 1 large clove garlic, minced
47. 1/2 teaspoon dried oregano
48. 1/2 teaspoon ground cumin
49. 1/3 cup chili powder
50. 1 teaspoon salt
51. 1/2 cup gluten free flour - I used Bob's Red Mill GF All Purpose Flour
52. Optional: Cayenne pepper added (to taste) at the end, if you like hot enchilada sauce

 53.

 54.

 55.

 59.

 60. 1. Place all ingredients into blender and blend on high until smooth. Pour into a 3- or 4-quart sauce pan. Or, place ingredients into a 4-quart sauce pan (no heat) and blend with an immersion stick blender until smooth.
61. 2. Heat mixture in sauce pan over medium heat, whisking frequently, until mixture thickens and boils. Let boil for 30 seconds, then remove from heat. Cool. Taste, and whisk in some cayenne pepper if you want a hotter sauce.
62.
63. *I had to add a little extra chicken broth, as it thickened a little too much. Add extra to your preference.
67.
68. Instead, upon the suggestion of Lo's sister the night before, we downloaded the Words with Friends app and ended up playing against each other for a couple of hours. When we finally decided we should eat, pizza was an easy solution.
69.
70. We had some pizza frozen that we had brought home from Mellow Mushroom a couple of weeks ago. They gave us a free gluten-free pizza because they accidentally made our non-GF friends a gluten-free pizza (instead of just mine). So they made them a new pizza (for free), gave us the extra GF pizza, and also gave each couple at the table a $10 gift card for the mistakes. That was some seriously good customer service because none of us were even mad about the mistakes and they had already made up for them with the free food.
71.
72. Earlier in the evening I decided that I'd make Pizza Hummus to snack on, based on a recipes that I had seen somewhere. I don't know if I followed that one or not - I was just winging it.
73.
74. Pizza Hummus
75.
76. 1 can of garbanzo beans (chickpeas), drained and rinsed
77. 1/2 jar of pizza sauce (Trader Joes), or about a cup of tomato sauce
78. 1/4 cup of nutritional yeast (for a cheesy flavor)
79. 1 T. olive oil
80. 1 t. fresh basil (I use the frozen cubes from Trader Joes) or about 1/2 t. of dry
81. red pepper flakes, to taste
82. garlic, to taste (fresh or dried)
83. pizza seasoning, optional, to taste
84. salt and pepper, to taste
85.
86. Blend it all up in your blender or food processor until smooth! I used our single serving smoothie blender. Go crazy when making this dip - you can add other spices, cooked sausage, pepperoni pieces, cheese, veggies, or whatever. I'd probably blend up a red pepper in it next time to sneak in some vegetables and for some extra flavor. I'd imagine that if you don't have nutritional yeast, you can just stir in some cheesy. It would probably also be great heated up a bit and served warm. As with all dips, the flavors will develop the longer you let it sit, but it was good right off the bat.
87.
88. We used veggies chips as dippers - and may have also dipped our pizza crust in it.
89.
We pretty much just watched tv for the rest of the night and had some tasty beverages. We went to bed pretty late - around 2 a.m. - and the sky outside our window looked SO bright! I know we live in the city, but it doesn't usually look like this. These pic are completely un-enhanced.
110.

 111. Sometimes meals just suck. I can't remember ever making an inedible meal before. Maybe this dinner was never meant to be - after all, for two days in a row I forgot to prep the tofu the night before, like I intended. I was determined to eat this though, because I had a recipe for Crispy Ginger Garlic Tofu that looked so good. I'm not even going to give you the recipe, because while it is probably fine, I can't figure out where all of the problems occured.
112.
113. I had all of the ingredients, lots of fresh veggies to serve with it, and nothing else we could have really even had for dinner if we wanted. So...I told Lo how to prep the tofu and marinate it when he got home for work before he came to meet me for yoga. It was a perfect plan. We got home and I got right to work by chopping the vegetables and starting the mushrooms (they actually turned out well).
114.
115.

 116.

 117.

Marinating tofu

 118.

 119. I started the cooking the marinated tofu in a hot skillet (which was pretty tasty when I tried a piece of it raw). While the veggies were sauteing in another skillet, I mixed up a quick sauce to add to the sauteed veggies - it was just off the top of my head and I think it had soy sauce, braggs amino acid, sesame oil, chili garlic sauce, ginger, garlic, and red pepper flakes. Great right? No - all stirfry sauces have some form of sweetener, which I failed to include - and also failed to taste.
120.
121. Once the veggies were almost finished, I poured the "sauce" on them so
 122. they could absorb some of the "flavor" and the "sauce" could thicken. When the tofu was crispy on both sides, I removed it and cooked down the leftover marinade before pouring it over the tofu.
123.
124.

 125.

 126.

steamy stir-fried veggies

 127.

 128. We just piled the components of the meal onto our plates and sat down to eat. After a bite, I said - it's going to be a little salty because of the soy sauce. After a second bite, I got up and got Lo some Orange Ginger Sauce that we had in the fridge (I couldn't have it b/c of gluten) because I thought he would want to add some to cover the salty-ness. After four bites, I recognized HOW salty it was and said that I don't think I've ever made such a bad dish. Lo said he doesn't ever remember me making a dish that wasn't at least okay. For some reason, we just kept eating it, and kept remarking on how salty it was. When I got to about 3 bites left, I was really struggling to eat it. He finished his only because he was starving. I thought it was the veggies that were so salty, whereas he thought the tofu was the worst part. We had some leftovers, so I rinsed the vegetables of all sauce in hopes that it would make it more edible.
129.
130.
131.

 133.

crispy ginger tofu with pan sauce

 134.

 135.
136.
137.

 138.

 139. Within 40 minutes, my digestive system was feeling funny and I couldn't get enough water. Things went horribly wrong digestively, but it was weird because my stomach never bothered me whatsoever (like it would have if I would have had gluten). Within about 1.5 hours, I drank around 60 oz. of water and 2 small glasses of OJ, and I could not quench my thirst! So I don't really know what happened - I can't imagine that sodium could have caused my issues, and within an hour of eating! I wanted to post the pictures anyway, to show that sometimes the pretty meals are awful, and the ugly meals are awesome.
140.
158.

Gf Mac & Cheese with Tuna,
159. Cauliflower & Broccoli

 160.

 161. I know I sometimes give the impression that I cook everything from scratch and look down upon packaged food, but that isn't quite true. There are certain convenience foods that I like to keep around for the times that I don't have time or desire to cook, and macaroni and cheese is one of those items. But I won't just make a package of mac and cheese and call it dinner, because it is so easy to health-ify. I almost always add canned tuna to mac and cheese, along with some sort of veggie (frozen is fine), and additional spice. Adding the tuna adds healthy protein, and the veggies give it more bulk so we don't need to eat as much pasta at a time - plus veggies are hella good for you. I also add extra spice because, well, I add extra spice to everything. This time around I made 2 different pans of mac and cheese - one regular Trader Joe's brand and one gluten free Annie's - because I was really hungry and it sounded good to have leftovers. We had a head of cauliflower to use up, a small head of broccoli, and some green onions. Lo didn't want as much cauliflower in his, so his had a larger amount of broccoli than mine. His was also regular cheddar, whereas mine was white cheddar.
162.
163. Basically, just prepare the mac and cheese according to directions, but when you are boiling the pasta, you will boil the veggies in the pan too (you may need to add some extra water). If you are using already cooked or thawed veggies, just add them in the two minute of cooking to noodles to heat them through. Drain the pasta/veggies, add back to pan, and follow the instructions for the cheese sauce. You'll want to add the drained tuna at this time, along with spices - I added hefty squirts of sriracha sauce to ours.
164.
165. It really makes no sense to me why anyone would make mac and cheese without adding vegetables. Even if you don't like vegetables that much: vegetables = ehh.., but vegetables + cheese sauce = tasty. Don't like tuna? Leave it out or swap in some other meat, like ground beef or turkey, or chicken.
166.

189.

 190. Lo's favorite food is pizza, specifically Adriatico's, but even when I was eating gluten, it always gave me more heartburn/stomach pain than other pizzas, so we didn't get it very often. A few years ago, we started grilling pizzas and have never turned back. Rain or shine, balls hot or winter, when we make pizza, it's almost always on the grill. It always shocks me when people don't realize you can put pizza dough on the grill.
191.
192. As for the dough - we used to often use Trader Joe's Dough, either whole wheat or garlic/herb (sold in a ball shape near the hummus in the refrig section for about $1.19), but at some point we stopped getting it very often even before I was GF. Now we usually use Pillsbury Pizza Dough Roll (with the biscuits in refrig section) for him, and either Chebe GF Pizza Dough Mix ($19.86 for 8 mixes w/subscribe and save) or Bob's Red Mill Pizza Dough Mix ($10.95 for 4 mixes w/subscribe and save) for me. Both of those gluten-free crusts bake up nicely and have a chewy crust instead of the crispy, crackery standard GF crust. Note: the Chebe requires a cup of shredded cheese IN the mix, so just know that you'll need/be eating more cheese than just for the topping. We don't need to make two separate pizzas - he likes the GF crust, but we usually want to use different toppings, so it's easier to keep a couple of Pillsbury doughs in the fridge for him - he likes the taste and you just have to roll them out and they're ready. Plus then we have pizza leftovers, which are ALWAYS good.
193.
194.

His pizza usually consists of Trader Joe's Pizza Sauce, pepperoni (actually secret pepperoni because I have to hide it from him and then try to find it when we want to make pizza), sometimes crumbled sausage, and mozzarella, with some Trader Joe's Shaved Parmesan, Romano & Asiago Cheese Blend - oh, and a heavy dose of red pepper flakes. My pizza varies greatly - the last three have been: Butternut squash sauce (I get at Costco), kale, balsamic onions, sundried tomatoes, goat cheese, and mozzarella; Lemon and Artichoke Sauce, sundried tomatoes, goat cheese, and mozzarella; and the last one was Homemade Huli Huli Sauce (leftover), shredded chicken, roasted garlic, shredded carrots, spinach, mozzarella, and the Trader Joe's parm blend. I threw a few sausage crumbles on top because he had extra. I built the toppings around adding pineapple to the pizza, but completely forgot, so I ate it with pineapple on top.
211.

 212.
213.
214. As far as grilling the pizza - it's simple. Just prepare the dough per instructions and roll it out as usual. You want to make sure to roll out the pizzas small enough so they fit on the grill (we don't worry about the shape). It's easiest to use a pizza peel (here's one for $15) or a rimless cookie sheet) to roll out the dough, and use cornmeal to keep it from sticking (flour works, but I can't use it). If you don't have a rimless cookie sheet, flip a rimmed cookie sheet upside down and use the bottom. It's a little easier to work with smaller sized pizzas, so you may want to only make them 6-7 inches to start until you get used to it. Oil the grill grates and heat to medium (we have a gas grill). When the grill is hot, carefully slide the pizza from the peel or cookie sheet onto the grill. It should only take 3-5 minutes to bake the first side of the crust - just check it every now and then by lifting the edge with a metal spatula, until it's golden brown (be aware of hot spots on your grill so the dough isn't blackened). Using a big spatula, flip the pizza onto the peel or cookie sheet with the grilled side UP. Turn the heat to low and take the pizza inside and add your toppings to the already grilled side. Slide the pizza back onto the grill to cook the bottom side and close the lid. By turning the heat to low, you'll be able to leave it on long enough so that the cheese melts and the toppings are heated. Once again just lift the edges to check for doneness (a lot of grills are hotter in the middle, so you may want to pull it off before the edges are completely browned). When done, slide back on the peel or cookie sheet and allow to cool slightly before cutting! Unless you have a big grill or are making 2 small pizzas, you will probably have to make one at a time.
