With all these dull stuffs happening here I was eager to bring in some sunshine to the hearts of my loved ones. It was at that time Baking partners group decided to bake cheesecake and this bright and summery cheesecake was in there. Immediately seeing mango I fell for them and decided to go for it. It was all perfect, delicious and an eye catchy stuff and very easy to put together with no baking included. This recipe was suggested by Sweatha adapted from Divine Taste. 170.

  171.
172.

  174.
175.

  176.

  177.
178. Notes:
179. 1. You can use cottage cheese instead of paneer. In that case let the water drain completely before using. The cheese should be dry to get a perfectly set cheesecake.
180. 2. Blend the paneer to puree here.
181. 3. China grass should be completely melted to set properly. Do it on low heat.
182. 4. Break the strands of china grass to small pieces before soaking it.
183. 5. While mixing the china grass mixture let both the liquids used to mix be hot, so that it sets properly.
184. 6. If china grass sets before u mix to another mixture, then reheat till it melts completely.
185. 7. The sugar mentioned here is just sweet. If you have a sweet tooth then add about 1/4 to half cup more. Applies if your mangoes are sour too. Taste the mixture to check it before setting.
186. 8. You can use the mixer to powder the biscuits too.
187. 9. You can make the cheesecake as individual servings too.
188. 10. I have used graham crackers for the base.
189. 11. I used 9" springform pan.
190.
197. When Abraham Chacko approached me to write a guest post for his space I was very happy to do it and accepted it without second thought said yes. He had given me enough time and wanted it only by the end of march. As many of you know me..I am the last minute person..No matter how much time I get..ok sometimes I do start early but then there will be something that holds me till the last minute..I guess that is how I am programmed by God..Now I don't want to rewrite it..;)..So here too I started with one recipe and finally ended here after editing the pics and knowing that they were horrible...Guess these are tolerable..:)
198. As the many other friends I have got in fb, he is one among them. Quite an interesting guy with loads of talent. He has a great collection of recipes and a very cute family with two adorable daughters and an all in all great wife Susan..:). Chacko's Kitchen is the place where you find their effort..If you have never been there do visit it..
199. Here is the small treat that I have prepared for them from here...This is a perfect fudgy brownie with a crunch of nuts perfect to have with milk. Here instead of butter, brown butter is used and it does taste great. Mixing and making them is quite easy though do not over bake them. Do visit here for the recipe..:)
217. I have been saying that feb was a terrible month for me..now why is never told...so here it is...
218. The month begins with a busy schedule for hubby..which in turn means..early to office and late to home...That is its just me and son through out the day and sometimes night which kept me busy than my husband...:)Those days went on for a week and then hubby gets a dental surgery and a liquid diet for 5 days....Now i should say sick men are worst than small kids..;) To put it in single work I was totally messed up..with a son overactive, a hubby drowsy with medicines and awake with pain..cooking and rest of my routine..
219. Then comes the carpet changing day of the whole house...Luckily divided to 2 days..Now u got to imagine... Me and son in a room with all stuffs...Terrible!!!!
220. Now this very special Valentines day was in between this... I had no plans to do anything crazy..but then empty mind is devils workshop..:) Suddenly on 13th around 11 I feel that I need to bake..Started off with this cake as I already had a tub of fresh strawberries. Then start the frosting in between all this rush.. Halving the cake gets messed up as the cake slides and it gets cut slant. The layers get messed up...:) Then when i did the strawberry frosting I felt that it was less and decide to frost the layers with whipped cream...That was another disaster. As I used too much whipped cream the cake started to slip..Now there was a plus point ..the cake was not too sweet.. Then frosting I had a different plan..Anyways that dint work as I thought and then I went with this rose and chocolate bark idea.. Now if I would say this cake can also be mentioned as a disaster cake...:)
221. Texture and taste wise the cake and frosting is excellent...Its only my mistakes that made the cake a disaster..But then its for my husband and kid who don't see how it is...For them it is only the taste that matters...And I got a thumbs up for that...That makes a happy me...:)
222.
296. Usually I bake the cake the day before his b'day when he is at office so that he never knows it and we cut it at night 12..This time b'day came on monday which meant I had to bake the cake on friday to cut on sunday night and keep it. Now that was tough to hide a cake for 2 days when hubby was at home throughout..So i was in a dilema whether to bake or not. Finally at around 3 on friday evening I decided to bake a cake. Now I had to find one. So after searching I loved the ombre cake. Again I knew that hubby wont like many colors in the cake...so the layers need not be colored so I went with a vanilla cake. Initially I thought of baking basic vanilla cake then when I looked into The Cake bible I saw the white cake and went with it. Baked 2 layers on friday evening and kept them covered in fridge. Now baking on sat and sunday was impossible..so I changed the plan of cutting the(my) cake on sunday night. Had arranged for a cake with hubby's friends and cut that at 12..
297. Now monday after he left to office I baked other two cakes and frosted it. The cake recipe is from The Cake Bible- Rose Levy Beranbaum.
348. Frosting recipe is from sweetapolita
349. Whipped Vanilla Frosting
350. Unsalted butter-3 sticks + 2 tablespoons (375 grams)(softened and cut into cubes)
351. confectioner's sugar- 3 cups sifted (475 g) (icing, powdered sugar)
352. Milk- 3 tablespoons (45 ml)
353. Vanilla extract- 2 tsp
354. Salt- pinch
355.
356. 1. In the bowl whip butter till it becomes very pale & creamy(approx. for 10 minutes on high speed ).
357. 2. Add remaining ingredients and mix on medium speed for 1 minute, then on high speed for 6 to 7 minutes till frosting is very light, creamy and fluffy.
358.

  359.

  360.
361.

  362.

  363. Assembling the cake:
364. 1. If your cake has dome on top cut and level it.
365. 2. Keep one cake on the base and apply a scoop of frosting on top of it. Spread it evenly on whole cake and then place the second cake on top of it. Continue the process for the four cakes and then apply scoops of frosting on top and sides of the cake to form the crumb coat. After that keep the cake in refrigerator for 30 mins to set.
366. 3. Now divide the remaining frosting into 3 bowls and add a drop of blue to one bowl and two drops to another bowl. Keep one frosting as white. Now mix the colors well and evenly.
367. 4.Attach a 1m open star tip to a pipping bag and fill the bag with the white cream first and then start to decorate wtih rose from sides to center. Now to do rose keep the star tip in the center and with equal pressure lift the tip and move outside. Continue this on top.
368. 5. Then fill the bag with the next light color and start pipping the frosting from the sides in a line. At this point hold the pipping bag perpendicular to your cake. You can do that for two lines and then use the dark color at bottom and continue with the roses.
369. 6. Sometimes there will be little gap between the roses and you can see the crumb coat, then using the same color frosting draw a line in the same direction as rose or just put small stars. At the end those small stuffs wont be visible.
370. 7. If you happen to do some mistake while making the rose then you can scrape it and do it again.
371. 8. The colors should be from base dark to lighter shades of same color. You can use any color of your choice.
372. 9. Refrigerate the cake for some time so the frosting is set. Keep the cake outside for about 15 to 30 minutes before serving.
373.
374.

  375.

  376.
377. Notes:
378. 1. My husband is not very much interested of having colored cake layers so I went with a white cake. You can add ombre effect there by adding blue color in dark to light tone in layers. In that case try to match the frosting colors to that.
379. 2. The above measurement for cakes makes 2 9" cakes.
380. 3. To frost the whole cake(4 layered) I used twice the above measured frosting.
381.
Before the mail for this months challenge had come I had decided to bake a fruit cake for this X'mas. Once the challenge came and I saw the recipes I wanted to try Brazil nut cake as well as the earlier decided fruit cake..but due to the lack of people to eat I opted to go with just one. I went with the fruit cake which was so perfect for the season. The cake was suggested by Archana and it came out good though there were some issues that I faced which I have mentioned in the notes section. Anyways the cake got over before X'mas...:(. I felt that the cake was getting better as days went.
459. As for the recipe I had tweaked it little according to our needs. Instead of rum, I have used orange juice. You can use apple juice too.
508.

  509.

  510.

  511. Method of Preparation:
512. For the Fruts:

  513.

  514. 1. Soak the fruits and nuts in orange juice in a clean bowl and set aside. Keep it on counter top for a day closed properly with an air tight lid. Then move it to refrigerator and keep it there for 2 days. Before baking take the fruit mixture from fridge and set on counter top.

  515.

  516. 2. Heat a pan and add the soaked fruits into it and warm it slightly and set aside to cool.Once cold and juts before mixing with batter add a tsp of all purpose flour to the dry fruits and give it good mix. Helps to prevent the fruits form sinking to bottom.
517.
518. For Caramel:

  519.

  520. 3. In a small pot, add 6 Tbsp Sugar and 3 Tbsp water and few drops of lemon juice. Swirl pan to mix – do not use spoon.

  521.

  522. 4. Heat until sugar changes color and becomes caramelized. (approx 7-8 minutes).See that you don't burn it.

  523.

  524. 5. Add 1/2 cup boiling water and swirl pan again to mix well. Keep aside.
525.
526. For Cake Batter:

  527.

  528. 6. In a large mixing bowl, combine softened butter and powdered sugar and beat with hand blender.

  529.

  530. 7. Add one egg yolk at a time to the mix and blend well.

  531.

  532. 8. Add Vanilla, rum Extract and blend.

  533.

  534. 9. Combine all dry spices, baking powder and flour and sift it into the bowl, adding little at a time and blending.

  535.

  536. 10. Preheat oven to 325 degrees Fahrenheit.

  537.

  538. 11. Lightly coat 9"/10" baking pans by spraying cooking oil or regular oil.

  539.

  540. 12. Add caramelized sugar syrup a little at a time into mixing bowl and blend.

  541.

  542. 13. Add fruit/nut mixture, caraway seeds into mixing bowl and mix with a spoon.

  543.

  544. 14. In a separate bowl, beat egg whites until they are fluffy and soft peaks form.

  545.

  546. 15. Fold beaten egg whites into the cake batter.

  547.

  548. 16. Pour batter into greased baking pans and bake for approx 1 hour 30 mins at 325 degrees F. For smaller pans, baking time may vary.

  549.

  550. 17. Remove cake from oven and allow it to cool for few minutes in pan and then on rack till it is completely cooled.
551.

  552.

  553.
554.

  555.

  556.

  557.

  558.

  559.

  560.

  561. Notes:

  562.

  563. 1. The original recipe used rum which I replaced with orange juice of same amount.

  564.

  565. 2. Since rum is not used to mask the egg smell in case it existed I used rum extract.

  566.

  567. 3. Caraway seeds are added extra by me. Its optional.

  568.

  569. 4. To reduce the baking time increase the oven temp to 350 F and bake in middle rack. If top gets cooked earlier use a foil to cover it to avoid blackening of the top.

  570.

  571. 5. Mixing the dry fruits with all purpose flour prevents it from settling at the bottom.

  572.

  573. 6. Be careful while making caramel syrup. It tends to burn easily. So keep an eye on it.
574. 7. I used a 9" spring foam pan lined with parchment paper.

  575.

  576. 8. Cake got delicious as the days went by.
577. 9. Do increase the amount of sugar used to make caramel to get a darker color for cake. In this case reduce the amount of powdered sugar. You can replace half of the sugar with dark brown sugar too.
578. 10. When I baked at 325 F the outer side of cake cooked faster and the center took long time to cook. But still the center cooks perfect without burning the outer.Just that the time is more.
579.
They have a cake known as Ghee cake. As the name suggests Ghee is the main ingredient. Its a loaf cake with strong flavor of ghee and extremely soft texture. From my childhood days I have been in love with this cake..I have been searching the recipe from long but there was nothing that I found. At last my search ended here. Though it is pound cake recipe where butter is replaced with ghee. I did remove the lemon zest and reduced the vanilla as my memory of eating the cake brought the flavor of ghee to me. The texture of cake is a bit softer than pound cake.
682.
683.

684.

685. Chocolate Icing:
686. Semisweet baking chocolate- 2 ounces (2 squares)/ 56.7 g
687. Rum or coffee-2 tbsp
688. Unsalted butter-5 to 6 tbsp(soft)
689.

690.
691. Method of Preparation:
692. 1. Preheat oven to 350F/ 180 C.Butter and flour the cake pan/ use a butter paper/parchment paper in the base of the cake.
693. 2. Mix the chocolate and rum/coffee. Set the chocolate and rum or coffee in a small pan, cover, and place (off heat) in a larger pan of almost simmering water, let melt while you proceed with the recipe.
694. 3. Measure out the rest of the ingredients.
695. 4. Cream the butter and sugar together for several minutes until they form a pale yellow, fluffy mixture. Beat in the egg yolks until well blended.
696. 5. Beat the egg whites and salt in a separate bowl until soft peaks are formed; sprinkle on the sugar and beat until stiff peaks are formed (make sure it should have peaks not deflate ones).
697. 6. With a rubber spatula, blend the melted chocolate into the butter and sugar mixture, then stir in the ground almonds, and almond extract. Immediately stir in one-fourth ( ¼) of the beaten egg whites to lighten the batter. Delicately fold in a third (1/3rd) of the remaining whites and when partially blended, sift on one-third ( 1/3rd) of the flour and continue folding. Alternate rapidly with more egg whites and more flour until all egg whites and flour are incorporated.
698. 7. Turn the batter into the cake pan, pushing the batter up to its rim with a rubber spatula. Bake in middle level of preheated oven for 25minutes. Cake is done when it has puffed, and 2 1/2 to 3 inches around the circumference are set so that a needle plunged into that area comes out clean; the centre should move slightly if the pan is shaken, and a needle comes out oily and gently set in center and tooth pick inserted into center comes out with a few moist crumbs attached, about 20-25minutes. Cool cake in pan 10 minutes.
699. 8. Allow cake to cool in the pan for 10 minutes. Run a knife around the edge of the pan(if using flour and butter to dust pan), and reverse cake on the rack. Allow it to cool for an hour or two (about 2 hours); it must be thoroughly cold if it is to be iced.
700. 9. To serve, use the chocolate-butter icing recipe below, and then press a design of almonds over the icing.
701.

702.

703.

704. How to make Icing:
705. 1. A bowl filled with a tray of ice cubes and water to cover them and set aside.
706. 2. Place the chocolate and rum or coffee in a small pan, cover, and set in a larger pan of almost simmering water.
707. 3. Remove pans from heat and let chocolate melt for 5 minutes or so, until perfectly smooth.
708. 4. Lift chocolate pan out of the hot water, and beat in the butter a tablespoon at a time.
709. 5.Then beat over the ice and water until chocolate mixture has cooled to spreading consistency. At once spread it over your cake with spatula or knife.
710.
711.
712.

  713.

  714.

cake slice immediately after applying icing..

  715.

716. Notes:
717. 1.Use an 8 inch pan for the above measurements.
718. 2. I used coffee extract(1 and 1/2 tbsp) in place of rum.You can use freshly brewed coffee.
719. 3.The cake is on the lower side for sweetness and is having a bitter taste.Increase sugar to almost 1/4 cup(approx.)
720. 4. I used raw almonds and pulverized it.You can toast, blanch, pulverize the almonds.
721. 5. Use good quality chocolates.I used ghirardelli semi sweet chocolates.
722. 6. Cake took about 18-19 mins to bake for me,so keep a close watch on it.
723. 7. The chocolate measurement here assumes that the chocolate squares are 1 ounce each. Before using check how much each chocolate square weighs.
724. 8.Cake has a strong taste of chocolate and coffee.Basically a chocolate lovers cake.
725. 9. I used APF and cornstarch instead of cake flour.
726. 10. I used Almond flakes to decorate it.
727.

  728.

  729.

Cake slice the next day..Icing set properly.

  730.

HAPPY INDEPENDENCE DAY....:)
810. Notes:
811. 1. Original recipe used 21/4 cup cake flour, which can be replaced with 2 cups APF, which is what I did.
812. 2. Rose says not to chill the bowl in which the cream is whipped as mixing the egg mixture would be real difficult in that case. She also says that to get finer crumbs use a high butterfat heavy cream.
813. 3. I halved the recipe and used 2 small bundt pan and 3 cupcake cups.
844. 1. Beat the butter till fluffy. add the sugar and mix well. Add few drops of color if using.
845. 2. Spread on the cupcakes once they are cold. Decorate with balls if using.
846.
847.

848.

849. Notes:
850. 1. Add very few drops of rose essence for mild smell & flavor. Too much of it makes it very difficult to eat.
851. 2. Instead of pink color I used few drops of rose syrup,Which gave the color to my frosting.
852. 3. The cupcakes are lightly sweet. Along with the frosting its perfect level of sweetness. But if you dont want the frosting increase the amount of sugar in cupcakes.

Black Forest Cake

Hi friends....Many special days came my way last week...so cudnt spend more than 5 mins on blog....First and foremost it was our 3rd wedding anniversary on 4th....which was a very very lucky day for us....a new member joined our family...A Nikon D3100....:)....I should say that I have got the most loving husband.....Then a small get together and then came Mothers day....My son gave me a cute gift....know what??? I removed the necessary ingredients from my pantry and then suddenly I felt...Y not grape cake instead of orange cake...Yes the grape juice hang over was still there :)... I had the grape pulp remaining to which I had not added water so..I started with it...Yup during the whole process of making I was sure that the effort was going to be in the bin...[You know positive thinking...he he..:)]By the time I could decide and start it was already 5.00pm and my son had started to come behind me...and my hus wud come in by another 45 min..So overall it was a great time for me...Anyways I kept the cake inside the oven and after 30 min opened and checked it..yesss it had set.. now how wud it taste like..next tension...and my hus came in..Seeing the cake he said...Now you have gone mad baking cakes...anyways is it vanilla cake...I giggled and said no no...a new recipe...just formulated by me..wait for sometime..
