2. Sometimes you just want to kill the evening when you have a super excited son and a completely drained mommy. Those are the times when I want him to sit with something instead of frog hopping or running. I offered him a lot of options like reading, painting and all he did was suggest me frog hopping and running...offcourse with a smile that I cant say No to..Then I finally decided to tell him I will give cookies if you go and play..oh come on you guys do that too...right... So after 5 minutes of playing he came running for the cookies. Now to fight with a 3 year old over cookies is something you rarely want to do...because they always win it...No matter what.:(..So finally there I was searching for a simple recipe with less work.

  3.

  4. That when I found this recipe and thought of keeping my son busy with it. So we started with the work. Mixing and rolling was done by me and half of the cutting as my son got quite bored after doing one set. He was much interested playing with all purpose flour as a powder. So at the end I had a completely white faced son..:), quite bit of white floor and these delicious cookies.

  107. 4. Sift flour mixture over whites, and fold until mixture is smooth and shiny.
108. 5. Transfer batter to a pastry bag fitted with a 1/2-inch plain round tip, and pipe 3/4-inch rounds 1 inch apart on parchment-lined baking sheets, dragging pastry tip to the side of rounds rather than forming peaks. 6. Tap bottom of each sheet on work surface to release trapped air. Let stand at room temperature for 15 minutes.
109. 7. Reduce oven temperature to 325 degrees. Bake 1 sheet at a time, rotating halfway through, until macarons are crisp and firm, about 10 minutes.
110. 8. After each batch, increase oven temperature to 375 degrees, heat for 5 minutes, then reduce to 325 degrees.
111. 9. Let macarons cool on sheets for 2 to 3 minutes, and then transfer to a wire rack. (If macarons stick, spray water underneath parchment on hot sheet. The steam will help release macarons.)
112. 10. Sandwich 2 same-size macarons with 1 teaspoon filling. Serve immediately, or stack between layers of parchment, wrap in plastic, and freeze for up to 3 months.
113.
119.
120. Chocolate Ganache
121. Bitter sweet chocolate-8oz
122. Heavy whipping Cream-3/4 cup
123.
124. Method of Preparation:
125. 1. Chop the chocolate to small pieces and keep aside in a bowl.
126. 2. Heat cream in a pan on medium heat and when it starts to boil turn off the heat.
127. 3. Pour the hot cream on chocolate and keep for 2 minutes without stirring.
128. 4. Then mix until smooth and set aside to cool and thicken for some time. Once thick to the consistency you need it add to a piping bag with round nozzle and squeeze little to center of nacaron. Then press the other one on top and twist it to spread the ganache.
129.

  130.

  131.
132. Notes:
133. 1. Making Almond Flour:
134. I used blanched almonds. Powdered them along with the little icing sugar to fine powder without releasing oil. If you feel that the almonds stick to the wall just tap on outside of mixer and if the powder falls back its fine, but if it starts to stick then oil is generated. In that case stop grinding and dry the flour.
135. 2. Now sieve the flour to get fine powder. Mix remaining sugar to it and sieve again for 3 times. If any big particles are there then powder it again and if they cant be powdered future discard them.
136. 3. I kept the egg whites separated for 11/2 days outside closed with a kitchen tissue. You can keep it up to 5 days in refrigerator. To beat the whites use a clean oil and dirt free vessel.
137. 4. Have used an extra baking sheet to slow the process of having feet and dome due to high heat at the bottom.
138. 5. Tap the tray and any air bubbles not broken is poked with a toothpick. Any air bubbles left will lead to cracks.
139. 6. The temperature for baking perfect macarons depends on your oven settings. It need notbe the same as I have mentioned here. The above temperatures were perfect for my oven.
140. 7. Macarons can be filled with buttercream, ganache, jam, lemon curd. Once filled they taste great after 24 hours of resting in fridge.
141. 8. There are a lot of videos and sites I have checked. some of them are:
When these cookies came out of the oven my son started munching them..when I told him that we are taking it for a party the instant reply was..."Amma kichunna ithu.."(This is for Kichu) and he stuck with this words until he had gobbled a few of the cookies..
156. Chocolate Crinkle Cookies are really easy to prepare. You make the dough which has lots of chocolate in it. Then you roll this on powdered sugar which gives it a snow covered look and finally when baked you get to see beautiful cracks on them revealing the chocolate..So by this you should have guessed that these cookies are for chocolate lovers mainly..but I should say that my husband being a not so big fan of chocolate too ate a few of them. That shows how addictive these are. Do try them for this holiday season...They are perfect for this time or for that matter any time..
186.
187.

  188.

  189. Method of Preparation:
190. 1. Melt the chocolate and butter by keeping it in a heat proof bowl over a simmering pan of water.Once done remove from heat and set aside to cool.
191. 2. Beat egg and sugar in another bowl until it is thick pale and fluffy. It should fall like soft ribbon once the beater is lifted.
192. 3. Beat the vanilla into it and then add the chocolate mixture and beat till it is well mixed. Add cooled chocolate mixture and mix till its incorporated.
193. 4. Mix the flour, salt and baking powder in a bowl. Add the dry ingredients to the chocolate mixture till it is incorporated.
194. 5. The dough will be soft so place it in the refrigerator closed with a lid till it turns firm to form ball.
195. 6. Preheat oven to 325 F and place the oven rack in the middle. Now take the Icing sugar/powdered sugar in a bowl, scoop a small amount of dough(about 1 inch), shape it to ball and then roll it in the sugar. See that the ball is coated well with sugar with no chocolate portion visible.
196. 7. Place them on the parchment lined baking sheet with little gap to spread(about 2 cm) and bake for 8 to 10 mins. Do not over bake them. The sugar coating should not turn brown. The outer should be firm while taking it and the center will be soft.
197. 8. Place them on wire rack to cool. These cookies taste awesome while hot and are great on the day it is baked. It stays good for 2 to 3 days.I don't know more as the cookies never lasted more than that.
198.
199.

  200.

  201.
202. Notes:
203. 1. The dough will be soft, so you need to refrigerate till it turns hard. You can keep the dough overnight.
204. 2. The dough will be very firm and you need to scrape it with spoon, dont worry when you roll it turns moist.
205. 3. The cookie is soft an fudgy like brownies, don't bake it more which will make the cookies dry.
206. 4. Coat the dough balls completely in sugar which will result in look of beautiful snow covered cookies.
207. 5. You can use semi sweet chocolate instead of bitter sweet ones.
208. 6. As the cookies are kept the sugar coating changes to slight yellow.
209.
There where three cookies from which we had to bake one or can bake all. All the three cookies were too good, but due to time constraints with a kid and some guests around I opted to go with one. So I selected Cornflake cookies suggested by Priya from a cookbook called "Baking: Commonsense Guide by Murdoch Books". Thanks for that recipe..The cookies were awesome, crispy outside and soft inside ..Do give it a try..
301.

308.

309.

310.

311.

323.
324.
325. Now about the recipe...I have tried them with corn flour once as well as with custard powder and cashew bits and both of them tasted great...Do try them..
326.

329.
330.

331. All Purpose Flour-1 nd 1/2 cup(sifted)
332. Corn Flour/corn starch/custard powder- 1/2 cup(sifted)
333. Unsalted Butter- 250gms
334. Icing Sugar-1/2 cup(80gms)(sifted)
335. Vanilla essence-1 tsp
336. Cashew bits-2 tsp(lightly fried)(optional)
337.
338. Method Of Preparation:
339. 1. Preheat the oven to 325F. Line the baking sheet with parchment paper.
340. 2. Beat butter, vanilla and sugar till light and fluffy.Add the flour mixture, cashews(if using) to this and mix. If the mixture is soft and sticky to handle refrigerate it for 30 mins.
341. 3. Dust your hands lightly with flour, take tsp full of dough and roll it round with hands, place it on the baking sheet with space for spreading between them and press it slightly with the back of lightly dusted fork.
342. 4. Bake cookies for 15 min or until lightly golden.Cool for 5 mins on tray and then on rack. Store in airtight tins.
343.

344.

345.

346.
347. Notes:
348. 1. The cookies has slight sweetness only...so if you want add bit more sugar or dust it with sugar before serving.
349. 2. I got the cookies baked at 30 mins..but be careful after 15 min..as original recipe calls for that time.Ya time depends on the baking sheet/oven etc etc..A slight golden is the baked color.
