With a pristine 18-hole golf course surrounding the premises and full-service spa, adults can unwind in ways that fit their lifestyle. Our pre-teen loved playing with the life size chess and checkers right near the lagoon-style pool. The hotel staff went above and beyond engaging with guests and bringing the kids new pool toys. The true feeling of vacation settled in as we listened to live music near the tiki bar, watched the sunset over the river and the kids swam until dark. As we explored the property, kindness continued to pour out from staff. Don’t leave without a meal at West 82, a seafood inspired restaurant with the most enjoyable nightly live music! We danced, sang and decorated pictures to be hung up in the lounge. There’s also beach volleyball, pickleball, a fitness center, boat ramp, shuffleboard, nature trails and a Starbucks on site!

<a href="https://www.plantationoncrystalriver.com/" data-wpel-link="external" rel="nofollow">Plantation on Crystal River</a> accommodations include family friendly rooms that comfortably fit groups of all sizes. Offering 196 rooms with 11 Junior Suites and 12 Golf Villas, our party of six had plenty of space to unwind, had exquisite housekeeping service and truly felt at home. The rooms were clean with everything needed to make our visit comfortable.
Whether you travel on river by kayak or boat, Crystal Springs, Hunter Springs, and more rivers are just a scenic float away. Birds, manatees, fish, and more were spotted during our adventure! As a parent, I enjoyed the tranquility of the area. In a fast-paced world, everything seemed to slow down at <a href="https://www.plantationoncrystalriver.com/" data-wpel-link="external" rel="nofollow">Plantation Resort on Crystal River</a>.

<h4>The Adventure Center</h4>
On location and within a beautiful stroll from each hotel room, <a href="https://www.plantationadventurecenter.com/" data-wpel-link="external" rel="nofollow">The Adventure Center</a> rents out kayaks, paddleboards and pontoon boats. They also offer Fishing Charters, Scalloping Tours, Diving, Scenic Tours and our bucket list favorite; Swimming with Manatees! The experience to snorkel among “seacows” and witness them in their habitat was a moment that will last a lifetime. Christian and Shelle, our tour guides, provided southern hospitality, an educational experience and guided us through interaction and connecting with the incredible mammals. Shelle captured the morning perfectly with an underwater camera so we could be in the moment, which was refreshing as a parent. We ended the tour boat jumping into the springs and never felt cold due to the wetsuits and gear included in the tour. To top it off, there’s complimentary coffee, hot chocolate and water for the cruise back to the resort. If staying dry is preferred, a Scenic Tour is a great way to learn about the surrounding town, take in the charm and learn about the local wildlife. Tons of manatees were seen from the boat as they’d swim right up to us!

As a Florida resident, we’re no stranger to theme parks. But there was something different about 
Carowinds; something more enjoyable. The lines were short, the food was reasonably priced and 
as parents, we got to be in the moment with our children. To top off our trip, accommodations are 
on the premises to assist in planning an easy family vacation.
Carowinds offers two on-site options for lodging. For the outdoor enthusiasts, Camp Wilderness 
is a 55-acre resort boasting a lodge for large groups, many two-bedroom cabins and plenty of RV 
sites. When the park closes, the resort’s outdoor pool, shuffleboard and corn hole is open for 
play! If you prefer a continental breakfast and hotel services, then Springhill Suites is where 
you’ll call home. Located across the parking lot, their updated rooms are spacious and cozy. Our 
family of five fit comfortably with the pull-out sofa and double queen beds.
What Not to Miss at Carowinds Theme Park:

Camp Snoopy is a Peanuts themed children’s area with rides for every age. Including junior rides 
like Pig Pen’s Mud Buggies and a soaring Camp Bus, the kids adored hanging out with Snoopy and 
his friends. For those warmer days, there’s also an 8,000-square-foot climb and play area with 
plenty of shade. The wooden rollercoaster was voted as favorite for these brave kids!

Fury 325 
One of the first aspects we noticed when entering the park was that there were a lot of rides! 
Carowinds has sixty rides for all age groups but the rollercoaster, Fury 325, is the fastest and 
tallest giga coaster in the world! We learned that a giga coaster is a rollercoaster that’s between 
300 and 399 feet tall, completes a full circuit and it was just as impressive up close. Guests go up 
to 95mph and the ride takes a little over three minutes. By far the most nerve-wracking yet 
incredible coaster experience!

The Food 
Carowinds dining options were very impressive. Not only are there standard cafes for your 
burgers and sandwiches, but there’s also pizza, Panda Express, Starbucks, Cinnabon and Sweet 
Frog Frozen Yogurt. Which was refreshing to have many options for everyone. No theme park 
would be complete without a County Fair Funnel Cake (which has now ranked number one to 
us) and a souvenir cup to refill all day! My favorite was the meal plan options for families. 
Having a dining plan made the day and budgeting a lot easier.

It was unfortunately not water park season yet, but we can’t wait to come back over the Summer, 
rent a cabana and enjoy a day at the Carolina Harbor Waterpark. Slides, attractions, and boogie 
board racing are the perfect way to cool down.

South Florida boasts many different types of sporting events to enjoy. Yet there are some sport experiences people need to witness in person at least once in their life. Many readers wonder, “Isn’t hockey just a game that you can catch on TV?” The answer is simple: Not even close. Nothing compares to seeing an actual match in person. As a mom who does not follow professional hockey each season, I truly love nothing more than screaming and cheering on the Florida Panthers at FLA Live Arena!
The captivating pre-game experiences, feeling the infectious energy of the fans in the arena and of course, the excitement from cheering on your home team; is something you cannot recreate.
To share this moment with a child is even more special. Seeing their eyes light up as they enter FLA Live Arena for the first time, their enthusiasm during the game, and sharing game day together is a memory they will never forget.
Below is a step-by-step journey on how you can enjoy a family filled Panther’s game with kids.

Before the Game
The fun starts before the puck drops! FLA Live hosts a plethora of theme nights to engage children, families, military members and more. One of the hesitations some parents have with a high intensity sport like hockey is, “Is it kid friendly”? Even if you don’t attend a themed night, the Florida Panthers do a great job at including children of all ages. Make sure to stop at the Panther inflatable at the main doors for your first photo op! Or check out the Game Day treats. For Kids Day, we celebrated Stanley’s birthday with a special ice cream at Mister Softee carts. Of course, no game day is complete without some merchandise! Pantherland has anything new and long-term fans can dream of. Located at the Main Lobby of FLA Live Arena, Pantherland has everything from hats, jerseys, shirts to lanyards and cat ears (our favorite!)

<li>Star Wars Night, March 2, 2023, 7PM. Not only are these tickets inexpensive, but you also receive a T-shirt and access to meet and greet Star Wars characters. Florida Panthers play the Nashville Predators</li>
<li>Mental Health Awareness Night, March 7, 2023 at 7:00 PM. Florida Panthers does an excellent job at recognizing the struggles society endures daily. At this great game, the Panthers play the Golden Knights and will sure to have plenty of hands on fun in the main lobby. Autism Acceptance Night is April 6, 2023 too! </li>

Ticket to Fun
Don’t have tickets? You can buy tickets through the FLA Live Arena / Panthers website online or via any secured ticketing app. There truly isn’t one bad seat in the house and I attribute that to the energy of the fans. From lower levels to the 300 section, the higher you get, the more action seen from the entire ice. Large center screens make it easy to focus on each player and never miss a play. There is plenty of awesome food options at a Panthers home game. From the delicious grab and go items like burgers or hot dogs to Ribs or a Cuban sandwich, there is no disappointment in the size and price from the concessions. When at an event with children, the last thing I want to do is stand in a long line with them. FLA Live offers mobile ordering to allow you to wait at your seat and receive a notification when everything is ready. For the beer lovers, Funky Buddha Brewery Tap Room and Jameson Crossbar offer bar experiences right on the main floor.
Game Time
It’s game time! Sit back, relax, and try to catch a t-shirt from the stands! Aside from all the action on the ice, have the kids watch for Stanley C. Panther, the animated cat fiercely engaging the crowd to cheer and scream at every play. He usually makes an appearance on the large score board to start the cheer throughout the game. The Florida Panthers Dancers will also take the ice at half time, and there is typically a few games and quizzes to engage the audience. Most importantly – soak in all the action. This is one special moment.

Every fall we head out to the East End of Long Island to go apple picking. Our favorite orchard is the <a href="https://milk-pail.com/u-pick-farm.php" data-cke-saved-href="https://milk-pail.com/u-pick-farm.php" data-wpel-link="external" rel="nofollow">Milk Pail Orchard</a> in Watermill, NY. And we have been picking our apples here every apple season for as long as I can remember. With over twenty varieties of apples, everyone in my family can pick their favorite kind of apple. For some reason, my husband always insists on getting the half bushel bag – which amounts to a whole lot of apples.

My family will be eating apple everything for the next couple of weeks. This morning they enjoyed these Gluten-Free Apple Oat Muffins. Made with oats, gluten free flour and our favorite freshly picked apples! A quick note about these particular muffins, all of the ingredients are blended in my <a href="https://amzn.to/3SVNccT" data-cke-saved-href="https://amzn.to/3SVNccT" data-wpel-link="external" rel="nofollow">Vitamix</a> so selective eaters won’t be turned off by chunks of apples.

(Preheat oven to 350 degrees)
Step 1: Blend 1 cup gluten free oats in a blender for 1 minute or until it resembles a grainy flour.
Step 2: In a large bowl mix whisk together blended oats, gluten free flour, cinnamon and baking powder.
Step 3: Remove the skin from a large apple or two small apples. Cut into chunks and put in blender. Pulse until it becomes pea sized pieces.
Step 4: Add melted coconut oil and blend for 30 seconds. After that add two eggs, maple syrup and unsweetened almond milk.
Step 5: Mix wet ingredients into dry ingredients, then add in chocolate chips and stir.
Step 6: Line muffin pan with <a href="https://amzn.to/3C7WQCl" data-cke-saved-href="https://amzn.to/3C7WQCl" data-wpel-link="external" rel="nofollow">muffin cups</a> and scoop muffin batter into the cups with a spoon or ice cream scoop.
Step 7: Bake for 20-22 minutes until done.

Opening its doors in 1958, The Diplomat has hosted its share of celebrities, presidents and every day parents who are in need of the full package. It’s truly not a surprise this location is sought out as the design and aesthetics are paramount to the hotels vibe. After a gigantic renovation in 2001, this Curio Collection boasts new restaurants, stylish rooms and a feel of being transported to a tropical oasis.
The Rooms 
Whether you’re booking a stay for a romantic getaway, work conference or family vacation, there’s a room to accommodate. This incredible resort has one thousand guestrooms designed with either a coastal sunrise or sunset scheme and enough space to spread out and unwind. Boasting five-hundred fifteen king rooms, four-hundred eighty-five double rooms, ninety-six of which are suites and two very glamorous Presidential suites, it makes The Dip the tallest hotel in Broward County. The views from high up are like no other as time stops when looking past the ocean and over the horizon; or across the Intracoastal Waterway. Sunrises were my favorite at The Diplomat as each oceanfront room includes a large, serene balcony.

The History 
The Diplomat continued to amaze as I learned historical facts and elegant details about the hotel and artwork. Not only have many big names like Frank Sinatra and The Rat Pack stayed at this hotel, but every single President of the United States since 1958 has either vacationed here or made an appearance. In keeping up with tradition, that even includes President Biden. And I can see why! Each decorative accent was chosen with precision. As the flagship of the Hilton Curio Collection, this hotel is no stranger to the constant developer visits to mirror certain aspects or peak inspiration for additional resorts within Hilton. I became most fascinated with a piece made of completely of cigar burns hanging on the wall (and still talk about it constantly). It was fascinating to take in the hard work that went into every detail of this resort.

The Food 
Several restaurants, bars and a trading company (The Canteen) are within this resort allowing for guests to indulge for every meal. Starting the day with Counterpoint Café was healthy and offered incredible smoothies, fresh juices, and light alternatives to feel my best. As the day went on, Playa became my favorite spot for its beachfront view with ease of sitting in a bar chair. This rum and tequila bar presented casual, delicious food, mixed drinks and the true feeling of vacation mode! Dinner was exquisite and five-star. Deciding to make the most of this weekend, eating at The Diplomat Prime Steakhouse was my first choice. Reservations recommended, every meal is mouthwatering and a culinary masterpiece. Save room for dessert, it’s the perfect ending to the evening! For those late evenings and not wanting the night to end, The Hotel Bar can prepare chic drinks from all around the world while unwinding in comfortable chairs and couches.

Why It’s The Best 
Entering the hotel produces a feeling of exclusivity and glam. Its upscale appearance goes hand in hand with the excellent service of the front desk and staff. Feeling welcomed and eager to get into vacation mode was simple after how inviting the atrium is. The real gems are the two beachfront pools offering stunning views and poolside cabanas. The Infinity pool consists of a porthole window bottom and two waterfalls flowing into the pool below. My favorite was the Sparkling Lagoon pool, located under the Infinity Pool and surrounded by lavish plants and island-vibe landscaping. As a mother of young children, I was enraptured with the Dip + Slide, Kids Splash Zone. Not only was it overseen by staff but offers hours of fun with its fountains, small and medium water slide, and drench bucket. Having the peace of mind of water safety and supervision makes any vacation surreal for a parent! The beach was invigorating as I enjoyed the ease of walking back and forth from my chair to the pool side cabanas for a Vitamin D break. Jet Ski Rentals and Tours, Banana Boat rides, Bean Bag Toss and Kid’s Toy Area were all available upon request. Included with the room / resort fee is one-hour complimentary paddleboard rental, one hour complimentary bicycle rental, and one free group fitness class at 9:30am. St. Patrick’s Day is around the corner and we have been searching for fun ways to celebrate! We have been very busy making homemade decorations, painting shamrock art and baking a bunch of these easy St Patrick’s Day Cookies! Every year we look forward to St. Patrick’s Day. We love watching the Irish step dancers, the bag pipers and all of the marching bands as they make their way down Main Street. Unfortunately…this year it has been cancelled, just like last year. Alas, there is always next year! In the meantime we will continue to create as many fun family traditions as we can, at home.

Baking cookies is a fun family activity that everyone enjoys, especially when my helpers get nice warm cookies fresh from the oven. These green tinted shamrock sugar cookies were a big hit with the kids. Not too sweet, prefect for dunking into a glass of milk or a mug of hot cocoa!

<h2>Directions for Easy St Patrick’s Day Cookies</h2>
<ol>
<li>Preheat oven to 325 degrees.</li>
<li>Cream room temperature butter with sugar in a stand mixer. Beat for 3 minutes.</li>
<li>Add egg, vanilla, green food dye and half & half. Beat until fully mixed.</li>
<li>Add flour and baking powder to the wet ingredients. Beat until mixed.</li>
<li>Lightly flour parchment paper and rolling pin. Gently roll dough out to 1/4 inch thickness.</li>
<li>Cut out with shamrock cookie cutter. Put on parchment lined cookie sheet and dust with green sprinkles.</li>
<li>Bake shamrock sugar cookies for 12 minutes.</li>

Valentine’s Day is once again upon us! After several months of quarantining in 2020, we exhausted a lot of our previously posted <a href="https://www.amazon.com/Awesome-Science-Experiments-Kids-Projects/dp/1939754666?dchild=1&keywords=stem+experiments+for+kids+6-8&qid=1613148897&s=books&sr=1-1&linkCode=ll1&tag=weknst0c-20&linkId=eeb28cc185be160da28fb63d6855b395&language=en_US&ref_=as_li_ss_tl" target="_blank" rel="noopener nofollow" data-wpel-link="external">STEM experiments</a> and crafts. Normally, I’m all about making messes and explosions but this time, we decided to have fun with healthy valentine snack ideas. Although our crafts are usually entertaining, I pondered over a unique way to celebrate the holiday as a family.
In the past, we would choose to buy store bought candy and eat it on our own time. However, 2020 has shown us, that it’s much more fun to be together, to work as a team and create happy memories! In an attempt to stay health conscious, our celebratory treat had to include plenty of fruit (but I did sneak a few sweets in!)

I have noticed that charcuterie boards have become increasingly popular over the past year. As a mom, I love how these boards promote eating healthy in a joyous way for kids. It also allows me to indulge in adding chocolate to any snack! To celebrate Valentines Day, the boys and I created a heart shaped charcuterie board to drool over.
Any combination of food can be used, but here are a few of our favorite fruit and cheeses for a festive afternoon of snacking. A fun way to get my kids engaged was to have them they each pick out their favorite, “red colored” fruit.

<li>One container of strawberries, halved.</li>
<li>Two containers raspberries, kept whole.</li>
<li>One lb. bag of red grapes.</li>
<li>One container of mozzarella cheese balls.</li>
<li>One bar of sharp cheddar cheese.</li>
<li>One bag Hershey’s chocolate hearts.</li>
<li>Assortment of crackers. We chose only two different kinds of crackers but the sky is the limit!</li>

Directions:
Step 1: Thoroughly wash all of the fruit.
Step 2: Arrange raspberries into a heart shape and fill the center with your preference of treats. We continued to fill in the middle of the heart with the remaining fruits and mozzarella cheese balls for a solid look. I loved how meticulous my oldest was in filling in his grapes. They really took pride in creating the perfect heart!
Step 3: Fill the outsides of your board with desired crackers. Especially with home made arrangements, there is no right or wrong way to place these. We went with piles since it was easier for tiny fingers. I also took this opportunity to add more candy. (You can never have enough chocolate!)
Step 4: Continue to fill the board around the heart if you’re feeding a larger family or group. For us, this was more than enough food and we enjoyed snacking while playing games together.

Tip: We truly were stuffed and still had plenty of fruit leftover. Since most items were already cut, we placed remaining fruit in a Tupperware with a few squirts of lemon juice to keep fresh. Everything was still delicious the next day. It was a mommy bonus to see my middle guy lining up his leftover strawberries in a heart shape before he ate them.

Who doesn’t love breaking out the glue sticks and construction paper in the middle of a long school day? I know it was always my favorite part of the day when I was a kid! Having children of my own, I have volunteered for just about every class I could. What can I say, I love my kids and it was always a great way to bring a little joy to the students. Its also a bonus that I really, really enjoy crafting!
I think these Valentine’s Day projects for elementary students will work for most ages. Older kids will love making the pipe cleaner heart garland. Make it into a fun team building exercise and see if they can span the classroom with the garland. Younger kids will love making the Valentine’s zip line, especially if you fill it with stickers, bubbles and <a href="https://amzn.to/3amlTnA" data-wpel-link="external" rel="nofollow">erasers</a>! I was cleaning out my craft closet this weekend and came across that overflowing crayon bin. Honestly, I felt bad for the crayons. I know it’s weird to feel bad about crayons, but every time I see the I’m reminded of my broken promise. My promise to take them and turn them into something really cool. I picked the bin up and thought about tossing the whole thing in the trash. That would be the quickest way to rid myself of these guilty feelings.

Instead, I remembered that Valentine’s Day is around the corner and I have a house full of super bored kids. This is a great craft that can be made by toddlers (with help) all the way through to teenagers. Kids can get as creative as they want with crayon shaving colors and design. Many of our older children spend a lot of time doing their classwork on iPads and chrome books these days. This craft helps them stretch and use muscles in their hands while they sharpen the crayons and squeeze glue from the bottle! Overall it’s a nice way to combine fine motor skills and creativity.

Inspired by the 2011 movie, Dolphin Tale, we ventured across Florida for our very own adventure with Winter the dolphin. Winter was rescued by the <a href="https://www.cmaquarium.org" target="_blank" rel="noopener noreferrer nofollow" data-wpel-link="external">Clearwater Marine Aquarium</a> and the hospital now continues to save the lives of many sea-life species. The aquarium is now Winter’s forever home and provides endless educational possibilities.
What I loved most about the Clearwater Marine Aquarium was the message they portray throughout the venue. They’re all about the Three R’s: Rescue, Rehab, Release. Their goal is to preserve the quality of life for all creatures that reside at the aquarium. Dolphins, sea turtles, sharks and more belong in the ocean and the marine hospital strives to take care of every rescue to ensure the best possible life. When one of their beloved amniotes can not be returned to sea, they usually have a wonderful home at the aquarium.

The recently renovated Visitor’s Center will take your breath away! With five times the space, they offer a safe experience without crowds by limiting the number of tickets by the hour and offering touch-less transactions. The new 1.5 million gallon tank for Winter and her friends offers nine different viewing windows where dolphins are thrilled to greet visitors face to face.
The moment my sons arrived at one of the oversized windows, they were greeted by Hope, another dolphin featured in the movie, Dolphin Tales and Winter’s best dolphin friend.

The aquarium offers so much more than dolphins! We took a private tour with the very knowledgeable Ms. Tracey and learned more about sea turtles than we have ever imagined. We viewed the behind the scenes specifics of how every piece of food is carefully made for the sea life. We also got to see a nurse shark, otters, stingray, pelicans and more. Each new hallway offered a completely different, exciting experience.
I’m the type of parent who tries to instill educational aspects in every adventure and the Clearwater Marine Aquarium makes learning fun! The kids asked countless questions about sea life or how they can protect the environment. Visit the Rescue Deck and learn all about <a href="https://www.cmaquarium.org/animals/dolphins/rex-rough-toothed-dolphin/" target="_blank" rel="noopener noreferrer nofollow" data-wpel-link="external">Rex</a> and <a href="https://www.cmaquarium.org/animals/dolphins/rudy-the-dolphin/" target="_blank" rel="noopener noreferrer nofollow" data-wpel-link="external">Rudolph</a>, the center’s only rough toothed dolphins. Then watch them perform tricks with their trainers and ask the staff questions while overlooking the bay.
<h4>Where to Eat</h4>
As a parent of young children, I greatly enjoyed the <a href="https://www.cmaquarium.org/visit/visit-info/" target="_blank" rel="noopener noreferrer nofollow" data-wpel-link="external">Shark Bites Cafe</a> located at the aquarium. The portions were big, the prices were reasonable and the seating area was clean and comfortable.

Prior to our arrival at the Marine Aquarium, we checked in to the <a href="https://www.cmaquarium.org/visit/hotel-partners/winter-the-dolphins-beach-club/" target="_blank" rel="noopener noreferrer nofollow" data-wpel-link="external">Winter the Dolphin’s Beach Club, </a><a href="https://www.choicehotels.com/florida/clearwater-beach/ascend-hotels/fl815" data-wpel-link="external" rel="nofollow"> Ascend Hotel Collection</a>. A short drive away from the aquarium, we highly suggest this beach front hotel to unwind in Clearwater Beach, FL. The views, location and dedication to Winter made our weekend extra special!

Lastly, with improved safety measures due to Covid-19, Clearwater Marine Aquarium allows for a relaxing, entertaining day under the sea!
