And when I asked her, if she&#8217;d like to help with a <a href="http://bindannmalveg.de/en/spreading-veganism-in-tromso/" target="_blank">vegan bake sale and later with a presentation about veganism in Tromsø</a>, she agreed on the spot.</p>

  44. <p><strong>Dear Emma, thank you very much for participating in my Vegan Voices series! Maybe you can shortly introduce yourself?</strong></p>
  45. <p>Hello! I’m a 19 year old vegan girl currently studying mathematical sciences at NTNU in Trondheim. I moved here just last summer, until then I lived in Tromsø. I like cooking, camping out in nature, and various arts and crafts.</p>
  46. <p><strong>Since when are you vegan and why did you decide so?</strong></p>
  47. <p>I became interested in veganism when I was thirteen and we adopted a rabbit. She was the first animal I really got to know, and so that made me think more about what makes it okay to kill and eat some animals while we care so much for others. My rabbit’s welfare and happiness mattered so much to me, and it just felt strange that I didn’t value other animals’ happiness just as much. At the same time I stumbled upon a blog by a vegan woman who wrote a lot about the ethics around veganism. These two factors combined were enough to make me decide that veganism was the way to go, but it still took me 3 years to actually become one.</p>
  48. <p><strong>So you became vegan when you were still quite young and living with your parents. How did your parents react?</strong></p>
  49. <p>Well, for some reason I was really afraid to tell my parents that I wanted to go vegan. I guess I was worried they wouldn’t like it, or somehow feel betrayed by me wanting to eat differently or something like that. In addition to that, my parents are divorced, so I would have to “come out” as vegan in two different families. When I eventually told them, they weren’t too negative, I guess they were a little worried, but I think maybe they thought it would go over after a while.   50. <p><strong>Was it difficult? Did you prepare food yourself then?</strong></p>
  51. <p>In the beginning it was very difficult, because I had no idea what to make and I had never really made a lot of food at all. But then the transition was also very gradual for me, I used three years, so that helped. Usually I would make something for myself and then combine it with whatever the others were eating, if there was something vegan there, like pasta or vegetables. That worked out, but I did end up making a lot of my own food.</p>
  52. <p><strong>How was it in school? Did you take lunch with you or did you have a canteen in school? </strong></p>
  53. <p>At school we had to bring our own food, but I found it very difficult to make varied lunches to pack every day. I ended up with a lot of bread with peanut butter. After a while I got slightly more creative, packing leftovers from dinner, making salads, and bringing a lot of fruit.</p>
  54. <p><strong>In general: Do you think it’s easy to live vegan in Norway?</strong></p>
  55. <p>I guess there are better places to be vegan, but it’s not difficult to be vegan here at all. You just need to do some research and get into a routine, and then it’s not hard at all. Veganism is a growing movement here as well, so it’s just getting easier and easier.</p>
  56. <p><strong>You’re living in Trondheim at the moment. Do you have any recommendation for the city?</strong></p>
  57. <p>Well, I don’t really feel that I know the city that well yet, but I have had the <em>hummuskubbe</em> (a huge falafel wrap with hummus) at Persilleriet, which I really liked. And also, there is this amazing vegan collective which I happen to live in, and we’re happy to welcome any fellow vegans who are passing through Trondheim! Or just nice people in general. We won’t exclude the non-vegans.</p>
  58. <p><strong>And do you have any advice you’d like to give to travelers in Norway?</strong></p>
  59. <p>I really like the Norwegian nature. So if you like hiking, I would recommend finding some local mountain or something and go there. When it comes to traveling as a vegan, you are going to have to make a lot of food yourself if you are planning on traveling outside of the large cities. But most places they have basic vegan ingredients, so you’ll survive for sure.</p>
  60. <p><strong>Last but not least: Do you want to share your favourite recipe with us?</strong></p>
  61. <p>That’s difficult! I’m not sure I have a single favorite recipe. But these are really good: <a href="http://minimalistbaker.com/fudgy-vegan-beet-cupcakes/" target="_blank">Fudgy Beet Cupcakes</a>. Minimalist baker in general has really great recipes for baked vegan stuff. (Although not all the recipes are vegan)</p>

  90. <content:encoded><![CDATA[<p>It&#8217;s a while since I posted a recipe (or wrote in general) on my blog. However, while writing my bachelorthesis which goes along with spending a lot of hours in front of the computer I decided to take a break and do something practical: Cooking. And after travelling I&#8217;m in parents&#8217; kitchen where I know what to find where, so let&#8217;s spend some time in the kitchen and relax a bit. Yes, you read right, for me cooking is mostly relaxing, if I&#8217;m not stressed :)</p>
  91. <p>I decided to go for ratatouille. To make a bit more interesting, but still not too complicated or too time consuming, I decided to make a ratatouille-tarte. Ratatouille comes from Nice, a city in Southern France. That&#8217;s why the ordinary ratatouille we know today was formerly called <em>ratatouille niçoise</em>.</p>
  92. <p>It&#8217;s a perfect summer dish due to the lots and lots of colorful and delicious vegetables. I know, it&#8217;s not summer yet, but if you just returned from Norway like me it feels a bit like that :)<span id="more-473"></span></p>
  93. <p><strong>Ingredients for a small springform tin/2 &#8211; 3 persons:</strong><br />
  94. (Double if you have a large springform tin)</p>
  95. <p>For the dough<br />
  96. 250 g spelt flour<br />
  97. 75 g vegan margerine (e.g. Alsan)<br />
  98. 2 tbsp. water<br />
  99. Salt</p>
  100. <p>For the ratatouille<br />
  101. 1 onion<br />
  102. 2 &#8211; 3 garlic cloves<br />
  103. 1 bell pepper<br />
  104. 1/2 zucchini<br />
  105. 1/2 eggplant<br />
  106. 2 tomatoes<br />
  107. Thyme<br />
  108. Rosemary<br />
  109. Olive oil<br />
  110. Salt<br />
  111. Pepper</p>
  112. <p>Mix everything together for the dough, roll out the dough and put it into the springform tin. While cutting the vegetables put it into the fridge.</p>
  113. <p>Cut all vegetables in small pieces and heat a pan with olive oil. First add the garlic and onion and sauté them until translucent. Then add the belly pepper, squash, tomatoes and eggplant. Add thyme, rosemary, salt and pepper. Just try if it&#8217;s done, it usually takes around 10 minutes, but it doesn&#8217;t need to be supersoft as it goes in the oven anyway.</p>
  114. <p>Take the springform tin out of the fridge and add the vegetables. Put the dish into the oven for around 30 minutes/180 degrees. And then enjoy :)</p>

But it also feels like it’s ages ago and I seemed to be a different person that time. I think I did change in the past eighteen months. And that’s good.</p>

  141. <p>There are quite some things I learned while being abroad which I’d like to share with you.<span id="more-397"></span></p>
  142. <h4><strong>1. You can&#8217;t plan everything</strong></h4>
  143. <p>Prejudice say that Germans like to plan. And yes, I guess for me that works as well. But one thing I quickly learnt is that some things are out of your control &#8211; and that&#8217;s okay! You can&#8217;t plan everything.</p>
  144. <p>Most people who go abroad (e.g. for Erasmus, an internship, a new job or whatever) won&#8217;t know anyone in their new home town. So you&#8217;ll meet new people. People who might change you. You&#8217;ll get to know other cultures and might get a different view on some things. You&#8217;ll make new experiences you might not have expected &#8211; good and bad ones.</p>
  145. <p>I never planned to stay six months in Tromsø, in fact I wanted to leave Tromsø at the beginning as fast as possible. I had strong concerns about going there shortly before flying there and in the first weeks I just felt like taking the next flight back to Germany. However, instead of the planned 3,5 months I stayed six months in Tromsø and I really had a hard time leaving it. And I&#8217;m looking forward to New Years Eve in Tromsø now :)</p>

  147. <h4><strong>2. It&#8217;s a small world</strong></h4>
  148. <p>Meeting another vegan from almost your home town in Norway? Works! And I have to say that I&#8217;m from a very small place in rural Germany where I haven&#8217;t met any vegans before!</p>
  149. <p>Meeting a former class mate of someone I got to know in Riga, but who comes from southern Norway? Works!</p>
  150. <p>Meeting someone who does Erasmus in Stuttgart (where I study) who normally studies in Tromsø? Check!</p>
  151. <p>Just some examples which came immediately to my mind, there are even more :) Don&#8217;t be scared, especially Europe isn&#8217;t as big as it might feel at first. And if you&#8217;d like to travel, but you&#8217;re a bit scared: Just take the first step! If you have any serious problems or you feel like going home, you can always do that, it&#8217;s just a short flight away!</p>

  153. <h4><strong>3. Age doesn&#8217;t matter</strong></h4>
  154. <p>It sounds weird to spend your free-time as 22 years-old-girl with people who are already 35? I don&#8217;t mind! I can tell you that I met really different people, some not even 18, some more than 10 years or 20 years older than me. And some of them became quite good friends. What matters is that you get long &#8211; who cares if there&#8217;s an age difference of more than 10 years?</p>
  155. <p>&nbsp;</p>
  156. <h4><strong>4. Comparisons will make you unhappy</strong></h4>
  157. <p>For half of a kilo buckwheat you pay 0,60 € in Latvia, no way you&#8217;ll find that in Germany for such a price. Let alone Norway! But therefore you&#8217;ll pay three times as much for my hair mousse in Latvia. And generally why are German people so serious? Can&#8217;t we be a bit more relaxed like Norwegians?</p>
  158. <p>Advice: When it comes to money, avoid comparing! It&#8217;ll just make you crazy: You cross a border and suddenly the item costs three times as much! When it comes to culture: You can&#8217;t change all people, but take it with you that people and attitudes towards life can be different. Learn from it.</p>

  160. <h4><strong>5. Honesty is the best policy</strong></h4>
  161. <p>Nothing very fancy, new or surprising, but still true.</p>

  163. <h4><strong>6. Flatmates &amp; clean flats are overrated</strong></h4>
  164. <p>Before going abroad it was very important to me with whom I&#8217;m living with. And I&#8217;d appreciate it, if the rooms we share wouldn&#8217;t be a complete mess. Of course I still prefer to live with people I get along with well and a clean kitchen is something nice. However, after living with several different people from different countries abroad (e.g. the messy one and the kitchen police: &#8220;There&#8217;s a spoon lying there for 3 minutes! Can&#8217;t you clean it NOW?&#8221;), I can tell you that you can live with almost everyone and you can deal with most stuff. I&#8217;m generally much more relaxed about it. Don&#8217;t stress yourself.</p>

  166. <h4><strong>7. It&#8217;s all in your mind</strong></h4>
  167. <p>I think many of us limit themselves by thinking to much about their (future) actions. Stop thinking you can&#8217;t do it before you even tried. Stop thinking what other people might think, what might be or what has happened and what people might have thought. <em>It&#8217;s all in your mind.</em> Some people said this sentence word by word to me &#8211; and that&#8217;s good. I still have to remind myself in some moments that some things might be just in my mind.</p>
  168. <p>I had one situation (actually I think there were several, but one which is especially stuck in my head) where I went a bit crazy thinking that my behavior in a certain situation was let&#8217;s say &#8220;strange&#8221; and I was worrying that I made a wrong impression. I was worrying much too much about it &#8211; it was all in my mind. Other people perceived the situation very different from me. And don&#8217;t underestimate that people (and especially those kind of people you want to get along with) are empathic and don&#8217;t expect you to be perfect.</p>
  169. <p>&nbsp;</p>
  170. <h4><strong>8. And I am indeed able to learn a language!</strong></h4>
  171. <p>I have been fighting with Spanish in the past years: Starting a course, stopping it, because it became to stressful, starting another one, learning by myself, learning with tandem partners, starting to learn Russian in Latvia, stopping, &#8230;</p>
  172. <p>However, I didn&#8217;t really came far with all of that. I love languages, especially Spanish and I&#8217;d love to be able to speak it, but it didn&#8217;t work out so well (yet). Somehow I also got a bit demotivated. I really put effort into learning the language and other people don&#8217;t, they just pick up the language in no time without much training.</p>
  173. <p>Buuuuuuut: I am able to learn languages! I noticed (unfortunately a bit late) that I <strong>did</strong> pick up  Norwegian &#8211; just like that, without doing soooooo much for it. Wow! I was just surrounded by the language a lot and learnt quite something.</p>
  174. <p>Okay, some people will say: &#8220;Norwegian and German, that&#8217;s so similar. No surprise that you picked it up.&#8221; Maybe. Though don&#8217;t underestimate it. I didn&#8217;t understand anything when I arrived in Norway. However, even if it is an easy language to learn as a German person, I think I just needed a language-success story!</p>

  176. <h4><strong>9. It’s not money that makes you happy, neither things</strong></h4>
  177. <p>I’d say I’m not rich, neither poor in Germany. In Norway things changed a bit: Standing in supermarkets where everything costs on average about three times as much as in Germany isn’t so much fun and you indeed feel kind of poor living there while doing an unpaid internship living in a ~ 6m² room you still paid more rent for than your room in Germany almost three times as big (hey, at least you could reach everything while sitting on the bed and didn’t need to move ;)).</p>
  178. <p>I can still tell you that I’d definitely do it again. I mostly didn’t mind the small room and well, I admit the supermarket was sometimes discouraging, but I gained so much from my stay in Norway. I’d always swap my big, full-equiped room again for the small room where I could just turn around and nothing else. I don’t need much stuff around me to be happy. The most important things are free and take no space: Love, friends, a smile, a beautiful walk in the nature, seeing the sunset, &#8230;</p>
  179. <p>&nbsp;</p>
  180. <h4><strong>10. You can eat everywhere vegan</strong></h4>
  181. <p>Maybe you won&#8217;t have such a variety as in Germany when it comes to meat-alternatives or for example plant-based milk, but there are so many delicious recipes with simple ingredients which you&#8217;ll find everywhere. Fruits and vegetables in Latvia were just great and Norway had delicious vegan cinammon rolls (similar to <a href="http://www.bindannmalveg.de/blog/finnische-korvapuusti" target="_blank">Korvapuusti</a>). All in all I had no problems with eating vegan in Norway and Latvia &#8211; and there are definitely more vegan friendly places than these two countries, so don&#8217;t worry about food :) I even met some really nice people though veganism. Look out for Facebook groups for your destination, you might get some advice there :)</p>

  184. <p>Sounds strange, but it&#8217;s true. I was never the person who said Germany is ugly, but I still changed my view a bit. Half-timbered houses in my home town? Beautiful and special. German reliability? Something nice as well! These are just two examples of things in Germany which I really appreciate &#8211; and never paid much attention to before going abroad.</p>

  211. <content:encoded><![CDATA[<p>You might think that I can present you a few traditional recipes from Latvia after living several months there. Well, better don&#8217;t look for that on my blog. But I wanted to do a bit better with traditional Norwegian dishes, so I was looking for a recipe to veganize. Not that easy. You have to imagine: The cooking books often have the categories fish, meat and desserts. Vegetable dishes? Nope ;) And vegan alternatives like vegan margarine, tofu and stuff like that are not that easy to find in Norway, but I found something: I ended up with a recipe for cardamom buns (<em>Cardamom boller</em>). You can find cardamom in many dishes here anyway&#8230; which is not that bad as I like cardamom :)<span id="more-382"></span></p>
  212. <p><strong>Ingredients for 10 &#8211; 15 small buns:</strong><br />
  213. 1 package of yeast<br />
  214. 300 ml plantbased milk (e.g. rice milk, soy milk, &#8230;)<br />
  215. 20 ml oil (e.g. sunflour oil)<br />
  216. 500 g wheat flour<br />
  217. 1 tsp. cardamom<br />
  218. 2 tbsp. sugar<br />
  219. 1 tbsp. soy flour<br />
  220. a pinch of salt<br />
  221. Optional: coarse sugar to sprinkle</p>
  222. <p>Mix all ingredients in a bowl and knead it for several minutes. Then cover the dough and let it rise for around an hour at a warm place until you form small buns out of the dough. If you like, you can also sprinkle the buns with coarse sugar or press one side into a bowl filled with coarse sugar. Then let it rise for 15 more minutes. Finally it comes to baking: Put them into your oven for around 20 &#8211; 25 minutes.</p>
  223. <p>They taste fantastic if they&#8217;re still warm and with some jam. For example I ate them with blueberry-cinnamon-jam&#8230;. yummy! The buns are not supersweet though, so you can also eat them with salty things :)</p>

And shortly before I went back to Germany, I was thinking. A year abroad changes you, in my case it actually changed my life and my views on some things even more than I expected.</p>
  248. <p>So I decided that there are some things I&#8217;d like to do different, some &#8220;good resolutions&#8221; for my time back in Germany. I have to admit, I&#8217;m already a month in Germany when I&#8217;m writing this now&#8230; So I hope I haven&#8217;t already forgot some of my resolutions ;)<span id="more-399"></span></p>
  249. <p>&nbsp;</p>
  250. <h4><strong>1. Get rid of some of my stuff</strong></h4>
  251. <p>I went to Latvia with 23 kg and my hand luggage. Same with Norway. When I went to Norway I did not only pack my clothes and some very few personal things, but also a supply of drugstore articles and a little bit of food, as I knew that both is really expensive in Norway. (It might sound a bit stupid, but I can tell you that I&#8217;m glad it took that stuff with me instead of stuffing my suitcase only with clothes!) And guess what? I (almost) never missed anything! I was happy with the very few things I had! Surprisingly I wasn&#8217;t often thinking &#8220;I don&#8217;t have anything to wear&#8221;, in fact I feel like I&#8217;m thinking this more often here in Germany which is quite paradox because I do have much more stuff here than I had in Norway and Latvia. I guess you get picky when you have too much stuff ;)</p>
  252. <p>There is also a series of advantages of not possessing so much stuff. So many that I just decided to write a blog post about minimalism in the near future :) But I can tell you: I felt better having less things around me!</p>
  253. <p>So my first resolution: Get rid of some of my stuff! That&#8217;s not that easy for me as I tend to collect too much stuff, having a hard time throwing away things ;) But do I really need stuff I even forgot that it exists until I came back and saw it?</p>

  255. <h4><strong>2. Be active for animal rights</strong></h4>
  256. <p>I became quite active for animal rights in Norway. Sometimes it was stressful, sometimes I was thinking: &#8220;What are you actually doing? Certainly not what a typical person abroad is doing&#8221;. I was also travelling far less than in Latvia (but this had other reasons as well), spending much more time planning and organising animal rights &amp; vegan stuff. <em>But it felt right.</em> And I&#8217;d do it again like that. I do not regret spending not that much time on e.g. travelling.</p>
  257. <p>First of all I met wonderful people through that. That wasn&#8217;t why I did it and I actually didn&#8217;t expect it. But therefore it&#8217;s even nicer that it happened. Secondly I felt the need to do something. Maybe I felt it even more as I wanted to do something actively in Latvia, but it was almost impossible with the language barrier. (In that sense Norway is wonderful, although I couldn&#8217;t speak Norwegian I had so many possibilities and people have absolutely no problem with me speaking English.) So feeling the need to do something I came up with that <a href="http://bindannmalveg.de/en/spreading-veganism-in-tromso/">Vegan Evening idea as well as the Worldwide Vegan Bake Sale</a>. And that&#8217;s how it all started. It worked, so I continued with other stuff.</p>
  258. <p>Back here in Germany I don&#8217;t know anyone involved in animal rights. But let&#8217;s change that. For the animals. For the planet. For the people.</p>
  259. <p>&nbsp;</p>
  260. <h4><strong>3. Continue learning Norwegian</strong></h4>
  261. <p>I have to admit that I didn&#8217;t do as much as I wanted for my Norwegian skills in Norway. There were often things which seemed more important at that very moment (*coughing* often from the category above). However, I was (fortunately) surrounded by a lot of Norwegian which was difficult at first (I remember my second day of the internship with three team meetings each lasting one hour&#8230; completely in Norwegian).</p>
  262. <p>So at least I developed a lot of passive knowledge, means I can understand quite something, but it&#8217;s hard for me to speak by myself.</p>
  263. <p>Now back in Germany I think it&#8217;s a pity to just stop as I did make an effort to learn Norwegian before I went to Norway and in Norway. If I stop, I&#8217;ll just forget everything and after spending so much time with the language&#8230; yes, once again, it would simply be a pity.</p>
  264. <p>What is the gain from learning Norwegian? Good question! I don&#8217;t know, maybe I&#8217;ll return to Norway one day? Then it&#8217;d be quite helpful in order to find a job there. And if I don&#8217;t&#8230; well, then I&#8217;m at least able to communicate with friends in their native language which is nice, too.</p>

  266. <h4><strong>4. Don&#8217;t forget what you&#8217;re able to</strong></h4>
  267. <p>That&#8217;s something personal. I don&#8217;t know how you&#8217;d assess me based on my blog, but without knowing me personally. But I can tell you I&#8217;m not that confident girl just going abroad like that, who gets to know thousands of people in no time and I don&#8217;t know what.</p>
  268. <p>To be honest I&#8217;m surprised by myself how well I managed everything. It feels a little strange to say that it was me who organized public events, that it was me who gathered these people, &#8230; I think I did not know that I was really able to do that in such a good way.</p>
  269. <p>And that&#8217;s something I should keep in mind when daily life is catching up with me here in Germany. It&#8217;s easy to become pushed back in your old habits (and these are habits of someone who doesn&#8217;t do these things, who might think he&#8217;s not able to and who doesn&#8217;t dare to do these things because people don&#8217;t expect it from her).</p>
  270. <p>&nbsp;</p>
  271. <h4><strong>5. Surround yourself with like-minded people</strong></h4>
  272. <p>I think you can learn much from people who are different from you. Nevertheless I think it&#8217;s also important to surround yourself every now and then with people who are similar to you, have similar values, similar opinions on different topics, &#8230; Feeling like you always have to defend your views, explaining them and so feeling sometimes simply not understood can be really exhausting. Being surrounded with like-minded people gives you strength and keeps you motivated. For example seeing everyone else around you eating dead animals might be hard enough, but feeling like everyone around you thinks <em>you</em> are strange because you don&#8217;t eat dead animals is harder.</p>

  274. <h4><strong>6. Be open and positive towards everyone &#8211; you don&#8217;t know their story</strong></h4>
  275. <p>That&#8217;s nothing very new for me. I always try to be welcoming, positive and without prejudice towards other people. Nonetheless it feels even more important to me now and I feel like I should sometimes be a little bit more careful that prejudice other people might have don&#8217;t rub off on me.</p>

  277. <h4><strong>7. Get away every now and then</strong></h4>
  278. <p>When I&#8217;m studying, I&#8217;m usually studying. That doesn&#8217;t mean I&#8217;m sitting with a book on my desk all day, not really. But I rarely leave the town where I&#8217;m living. But leaving every now and then for just a day, a weekend or so might make me feel better. Just to see something different, to escape the daily life, &#8230; it&#8217;s refreshing and makes me feel more alive.</p>

  308. <content:encoded><![CDATA[<p>It&#8217;s a while since I heard about Lívance for the first time &#8211; to be exact it was when I was in Trondheim and visiting the <a href="http://bindannmalveg.de/en/trondheim-vegan-fair/" target="_blank">Trondheim Vegan Fair</a>. When I was in that nice city a girl from the Czech Republic who did her erasmus semester there hosted me. She is a really good cook dreaming every now and then about working in a vegan café. Her cooking skills would definitely allow that.</p>
  309. <p>One dish she made was Lívance. Lívance are Czech pancakes. I usually don&#8217;t really like pancakes. And I actually don&#8217;t understand why everyone loves pancakes. But Lívance are different, I really liked them! (Actually a pity that I found pancakes I like, not that good for my body shape ;))</p>
  310. <p>But what makes Lívance different from normal pancakes? <span id="more-392"></span>The recipe of Lívance includes yeast, therefore they become quite fluffy and simply delicious. Traditionally you top Lívance with jam or other sweet toppings. I used hot raspberries with marple sirup <img src="https://s.w.org/images/core/emoji/13.0.1/72x72/2764.png" alt="❤" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
  311. <p><strong>Ingredients for about 12 pancakes:</strong></p>
  312. <p>250 ml plant-based milk (e.g. rice milk, almond milk, soy milk, &#8230;)<br />
  313. 1 tbsp. oil + oil for frying<br />
  314. 200 g flour<br />
  315. 1/2 package of yeast<br />
  316. 1 tsp. salt<br />
  317. 2 tsp. sugar</p>
  318. <p>A topping you like, e.g. jam, fruits, <a href="http://tasty-yummies.com/2014/03/04/make-whipped-coconut-cream/" target="_blank">whipped coconut cream</a>, marple sirup, agave sirup, chocolate sauce, &#8230;</p>
  319. <p>Mix all ingredients for the dough in a bowl and let it rise for around an hour. Then heat some oil on your pan and add a spoon of the dough. Lívance are smaller than regular pancakes, so one spoon is already enough for a great pancake. Turn it once and fry it until both sides are golden brown.</p>
  320. <p>Last but not least add a topping of your choice. I used hot raspberries with marple sirup.</p>

  343. <content:encoded><![CDATA[<p>People write about their experiences abroad &#8211; I saw that a lot of times. But a lot of people who lived abroad just stop writing when they&#8217;re back home. Do they just continue living like before? It feels difficult for me. Probably because I always was the type of person who is not good at letting things (or people) go.<span id="more-376"></span></p>
  344. <p>I&#8217;m back in Germany for a month. On one side it feels like ages ago when I was in Tromsø. And I don&#8217;t dare to say anything about Latvia&#8230; have I really been there just 10 months ago? And lived there for 4 months? Having my ups and downs, travelling all over the Baltic countries or just strolling over the central market on a sunny day? Luckily I don&#8217;t feel 100 % back in my old routines which is mainly because I just moved into my old room (which I just subrented for a year) a week ago, before that I was travelling, meeting a good friend of mine, being at my parents place. And university hasn&#8217;t started yet.</p>
  345. <p>But it was strange when I entered our flat and my room a week ago. When I was at the university campus and in the city center. It seems like time has stopped here. Everything looks (almost) the same, everything smells the same, everythings works the same way. <em>But I don&#8217;t feel the same.</em> I don&#8217;t feel like fitting in here that perfectly anymore (if I ever fitted in here). And that I actually didn&#8217;t want to leave Tromsø (I just have to in order to finish my studies) doesn&#8217;t make it better. Life is continuing in Tromsø without me. Even if I get the unlikely opportunity to return there at some point it won&#8217;t be the same. It will never be.</p>
  346. <p>Before I left Germany last year I did expect that living a year abroad would change something &#8211; would maybe change myself a bit. But I didn&#8217;t know that it would change me so much (for good) neither did I expect that it would confuse me so much regarding what I actually want to do in my life and mess up the few plans I had completely. And I didn&#8217;t expect it to be so hard to return back to the German city I&#8217;m studying. Or coming back home? &#8220;Home&#8221; is a difficult concept and I&#8217;m not always sure where home is.</p>

  367. <content:encoded><![CDATA[<p>You decided to travel to Tromsø? Congratulations, you decided for one of the most beautiful cities in Norway! (Okay, am I allowed to say that after only visiting Oslo and Trondheim (the other places don&#8217;t count as cities)? Plus I lived in Tromsø and loved it, so I&#8217;m a bit biased =P)</p>
  368. <p>Neverless, I think Tromsø is so worth a visit! Here are my top things to do there:<span id="more-315"></span></p>
  369. <p>&nbsp;</p>
  370. <h4><strong>1. Walk around Prestvannet</strong></h4>
  371. <p>Maybe I should just let you know at first what Prestvannet is: Prestvannet is a beautiful lake easy to reach from the city centre. I just realised again that I have thousands of photos of that place. Well, I also lived nearby, so it was very easy for me to go there, but it&#8217;s also worth walking up the hill from the city center. It will take you around 20 minutes walking from Storgata (<a href="https://www.google.de/maps/dir/69.650456,18.9568146/69.6577393,18.9302904/@69.6549306,18.9424131,15.25z/data=!4m2!4m1!3e2" target="_blank">see map here</a>) and depending on the season you&#8217;re travelling you&#8217;ll find a white wonderland or a lively green place. Don&#8217;t worry, with lively I don&#8217;t mean that it&#8217;s crowded by humans, there are just so many birds. So if you like to watch birds, that&#8217;s also a perfect place for you. Otherwise what about having a picnic there? But be careful, you might get some company who&#8217;d like to fly away with your food ;)</p>
  372. <p>It&#8217;s winter time? You can go skiing there! Lysløypa  (the ski track) is going past Prestvannet and it&#8217;s perfect to start skiing there. At least I had my first skiing experience ever there :) And in the evening you can go and hunt the northern lights there. It&#8217;s one of the best places within the city to see them, I heard. You&#8217;d like to have more information about the northern lights? Read on, I&#8217;ll say something more about it later in the article!</p>
  373. <p>Some more facts for you: You can easy walk around the lake, it&#8217;s around 2 km of walking. If you walk around there in winter time don&#8217;t underestimate the snow. I was probably acting very inexperienced with all the snow around me, as I never had been in a place with so much snow, so I didn&#8217;t expect the snow to be that deep. <a href="http://www.bindannmalveg.de/blog/eine-woche-norwegen/" target="_blank">Well, made some experiences then</a> =P</p>

  376. <h4><strong>2. Hike up Storsteinen</strong></h4>
  377. <p>You want to see Tromsø and its surroundings from above? Very easy and definitely something you shouldn&#8217;t miss because the view is simply gorgeous!</p>
  378. <p>Right next to the city center of Tromsø you have the 421m high mountain Storsteinen. If you want to make it easy for yourself, you can just take the cablecar (<em><a href="http://www.fjellheisen.no/en" target="_blank">Fjellheisen</a></em>) up there. It takes only four minutes, costs 150 NOK (and 110 NOK for students) and goes every 30 minutes. The last ride back depends on the season, during the midnight sun period it&#8217;s only at 1am, I think. The cable car station is in Solliveien 12 in a part of Tromsø called Tromsdalen. It&#8217;s around 40 minutes walking from the city center of Tromsø: Just go over the bridge and then you&#8217;ll also pass the arctic cathedral. Another option is to take the bus no. 26 in the direction of Tromsdalen, you can take the bus at the bus stop &#8220;Sjøgata&#8221; which is directly in the city center next to &#8220;Peppes Pizza&#8221;.</p>
  379. <p>You can also hike up there in around 1 to 1,5 hours. I&#8217;d recommend to take the path beginning in Fløyvegen. Another option is to go up straight under the cable car line&#8230; but that&#8217;s really steep!</p>
  380. <p>Up there you have a gorgeous view over Tromsøya (the island which Tromsø is located on) and the mountains topped with snow at every time of the year. And you want to touch snow in the middle of the summer? It&#8217;s likely that you&#8217;ll find some remaining snow. You can also go up to Fløya, the very top of the mountain. You don&#8217;t need to be very sporty, the way is going up very slowly.</p>
  381. <p>If you want to rest a bit, take a break at the Fjellheisen station. There&#8217;s a restaurant, but also an area inside where you can sit and eat your own brought food without ordering anything. And it&#8217;s very good to warm up in winter time!</p>
  382. <p>With some luck you are able to see the northern lights here in winter time. In summer time you have one of the best views for the midnight sun here.</p>
  383. <p><span style="color: #ff0000;">Please note that the cable car is not working until February/March 2016 due to reconstruction!</span></p>

  387. <p><em>Wait: <a href="http://www.bindannmalveg.de/blog/riga/" target="_blank">Wasn&#8217;t visiting the library already your suggestion in Riga</a>? I know you&#8217;re librarian, but libraries&#8230; I don&#8217;t know&#8230; </em></p>
  388. <p>Stop! You really should visit the library or at least have a look from the outside. It&#8217;s one of the nicest (if not the nicest) building in Tromsø. And I&#8217;m not only saying that because I had the possibility to work there for a while.</p>
  389. <p>Formerly the library was a cinema, but it was renovated and rebuild in 2005. Since then the number of visitors and library users increased a lot which is very understandable considering the nice atmosphere, the modern design, <a href="http://bindannmalveg.de/en/spreading-veganism-in-tromso/" target="_blank">the nice events going on there</a> and the awesome view you have at <em><a href="http://www.tromso.kommune.no/bibliotek" target="_blank">Tromsø bibliotek og byarkiv</a></em>. So why not enjoying a relatively cheap coffee there while checking your e-mails thanks to the completely <strong>free usable WIFI</strong>?</p>
  390. <p>By the way the library is one of the most popular libraries in whole Norway!</p>

  393. <h4><strong>4. Have a walk through the city centre and enjoy some vegan cake at Sivertsens Kafe</strong></h4>
  394. <p>Well, if you ask me about my honest opinion: I don&#8217;t think Tromsø has a supernice city center. I was surprised how small it is when I arrived there for the first time and also the houses don&#8217;t look that nice. However, visiting Tromsø without seeing the city center seems strange. And if you go there, you can also go for a piece of cake to Sivertsens Kafe. It&#8217;s a cozy all-vegan cafe in Vestregata 48 (around the corner from the library)/next to the market place. Sivertsens has also small concerts, a book club is meeting there, &#8230; so it&#8217;s not only known because of their food :)</p>

  397. <h4><strong>5. Relax at Telegrafbukta</strong></h4>
  398. <p>That place definitely had to be mentioned in this list! I found it always so beautiful to sit next to the water and look at the gorgous white mountains around. It&#8217;s simply an awesome view there. At every time of the day, which means it&#8217;s also a very nice place to watch the sunset.</p>
  399. <p>Are you brave? Then you can go swimming here, there&#8217;s also a small beach. (I have to admit I was never brave enough, it always felt too cold for me.)</p>
  400. <p>Telegrafbukta is the south point of the island and easily reachable from the city center by walking, it will take you around 30 minutes. Otherwise you can take the bus here, the bus stop is also called &#8220;Telegrafbukta&#8221;.</p>
  401. <p>In the summer there&#8217;s also a music festival (<em><a href="http://bukta.no/" target="_blank">Buktafestival</a></em>) taking place here and attracting around 16.000 people from all over Norway.</p>

  404. <h4><strong>6. a) In the summer: Enjoy the midnight sun</strong></h4>
  405. <p>The midnight sun is one of the most fascinating things for tourists, I guess. Because midnight sun means sun &#8211; 24 hours a day from the end of May to the end of July.</p>
  406. <p>As a person who can usually sleep whenever and wherever when she&#8217;s tired, I was actually quite surprised that I indeed had some problems to get used to the daylight at first. I remember coming home at around 23.30 one day and I felt like &#8220;Oh, it&#8217;s so early, I can do a lot of stuff.&#8221; Well&#8230; the next day I had to work in the morning, but the light was just so inviting to stay awake.</p>
  407. <p>However, after a while I got used to it. And then it&#8217;s beautiful to walk around at midnight and to have sunlight.</p>
  408. <p>Tip: To see the midnight sun at its best consider going to Sommarøy (see below) :)</p>
  409. <h4><strong>b) In the winter: Be fascinated by the northern lights</strong></h4>
  410. <p>That&#8217;s why many, many people come here, really a lot of people want to see the northern lights in Tromsø. And it&#8217;s one of the best places on our planet to see them. But you need some luck and it&#8217;s not that easy to see them.</p>
  411. <p>What I didn&#8217;t imagine like I saw them for the first time was that they move so quickly. So you sometimes really need to be at the right time at the right place in order to see them. So be patient :)</p>
  412. <p>And seeing them just from the street in the city center? Unlikely. At least you have to be very lucky then because the aurora borealis needs to be very strong then. To have better chances stay away from artificial light like street lamps and such. At the best you leave the city, but also Prestvannet is a good place to see them I heard.</p>
  413. <p>But it also depends heavily on the weather, if you&#8217;ll be able to see these magic lights. The nights need to be clear and cloudless and of course in summer time you won&#8217;t see them because it&#8217;s not dark. (But they&#8217;re actually there then as well!) Best chances are from September to the middle of April. When I was in Tromsø I also liked to use <a href="http://norway-lights.com/#tromso" target="_blank">this aurora forecast</a>.</p>

  415. <h4><strong>7. Have a trip to Sommarøy</strong></h4>
  416. <p>Okay, I have to admit that Tromsø isn&#8217;t the biggest place and you don&#8217;t need that much time to see everything on the island. So consider leaving Tromsø as well, you won&#8217;t regret it. Just one hour drive you&#8217;ll find <a href="https://www.google.de/maps/dir/Troms%C3%B8,+Norwegen/Sommar%C3%B8y,+Troms%C3%B8,+Norwegen/@69.6386077,18.2009776,10z/data=!3m1!4b1!4m13!4m12!1m5!1m1!1s0x45c4c4526c3b71fd:0x23dca858e6ebed3!2m2!1d18.9553238!2d69.6492047!1m5!1m1!1s0x45c4ae3fa50818bf:0x34ed162bce063804!2m2!1d18.0347937!2d69.6276918" target="_blank">Sommarøy</a>, a small coastal village surrounded by sandy white beaches.</p>
  417. <p>If you don&#8217;t have a car or plan to rent one, you can (besides hitchhiking) take the bus. There are a few buses, you can check the exact timetables <a href="http://www.tromskortet.no/?lang=en_GB" target="_blank">here</a>. Choose Tromsø Prostneset or Havnegata as starting point, these two bus stops are directly in the city center. Bus no. 420 goes directly from Tromsø to Sommarøy taking around 90 minutes.</p>

  421. <p>It might sound odd, but from time to time I was just walking around, thinking how lucky I am to live in such a beautiful place and just enjoyed the view.</p>
  422. <p>There are a lot of places with a nice view, I already mentioned some of them (Telegrafbukta, Storsteinen). Another place to look in the direction of Storsteinen and a bit over the city is the T<a href="https://www.google.de/maps/place/Troms%C3%B8+maritime+skole/@69.6541275,18.9527223,15z/data=!4m2!3m1!1s0x45c4c4520aef0325:0xc7ce0e8ddbd106a9" target="_blank">romsø maritime skole in Sommerfeldtsgate 74/76</a>. It&#8217;s around 15 minutes walking from the city center.</p>

  425. <p>Other things you could do in Tromsø are for example to have a look in the <strong><a href="http://www.perspektivet.no/en/" target="_blank">Perspektivet museum</a></strong>. It&#8217;s a photography museum right in the main street (<em>Storgata</em>), the entrance is free. And you wonder how the famous <strong>Hurtigruten ships</strong> look like? Of course you can have a look at them in the harbour, but did you know that you can also enter them for free as a guest while they stop in Tromsø? And last but not least, the <strong>botanical garden</strong> next to the university can be nice as well. Entrance is free.</p>

  427. <h4><strong>How long do I need to do all the things you mentioned?</strong></h4>
  428. <p>Tromsø is not that big, so you can almost always combine the things mentioned above and do them on the same day. Considering that I also suggested a day outside of Tromsø in Sommarøy I&#8217;d say you are able to do all the mentioned things in three days.</p>

  454. <p>During my time in Tromsø I met several animal rights activists, one of them was Jeanett. Like me she also belonged to these persons who&#8217;d love to work professionally for animal rights. And guess what happened? At the end Jeanett left Tromsø even earlier than me because she got a job offer as activist coordinator from <a href="http://www.dyrsrettigheter.no/noah/noah-for-animal-rights/" target="_blank">NOAH, Norways animal rights organisation</a>. I&#8217;m really happy that she could make her dream come true and that she decided to tell us about it today :)<span id="more-323"></span></p>
  455. <h4 style="text-align: center;"><strong>Interview</strong></h4>
  456. <p><strong>Hi Jeanett! Nice that you decided to take part in the <a href="http://bindannmalveg.de/en/tag/vegan-voices/" target="_blank">Vegan Voices project</a>! Would you like to introduce yourself a bit at first?</strong></p>
  457. <p>I’m 30 years old and I’m an animal rights activist. I have a Bachelor degree in social work and started on a master degree in peace studies in Tromsø, but since I got my dream job as an activist coordinator in NOAH- for animal rights (Norwegian: <em>NOAH &#8211; for dyrs rettigheter</em>), will take a break from my studies.<br />
  458. I would also like to add that I’m an optimist who believes that someday all humans will recognize that animal’s ability to suffer is no different from ours, and that the exploitation and killing of animals will no longer be socially acceptable. Just the last couples of years gives great reason to be an optimist for the animals. More and more people are waking up to grasp the massive injustice and violations being committed to billions of sentient beings every year. This would not be possible if it wasn’t for all the wonderful human beings out there who choose to raise their voices for the speechless. Thanks to all the committed animal rights activists in the world, we are now seeing some serious changes. Also veganism is now becoming more and more mainstream. It is so wonderful to witness these changes.</p>
  459. <p><strong>You’re vegan since 2010</strong><em>.</em><strong> What was your reason to go vegan and how did you come across veganism?</strong></p>
  460. <p>I went vegan for the animals. I believe that every animal, as the human animal, has the right not be exploited, abused and killed. When it dawned on me how much misery and suffering we inflict on defenseless animals, no matter how humanely and organic we claim it to be, I just couldn’t be part of it anymore &#8211; and progressed from vegetarian to vegan. I haven’t looked back since. I’ve learned about veganism through literature, social media and wonderful people I have met along the way.</p>
  461. <p><strong>You recently started working as activist coordinator for NOAH. For the people outside of Norway, can you shortly explain what NOAH is and what they are doing?</strong></p>
  462. <p>NOAH &#8211; for animal rights (<a href="http://www.dyrsrettigheter.no/" target="_blank">NOAH &#8211; for dyrs rettigheter</a>) is an organization for people which wants a world without animal exploitation and who work tirelessly to ensure that such a world is achieved as quickly as possible. NOAH started in 1989 by a group of activists with experience in national and international environmental and animal rights work. Today, NOAH has over 7,000 members and thousands of active supporters who promotes NOAHs message of respect for animal life. In most cities of Norway, there are local activists and NOAH-helpers. NOAH strives to influence at all levels, and across all social groups. They meet politicians and influence legislative changes. They have eye-catching campaigns to draw media attention to animal rights and share information to over one hundred thousand people each year. They also hold conferences and lectures in schools, write articles and feature articles, demonstrate, campaigne &#8211; and rescue individual animals. NOAH also organizes the annual NOAH torchlight hike against fur, which is Europe&#8217;s largest event for fur animals!</p>
  463. <p><strong>How do you like your new job?</strong></p>
  464. <p>I love it! I’ve dreamt about working for NOAH for many years, and I still can’t believe that I now have the privilege to dedicate all my time to work for animal rights. It’s so amazing to be surrounded by dedicated animal friends on my workplace, we even have two cute dogs there. I feel like the luckiest person on the planet!</p>
  465. <p><strong>What did you do to get this job? Did you have any special qualifications? I guess there are quite some people who’d like to have that kind of job you have :)</strong></p>
  466. <p>I have been active in the organization since 2009 and initiated several events. My motivation for NOAH and animals have, in these years, always been great and I think this might have contributed to me getting the job. I did apply and went through interviews as normal, but if I have specific qualifications, I’m not aware of them. My advice for anyone who wants to work for an animal rights organization is to be as active as possible and learn as much as you can about the issue. I found out early that out of all the animal rights organizations in Norway, NOAH was the best and most effective. And more importantly, they work for all animals.</p>
  467. <p><strong>How can we imagine your typical working day?</strong></p>
  468. <p>As an activist coordinator in NOAH I will do lots of exciting things, my main job will be to coordinate NOAH activities among volunteers across the country. I will also be organizing events, keeping order of all the NOAH stands and event material and promote NOAH&#8217;s work and activities through social media etc., to name a few.</p>
  469. <p><strong>Do you have any projects you’re planning in the near future? If so, what are they about?</strong></p>
  470. <p>The main focus now is organizing the annual NOAH torchlight hike against fur. Last year NOAHs torchlight was held in 16 different cities and towns in the country, in the capital alone there were between three to four thousand people who showed their support for fur animals. Hence, it’s a big event and a lot of organizing that needs to be done, and we have already started.</p>
