  49. <p>Procedimento: cuocete il cavolo cappuccio nella vaporiera (se lo mettete in microonde bastano 10 minuti) e fullatelo, fate soffriggere la cipolla e aggiungete la salsiccia, aggiungete il riso, tostatelo e sfumatelo con del vino bianco. Aggiungete 2 mestoli per volta di brodo vegetale (non lasciate mai asciugare troppo). A metà cottura aggiungete il cavolo cappuccio. A cottura quasi ultimata mantecate con burro e formaggio.<br />

  77. <p>Fare tostare il riso in padella per un paio di minuti con un filo d&#8217;olio e sfumare il riso con il vino bianco. Aggiungere il brodo fino a coprire totalmente il riso. Tagliare finemente le pere e le noci sminuzzate e metterle in padella, comprendo di brodo. Lasciare cuocere per circa 15 minuti &#8211; assaggiare è sempre la tecnica vincente <img src="https://s.w.org/images/core/emoji/11.2.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /><br />
  78. Mantecare con lo zola a 2 minuti dal termine della cottura.<br />

  109. <p>Preparazione:<br />
  110. Fate bollire il riso in acqua salata, una volta cotto scolatelo e lasciatelo raffreddare. Nel frattempo tagliare a pezzettini pomodori secchi e le uova. Unite i due preparati e aggiungete gli altri ingredienti e la vostra insalata di riso Ermes sarà pronta da gustare!<br />

  139. Lessare il riso al dente in una pentola con acqua già salata; una volta pronto, lasciarlo raffreddare su un grosso piatto/vassoio.<br />
  140. Nel mentre, emulsionare l&#8217;olio, il succo di un limone, prezzemolo e aglio lavati e tritati, sale pepe e la scorza gratuggiata di un limone. Aggiungere poi il parmigiano grattuggiato: questa è la salsina con la quale andremo a condire il nostro riso.</p>
  141. <p>Amalgamare il tutto e creare tanti palline con il riso, grandi poco più di una noce &#8211; decorare ogni pallina con un cappero.</p>
  142. <p>I limoni rimasti ci servono per ornamento: appoggiare ogni pallina su una fetta di limone tagliata sottile. Servire fresco.</p>

  169. <p>Cuocere al vapore i broccoli, frullarli con un mestolo di acqua bollente o brodo vegetale. Aggiungere sale pepe e parmigiano e mescolare bene. Contemporaneamente rosolare la pancetta con olio extravergine d’oliva e uno spicchio d’aglio. Unire i due preparati, aggiungere la pasta appena scolata (preferibilmente corta) girare bene e buon appetito!</p>

  193. Tritare la cipolla grossolanamente e metterla a rosolare in una padella, aggiungere il cavolo nero lavato e tagliato a striscioline e lasciarli cuocere per qualche qualche minuto.<br />
  194. Aggiungere le lenticchie e lasciarle cuocere per altri 15 minuti.<br />

  225. A circa 2 minuti dalla fine della cottura, mantecare il tutto con lo zola, fino a raggiungere una buona cremosita.<br />
  226. Servire caldo con un po&#8217; di pepe nero a piacere.</p>

  332. <p>Lavare il radicchio accuratamente e tagliarlo a striscioline &#8211; nel caso vogliate servirlo come nella foto, mettere da parte due belle foglie e un po&#8217; di striscioline crude, che ci serviranno per l&#8217;impiattamento <img src="https://s.w.org/images/core/emoji/11.2.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
  333. <p>Tagliare lo speck, il formaggio e la cipolla finemente, in modo da avere tutto pronto per i vari passaggi.</p>
  334. <p>In una pendola antiaderente, mettere lo speck e la cipolla a rosolare per qualche minuto, poi aggiungere il riso e lasciarlo tostare per alcuni minuti.</p>
  335. <p>Una volta finita la procedura, inserite il radicchio e coprite il tutto con il brodo e lasciarlo cuocere. E&#8217; meglio aggiungere il brodo poco alla volta, in modo da non avere troppo brodo in padella quando il riso sarà già cotto &#8211; il segreto di tutti i risotti è sempre la cottura perfetta del riso <img src="https://s.w.org/images/core/emoji/11.2.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
  336. <p>Quando mancano un paio di minuti alla cottura completa del riso, inserire il formaggio e mantecare delicatamente il tutto.</p>
