I just set both pressures at 10 PSI then crack the valves open at the torch handle to where I need them to be. Just start EASY &amp;amp; work them up to the capabilities of the tip. (or just do it as above).&lt;/p&gt;&lt;p&gt;* Also, tip sizes vary for the size metal being welded: Tip size 1 = 1/16&quot; metal and tip size 5 = 1/4&quot; as examples.&lt;/p&gt;&lt;p&gt;* It really isn&#39;t hard to figure out if the tip your using is too small or too big for the job. (Too small won&#39;t get everything hot enough, &amp;amp; too large will tend to blow everything away).&lt;/p&gt;&lt;p&gt;* Crack open the gas &amp;amp; light it right away.&lt;/p&gt;&lt;p&gt;* Crank up the gas till it separates from the tip then back it off.&lt;/p&gt;&lt;p&gt;* Hit the O2 until the blue flame first gets short &amp;amp; bright. This is a &quot;neutral flame&quot;, used for most jobs.&lt;/p&gt;&lt;p&gt;Note that the torch tip &amp;amp; the filler rod should be about at a 45 degree angle.&lt;/p&gt;&lt;p&gt;*Too steep can make the penetration too deep &amp;amp; not pre-heat / too shallow can cause too little penetration.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Let&#39;s do it:&lt;/p&gt;&lt;p&gt;* Starting out, it can give you good practice to just put the flame on metal without a filler rod. This helps you get used to the process without worrying about the filler rod too.&lt;/p&gt;&lt;p&gt;* Heat the metal till there&#39;s a puddle, then begin moving the flame to create a bead.&lt;/p&gt;&lt;p&gt;* Get the blue part of the flame nearly touching the metal.&lt;/p&gt;&lt;p&gt;* Move in a circular or semi-circular fashion to make it into a bead.&lt;/p&gt;&lt;p&gt;* Aim the flame in the direction you&#39;re trying to make the bead. (forehand welding).&lt;/p&gt;&lt;p&gt;* Don&#39;t get ahead of the bead or it can make it not hot enough at the puddle.&lt;/p&gt;&lt;p&gt;* Do this for a few times before using a filler rod.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Introduce a filler rod: (usually the same diameter as the pieces that are being welded).&lt;/p&gt;&lt;p&gt;* start the same way as above and keep the rod at a 45 degree angle also.&lt;/p&gt;&lt;p&gt;* Dip the rod in the puddle frequently, but try not to heat the rod with the flame. (heat the puddle, not the rod).&lt;/p&gt;&lt;p&gt;* Practice running straight beads then work up to following curved paths. (some schools have you write your name with a gas welding bead).&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;THEN PRACTICE till you can run decent looking beads.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Note that you should be tacking pieces together at least at both ends of where you&#39;re welding, to prevent moving of the gap.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Problem solving:&lt;/p&gt;&lt;p&gt;* Your flame is fluctuating: gas pressure or supply may be low.&lt;/p&gt;&lt;p&gt;* Popping sound: Hot tip, plugged tip, pressure too high.&lt;/p&gt;&lt;p&gt;* Flame stops: 02 pressure high.&lt;/p&gt;&lt;p&gt;* Whistling noise &amp;amp; the flame backs up into the torch: (backfire), 02 or gas too low, the tip is clogged or dirty, or the tip touched the puddle.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;BRAZING:&lt;/p&gt;&lt;p&gt;* Many things are similar about gas welding and brazing: but remember that with brazing you aren&#39;t melting the parent metal, just the brazing material (such as brass).&lt;/p&gt;&lt;p&gt;* The brass and the parent metal MUST be clean and hot enough for there to be a good joint. (Use flux! Place the soft butter in a bowl. Finely chop the sorrel and tip onto the butter, season with salt and pepper and mix well to combine.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Remove the salmon skin if the fishmonger hasn&#39;t done it for you. Lay the salmon skin side up. Make an incision across the base of the tail then secure the salmon tail with one hand and gently peel the skin away with the other using a knife to help coax it along (don&#39;t rip it or the flesh will come away too.)&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;With the skin removed, turn the salmon over then run your fingers down the centre of the fish, feeling for pin bones, they start at the top and run half way down the fillet, then pinch them out with your finger tips or use a pair of tweezers.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Pat the salmon fillet dry with kitchen towel and cut off the narrow tail part (use it for something else) then cut the remaining fillet in half width-ways.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Spread the herb butter over one half of the salmon then lay the other half on top and sandwich them together. Lay the narrow end over the wide end, so both ends have the same thickness.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Dust your work surface with flour and roll the pastry out thinly using the salmon as a guide to the size, then place the salmon in the centre of the pastry.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Beat the egg and brush around the pastry. Bring up the two longer pastry sides and press together forming a seam then fold up the shorter pastry edges to create a neat parcel.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Turn the salmon parcel over so the seam is underneath and place on a baking tray.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Make a criss cross pattern over the pastry using the back of a small knife, then brush with egg wash. Season with freshly ground salt and black pepper.(At this stage you can either return the salmon parcel to the refrigerator until needed or cook in the oven.)&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Bake in the oven for 25-30 minutes, or until the pastry is golden brown and crisp.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;For the sauce, chop the shallots very finely and boil in the chicken/fish stock with the vermouth or wine until it has reduced to about 4 tablespoons (this will take approximately 20 minutes). Now add the cream and continue to boil. Season with salt and pepper and take off the heat when the sauce has thickened.
