second time lucky

fed brottany last night so i could give some starter to a friend! she did very well. i'm also trying a new recipe, a fig and walnut loaf. i'm a little worried because the recipe needed like all the starter i have, but hopefully i left enough for her to live on. loaf should be done by the end of the day, so i'll have an update!

smell: berries

comments

kinda weird

the loaf is out! it rose for about 5 hours total instead of the recommended 2.5, but it was still pretty flat. i also left it in for 10 minutes longer than recommended, but it still looks kind of underbaked??? i'm not super sure what's going on. going to try it when it cools down!

a short loaf

crumb

comments

first loaf!

this morning i tried a simple sourdough loaf recipe to see how brottany bakes up. rising has been way slower than expected, which is kind of worrying. she's been rising for nearly 3 hours now without doubling in size. oh well; i'm new at this and mistakes are to be expected. going to let it rise a bit more for good measure and bake later on. in the meantime, brottany has been fed and returned to the fridge. i've also learned the hard way NOT to use the rubber seal with the new jar. the pressure that built up last night was absolutely nuts

smell: leaves

comments

a disappointment

the crackers are decidedly mediocre. i forgot to add the salt, which makes them kind of bland and disappointing. i also think they're a little too thick. better luck next time!

comments

a new home (and a new bake)!

got a new jar for brottany! one that is not comically large and will hopefully suit her a little better. transferred her over and fed her this evening. the jar weighs 762g on its own. i kept 113g of brottany and added 113g each water and flour. i also used all of the remaining discard (it was close enough to a cup) to make crackers!!! i'm using a spice mix called "sexy and sassy" that i got a while ago. fingers crossed they turn out well

smell: farm

brottany in her new home!

comments

baby's first bake!

made some crumpets for lunch with the discard from brottany's first feeding and they're GREAT. didn't have an english muffin form, so i cooked them like pancakes and they taste like more flavorful pancakes. also super quick! will be making this recipe again

comments

she's arrived! my beautiful yeasty daughter has been titled Brottany, first of her name. she smells a bit like red wine (what a classy gal). brottany has been fed (as of 12h) and is now resting. next feed around 20h!

smell: red wine

comments
